Steps:
- Preheat oven to 400°
- Prepare a rimmed baking sheet by spraying with cooking spray, or lining with parchment paper
- In a small bowl, combine beaten eggs and lemon juice
- Put the flour Into another small bowl
- In a larger bowl, whisk together the panko, parmesan cheese, basil, oregano, thyme, salt & pepper.
- Cut tomatoes into 1/4 inch slices
- One by one, dredge each slice in flour, shaking off excess
- Dip each flour-dredged tomato slice in the beaten egg mixture
- Put the flour and egg coated tomato slice in the panko mixture, turning and pressing to coat with crumbs.

FRIED GREEN TOMATOES RECIPE (OVEN-FRIED!)
Steps:
- Preheat the oven to 400 degrees F. Set out a large rimmed baking sheet. Drizzle the oil on the baking sheet and spread it around with a spoon or brush.
- Slice the tomatoes into ¼ inch rounds. Set aside.
- Set out 3 bowls. Pour the flour in one bowl, and the panko in the seconds bowl. In the third bowl combine the buttermilk, Cajun seasoning, salt, and cumin. Mix well.
- One at a time, dip the slices of tomato in the flour. Shake off the excess flour and dip the tomato slice in the buttermilk. Shake off the excess buttermilk over the bowl, then dip the slice in breadcrumbs.
- Lay each slice on the baking sheet, then flip it so it is coated in oil on both sides. Repeat with the remaining green tomato slices.
- Bake for 12 minutes. Use a small spatula to flip the tomato slices over. Then bake again for 12 minutes, until golden brown.
- Serve warm with a side of Caesar dressing for dipping.

- In a deep-fryer, preheat oil to 350 degrees F.
- Season tomatoes, on both sides, with salt and pepper. Place flour and garlic powder in a shallow dish. In another shallow dish, beat eggs with the milk. In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs. Add only a few pieces to the fryer at a time, so they can cook evenly, about 2 to 3 minutes. Drain on paper towels and serve with Buttermilk Dipping Sauce:
- In a small saucepan over medium heat, combine the apple cider and brown sugar. Allow to reduce until thick and syrupy. Remove from heat and allow to cool.
- In a medium bowl, add buttermilk, mayonnaise, BBQ sauce and lime juice and whisk well. Add in the scallions and the apple cider mixture. Cover and refrigerate until ready to serve with Fried Green Tomatoes.
BAKED GREEN TOMATOES RECIPE

- Gather the ingredients.
- Position a rack in the center of the oven and heat to 350 F. Cut the tomatoes into 1/2-inch crosswise slices.

- For the fried green tomatoes: Pour the vegetable oil into a Dutch oven or heavy-bottomed pot and attach a deep-frying thermometer. Heat the oil over medium heat to 350 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- Set up 3 low-sided dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs. In the third dish, stir together the cornmeal and panko.
- Using one hand, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess. Next, using the other hand, dip the tomato slices into the egg mixture, allowing it to drip before moving onto the third dish. - For the tomatoes: Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper.
- In a large flat bowl or pie plate, whisk together the flour, 1/2 teaspoon of the salt and 1/2 teaspoon of the Cajun seasoning. Put the breadcrumbs into a second pie plate and season with the remaining 1 teaspoon salt and 1 teaspoon Cajun seasoning. Pour the buttermilk into a third pie plate. Combine the oils in a container with a spout that will allow for easy controlled pouring. While whisking constantly, slowly add the oil in a slow steady stream (see Cook's Note). Stir in the Cajun seasoning and add salt to taste.
- Serve the tomatoes on a platter with a bowl of the Cajun-spiced aioli.

- Place tomato slices onto a rack over a paper towel. Sprinkle with 1 teaspoon salt and let slices stand for 15 minutes for the salt to draw out extra juices.
- Mix cornmeal and bread crumbs together in a bowl; stir in 1/2 teaspoon salt, black pepper, and cayenne pepper to taste. Beat eggs with milk in a separate bowl. Place flour into a third bowl.

- Season tomato slices with salt and pepper.

- First, cut your tomatoes at 1/8 inch and lay out to dry -- I lay down paper towel and then place tomatoes on a cooling rack and then layer more paper towels on top. THIS STEP IS VERY IMPORTANT!
- While tomatoes are drying, mix together flour, black pepper, Italian seasoning, and cayenne pepper.
- Dip tomatoes slices into egg and milk mixture and then coat with flour and seasoning mixture.

- Trim 1/2-inch from the stem and blossom ends of tomatoes. Slice tomatoes 1/4-inch thick. Season tomato slices with 2 teaspoons salt and 1 teaspoon pepper; set aside.

- Heat 2 cups oil in a 10-inch skillet over medium-high heat until it reaches 350 degrees on a deep-fry thermometer. Working in batches, carefully place tomatoes into the heated oil in a single layer. Fry until golden, turning once, 2 to 3 minutes per side. Drain on a paper towel-lined baking sheet. After frying half of the tomato slices, discard oil and heat remaining 2 cups oil in skillet; continue frying remaining tomato slices. Serve tomatoes immediately with aioli.

- Preheat oven to 450 degrees.
- Cut tomatoes into 1/4" slices.
- In small bowl combine egg and milk.
- In another small bowl, combine cornmeal, flour, poppy seeds, salt, and pepper Spray a baking sheet with vegetable oil spray.
- Dip tomato slices in egg mixture, letting excess drip off.
- Coat both sides of tomatoes with cornmeal mixture.
- Place in single layer on baking sheet.
- Bake uncovered for 10 minutes.
- Turn and bake for another 5 minutes or until golden brown.

- While preparing the dipping process for the tomatoes, heat oil and bacon drippings in a large pot over medium heat until the oil reaches 350 degrees.
- You will need a slotted spoon to drop the tomatoes into the hot oil.
- De-core and cut the ends off the green tomatoes.
- Slice tomatoes into 1/2 inch thickness and set aside in a medium-sized bowl.
- In a small bowl, set aside only 1 1/2 cups of the flour.
- In a medium bowl, mix the milk and eggs to create an egg wash.
- In a large bowl, combine remaining flour, cornmeal and salt.
- Add celery salt, pepper, onion powder and paprika.
- This is the cornmeal breading mixture for the tomatoes.
- Line a sheet pan with parchment paper to place the breaded tomatoes on after the final dredging.
- Begin the dipping process by dredging the tomatoes in the flour, then the egg wash, and finally through the cornmeal breading mixture.
- Repeat this process until all the tomatoes are breaded.
- Once the oil has reached 350 degrees, begin frying the tomatoes until golden brown on both sides.
- The tomatoes will float to the top when finished cooking.
- Drain on paper towels.
