GRANDMA'S FRIED OKRA AND POTATOES



Grandma's Fried Okra and Potatoes image

The cornmeal adds a nice texture to these. This dish doesn't last more than a few minutes at my house. It's great!

1 lb fresh okra
2 large potatoes
1 medium onion, finely chopped
1/2 cup cornmeal
1 teaspoon salt
1/4 teaspoon ground pepper
1/4-1/2 cup bacon drippings (or you can use vegetable oil, but it won't taste as good!)

Steps:

  • Wash okra and cut off stem ends. Cut in about ½-inch pieces. Peel potatoes and chop into ½-inch dice. Put okra and potatoes in large bowl. Add chopped onion to mixture. Sprinkle cornmeal, salt and pepper over mixture. Stir until cornmeal is evenly distributed throughout mixture.
  • Heat drippings or oil in large skillet over medium heat (oil should be hot, but not smoking hot). Carefully spoon okra/potato mixture into hot oil. Fry, turning mixture occasionally, until potatoes are done and mixture is nicely browned, about 10 to 12 minutes. Drain on paper towels. Makes enough for 4 or 5 hungry people.

1 pound okra
3 large ripe tomatoes, peeled, seeded, and coarsely chopped
1 small head Boston lettuce
1/4 cup Classic Vinaigrette, recipe follows
2 teaspoons Chile Oil, or to taste, recipe follows
3 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1/2 teaspoon Dijon-style mustard
Pinch of sugar
Salt and freshly ground black pepper, to taste
9 tablespoons extra-virgin olive oil
1 cup peanut oil
6 fresh bird chiles, or to taste
1 1/2 pounds fresh okra pods
1 tablespoon vegetable oil
1 medium onion, minced
2 1/2 cups beef stock
1 teaspoon freshly squeezed lemon juice

Steps:

  • Wash and top and tail the okra, discarding any blemished or hard pods. Cook the okra as for boiled okra (see recipe below). Drain it and allow it to cool. Prepare the tomatoes. Wash the lettuce, break it into leaves, pat dry, and arrange the leaves on a large platter. Mound the okra on top of the lettuce and top with the chopped tomatoes. When ready to serve, dress the salad with vinaigrette to which you have added 2 teaspoons of chile oil.
  • Combine all the ingredients except the olive oil in a small glass bowl and beat well with a fork or wire whisk. Gradually drizzle in the olive oil, making sure that all the ingredients are well mixed. Serve at once in a sauceboat or drizzle over the salad and toss. Yield: about 3/4 cup
  • Place the chiles in the oil in a fancy cruet and allow them to rest for 1 week, until they have flavored the oil. Add a drop or two of the oil to your usual cooking oil for a special zap. Yield: 1 cup

Add the okra and cook it for 3 minutes, stirring constantly. Add the stock, cover, and cook for an additional 10 minutes, or until the okra is fork-tender. Add the lemon juice and serve hot.

Peanut oil, for frying
2 pounds russet potatoes, cut into 1/2-inch cubes
Salt and freshly ground black pepper
2 tablespoons Dijon mustard
1/3 cup mayonnaise
2 tablespoons chopped fresh dill
3 tablespoons capers
1/2 red onion, finely chopped
2 stalks celery, finely diced

Steps:

  • In a deep-fryer or heavy-bottomed pot, heat enough oil to come halfway up the sides of the pot, to 350 degrees F.
  • Add the potatoes to the hot oil and fry until golden and crisp, about 5 minutes. Remove from the fryer to a paper towel lined sheet tray to drain. Season with salt and pepper, to taste.
  • While the potatoes are frying, mix together the mustard, mayonnaise, dill, and capers in a small bowl.
  • Add the fried potatoes to a large serving bowl. Toss in the red onion and celery, then gently fold in the mayonnaise dressing. Season with more salt and pepper, if needed, and serve.

2 pounds boiling potatoes (preferably yellow-fleshed), quartered lengthwise and cut crosswise into 3/4-inch pieces
1/2 pound okra, trimmed and cut crosswise into 1/4-inch-thick rounds

vegetable oil for deep-frying
1 1/2 tablespoons cider vinegar
1 1/2 teaspoons honey
3/4 cup mayonnaise
1 tomato, seeded and chopped coarse

Steps:

  • In a steamer set over boiling water steam the potatoes, covered, for 10 to 12 minutes, or until they are just tender, transfer them to a bowl, and let them cool to room temperature. In another bowl toss the okra with the cornmeal and salt and pepper to taste, transfer the mixture to a sieve, and shake off the excess cornmeal. In a deep skillet heat 1 inch of the oil to 375°F., in it fry the okra, stirring, for 2 minutes, or until it is golden, and transfer it to paper towels to drain. In a small bowl whisk together the vinegar, the honey, the mayonnaise, 1 tablespoon water, and salt and pepper to taste. Add the dressing to the potatoes with the okra and the tomato and combine the salad well.

