Whatever You Want Soup image

This basic recipe can serve as a canvas for any kind of chunky soup. Mix and match ingredients to suit your cravings, using an aromatic base of onions and garlic, seasonings, flavorful stock (or water), and whatever main ingredients you choose. This recipe, like a similar one in Julia Turshen's cookbook "Small Victories," highlights soup's basic transformative qualities. With just a bit of time, ordinary ingredients can become an extraordinary winter meal for tonight, and for days to come. Covered in the refrigerator, it will last for up to five days, but it also freezes exceptionally well for up to two months. Just return it to a boil before using.

4 tablespoons butter, olive oil or neutral-tasting oil
2 medium onions, diced
3 cloves garlic, sliced
Kosher salt
6 to 8 cups meat, vegetables or other add-ins (see notes)
About 1 1/2 pounds raw, boneless chicken (optional)
About 8 cups water or chicken stock, preferably homemade (see notes)

Steps:

  • Set a large Dutch oven or stockpot over medium-high heat and add 4 tablespoons butter or oil. When the butter melts or the oil shimmers, add onions and garlic, and a generous pinch of salt.
  • Reduce the heat to medium and cook, stirring occasionally, until the onions are tender, about 15 minutes.
  • Place the meat, vegetables and other add-ins in the pot, along with the raw chicken (if using), and add enough liquid to cover. Season with salt. Increase heat to high and bring to a boil, then reduce to a simmer.
  • Cook until the flavors have come together and the vegetables and greens are tender, about 20 minutes more. If you added raw chicken, remove it from the soup when cooked, allow to cool, shred and return to the soup. Taste and adjust for salt.
  • Add more hot liquid if needed to thin the soup to desired consistency. Taste and adjust for salt.
  • Serve hot, and garnish as desired.

Save bits of leftover vegetables (of YOUR CHOICE) in a jar, in the freezer -- when the jar is full, make soup! For my family of five, I saved vegetables in a quart jar. Serve with cornbread or bread sticks, and a fruit salad.

1 quart leftover vegetables (black beans, kidney beans, navy beans, baby lima beans, edamame, corn, hominy, etc)
2 tablespoons olive oil
1 large onion (diced)
1/2 teaspoon garlic (minced)
2 russet potatoes (diced) or 2 sweet potatoes (diced)
2 cups water
1/4 teaspoon salt
4 teaspoons beef bouillon granules or 4 teaspoons chicken bouillon granules
1/4 teaspoon fresh ground black pepper
1 (14 1/2 ounce) can Italian tomatoes (basil, garlic, and oregano ~ with juice)
1 tablespoon Worcestershire sauce (optional)
1 (15 1/4 ounce) can whole kernel corn (optional)
leftover cooked beef (optional) or cooked chicken (optional)
cilantro (to garnish) or Italian parsley (to garnish)

Steps:

  • Thaw leftover vegetables of your choice. Set aside.
  • In a large saucepan, saute diced onions in 2 tablespoons olive oil for about 3 minutes; add minced garlic and saute for about 1 minute more.
  • Add diced potatoes, water, salt, beef or chicken granules, and black pepper. Bring to a boil.
  • Reduce heat ~ simmer until potatoes are tender but not falling apart (about 10 minutes).
  • Add thawed leftover vegetables. Bring back to heat.
  • Add tomatoes (with juice) and optional Worcestershire sauce and corn. Simmer for 2 minutes.
  • Taste for needed seasonings.
  • Add leftover cooked beef or chicken, if desired, and heat through.
  • Garnish with cilantro or parsley ~ Serve with cornbread or bread sticks, and a fruit salad.

This is a soup recipe that I made up in a hurry. I would like to dedicate this recipe to a fine lady, (Lois Stark), who had some difficulty in making a soup out of items she had available. This soup turned our real good.

1 (48 ounce) can beef broth
4 cups water
2 large potatoes, peeled and cut into quarters
1 (28 ounce) can crushed tomatoes, include liquid
3/4 cup barley (pearl barley if available)
3 tablespoons butter or 3 tablespoons margarine
1 large potato, peeled and cut into 1/2 inch cubes
1/2 cup elbow macaroni
2 cups frozen mixed vegetables
1 1/2 cups left over chicken, cut into bite size pieces
2 teaspoons soy sauce (if available, but not necessary)
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a large cooking pot or large saucepan, add beef broth, water and quartered potatoes and bring to boil.
  • Crush and add tomatoes including liquid.
  • Add barley and bring soup to boil.
  • Reduce heat and simmer soup for about 15 to 20 minutes or until potatoes are tender.
  • Remove potatoes into a mixing bowl and mash.
  • Add butter or margarine and mix well; set aside.
  • Add cubed potatoes and elbow macaroni to cooking pot and cook for about 10 minutes.
  • Add mixed veggies, chicken pieces, soy sauce (optional), salt and pepper and simmer for about 10 minutes longer.
  • Remove about 4 cups of soup and process through a food processor or blender and return to soup pot.
  • Now add reserved mashed potatoes, mix well and bring just to boil.
  • Adjust seasonings to taste.
  • Remove from heat and let soup sit for a least 10 minutes before serving.
  • Refrigerate any unused portion of soup.
