- Preheat the oven to 350 degrees F.
- Place the chicken breasts, skin side up, on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked through. Set aside to cool.
- When the chicken is cool, remove and discard the skin and bones and cut the chicken into 3/4-inch dice. Place the chicken in a bowl and add the mayonnaise, tarragon, celery, 2 teaspoons salt, and 1 teaspoon pepper and toss well.
- To assemble, spread a little mayonnaise on half the bread slices, top with the chicken salad and mesclun mix, and cover with the remaining slices of bread. Cut in half and serve.

- Place the chicken, celery, mayonnaise, Cheddar, almonds, lemon juice and onion salt in a large bowl and mix to combine well. Taste for seasoning, and add salt and pepper as needed. The amount will depend on how seasoned your chicken is.

- Preheat oven to 350 degrees. Trim crusts from bread.
- Blend the margarine and mustard. Spread on one side of each bread slice.
- Put 6 slices of bread, buttered side up, in an 11x2x2 baking dish.
- Combine chicken, cheese, red pepper, salt and pepper. Spread over bread slices in baking dish.
- Cut remaining 6 slices of bread diagonally. Arrange over chicken in baking dish, buttered side up.

- Toast the bread slices. Place 6 slices of the toasted bread in the bottom of a lightly greased baking dish. Sprinkle the chicken and onion on top of the bread, then cover with the other 6 slices of toasted bread.