2 teaspoons Essence or other Creole seasoning, divided, recipe follows
1 cup solid vegetable shortening or oil, for frying
1 egg
1 tablespoon hot sauce
4 cups frisee
16 okra pods, washed and cut into bite-sized rounds
Salt
1/4 cup all-purpose flour
Freshly ground black pepper
1 cup sliced smoked mozzarella
1/4 cup yellow cornmeal
Warm Andouille Dressing, recipe follows
1 tablespoon dried oregano
1 tablespoon cayenne pepper
1 tablespoon dried thyme
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
4 ounces finely chopped andouille sausage
1 tablespoon minced shallots

3/4 cup olive oil

Steps:

  • Beat together the buttermilk, egg and hot sauce in a small bowl. Add the okra and turn to coat evenly. Let sit for 30 minutes.
  • In another bowl, combine the flour, cornmeal, and 1 teaspoon of Essence.
  • Dredge the okra in the flour mixture and heat the shortening in a skillet, if using, otherwise heat oil in a deep-fryer or Dutch oven to 360 degrees F. When it is hot, place the okra in the oil and fry, turning once, for about 2 minutes, or until lightly golden. Drain on paper towels. Sprinkle the okra with the remaining 1 teaspoon of Essence. Divide the frisee among 4 salad plates, season with salt and pepper, to taste, top each with okra, smoked mozzarella and drizzle with dressing. Serve immediately.

4 green onions, chopped with the tops (green)

As the chef gave it to me, I quickly jotted it down on a pink paper napkin and have been guarding that napkin ever since. Thought I'd better post it online so it won't get misplaced. It is a bit different than the other Okra Salads posted here. As I haven't made it yet, prep and cook times are guesstimates and don't include cooling.

1/4-1/2 cup bell pepper, small chopped

2 scallions, thinkly sliced (white and green parts)

Steps:

  • Place the corn kernels in a microwave-safe bowl, and microwave on high power for 1 minute: stir, and microwave just until crisp-tender, up to 1 minute longer. Toss the corn in a mixing bowl with the tomatoes, scallions, and parsley.
  • Whisk the sugar and 1/4 tsp salt with the vinegar in a small bowl until dissolved. Then whisk in the olive oil and thyme leaves until the dressing is thick and well blended. Pour the dressing over the salad, tossing to coat it well. Season with pepper, and additional salt if needed. Set the salad aside to allow the flavors to mellow while you fry the okra.
  • Combine the cornmeal, salt, and pepper to taste in a bowl, and toss the okra slices in the mixture. Warm 1/3 inch of oil in a large skillet, preferably cast iron, over medium-high heat.
  • Drop a cornmeal-coated okra slice into the hot oil to test the temperature. When it sizzles energetically, add half of the remaining okra, without crowding. Fry until ver crisp and lightly browned, about 5 minutes. Remove them with a slotted spatula and place them on paper towels to drain. Repeat with the second batch.
  • Just before serving, taste the salad and adjust the seasonings if needed. Top each dish of salad with a generous mound of fried okra.

To make the salad, I steam the potatoes first and, as soon as they're done, season them and toss them with a portion of the lemon juice and vinegar dressing. Then, I briefly steam and slice the trimmed okra and toss everything together. It tastes like a creamy potato salad with a garlicky Mediterranean accent.

3 tablespoons lemon juice
1 tablespoon sherry vinegar
3/4 pound small potatoes, preferably fingerlings, scrubbed and sliced about 1/2-inch thick

Black pepper
1 pound okra
1 serrano pepper, seeded if desired, minced
1 shallot, minced, soaked for 5 minutes in cold water, and drained
1 garlic clove, puréed in a mortar and pestle with a pinch of salt
1/4 cup plain yogurt
1/4 cup olive oil
1/4 cup chopped parsley
1 to 2 ounces crumbled feta for serving (optional)

Steps:

  • Mix together lemon juice and vinegar in a small bowl.
  • Steam potatoes above 1 inch water for 10 minutes, until tender enough to easily pierce with the tip of a knife. Remove from heat and transfer to a bowl. Season with salt, pepper, and 1 tablespoon of the lemon juice-vinegar mix.
  • Trim away okra stems, just above the line where the stem cap joins the okra spear. Place in steamer, cover and steam 4 minutes. Drain and rinse briefly with cold water, then drain on a dish towel.
  • Slice okra about 1/3- to 1/2-inch thick and add to bowl with potatoes. Add serrano and shallot. Season generously with salt and pepper, and toss together.
  • Whisk garlic, yogurt and olive oil into remaining lemon juice-vinegar mix. Toss with the okra and potatoes. Add parsley and toss again. Garnish with crumbled feta if desired, and serve.
