This is our old family recipe, traditionally used at Christmas to spread on toast or crackers, or put in cooked tart shells. Lemon cheese can be put in sterilized jars and frozen.

Steps:
- Grate the zest of 2 lemons; squeeze juice from 3 lemons.
- Melt butter with sugar over very low heat in a double boiler; slowly pour in beaten eggs and lemon juice. Stir lemon zest into butter mixture; continue to stir constantly until mixture is thickened. Remove from heat to cool completely.

LEMON BUTTER
Serve this thick and creamy, lemon-flavored butter warm over gingerbread or blueberry muffins. You can also top ice cream with it! This recipe will also work with margarine instead of butter.

- In a saucepan over medium heat, combine sugar, cornstarch, and lemon zest. Stir in water and lemon juice, and continue stirring. After the mixture thickens and bubbles, continue to heat and stir for another two minutes.
- Remove the sauce from the heat and stir in the butter. Serve warm.

- Bottom:
- Combine cake mix, butter, and egg. Mix with fork until moistened.
- Set aside 1 cup of mix.
- Grease bottom only of 9x13 pan.
- Pat mix into it.
- Top:
- Mix 3/4 container frosting (about 1 1/4 cups) with rest of cake mix, egg, cream cheese, and lemon juice.
- Beat 3 to 5 minutes.
- Spread over cake mixture.
- Bake at 350 degrees for 30 to 40 minutes or until lightly browned.
- When cool, spread top with remaining frosting.
- Store in refrigerator. Bars cool easier when chilled.

- Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes, adding frozen peas during the last 2 minutes of cooking time. Drain pasta and peas, reserving 1 cup cooking liquid.
- While the pasta is cooking, heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms and onion; cook until mushrooms are brown, 5 to 7 minutes.
- Season chicken with salt and pepper. Cook in the same skillet over medium-high heat until browned and no longer pink, 7 to 10 minutes. Add the mushrooms back to the skillet. Add cream cheese, lemon juice, and lemon zest; stir until cream cheese is melted. Remove from heat.
- Fold in Parmesan and Pecorino Romano cheeses, then parsley. Toss with pasta and peas, adding reserved cooking liquid as necessary to make a sauce.

My Brother-Inlaw used to make this cake and now we are just as happy to use this recipe. It keeps very well and tastes realy good. Serve plain or with whipped cream.

- Beat cream cheese, butter and lemon rind together until smooth,
- Add sugar and beat until light and fluffy.
- Beat in eggs one at a time,.
- stir in flour in two batches,.
- beat lightly ulntil smooth.
- Spoon into well greased 20cm ring or baba tin.
- Bake in moderate oven (l60C) for 30 minutes,.
- reduce heat to moderatle slow (140C) and bake for a further 30 minutes.

- In a large pan or skillet, heat olive oil over medium heat. Add onions and stir until soft.
- Add chicken, season with salt and pepper, and cook until browned.
- Stir in garlic and cook for an additional minute.
- Add uncooked pasta, chicken broth. Stir and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
- Uncover, stir and cook an additional 5 minutes, or until all of the liquid has been absorbed by the pasta.

Steps:
- Preheat the oven to 350 degrees.
- Spray an 8-by-8-inch square baking dish with nonstick spray.
- To prepare the crust, in a mixing bowl beat together on medium speed the butter, dark brown sugar, salt and mace until smooth.
- Spoon 1 cup flour lightly into a dry measuring cup and level with a knife.
- Add the flour to the butter mixture and beat at low speed until well blended.
- Press the crust into the prepared baking dish and bake for 20 minutes.
- Meanwhile, prepare the filling.
- In a food processor fitted with the metal blade, process the cottage cheese for 2 minutes or until smooth, scraping sides of the bowl once.
- Add the sugar, flour, lemon zest, lemon juice, baking powder, egg and egg white.
- Process until well blended.
- Pour the filling over the baked crust.
- Bake at 350 degrees for 25 minutes or until set (the edges will get lightly browned).
- Remove from the oven and cool.
- When cool, cover and chill for 8 hours.
- To serve, cut into bars.
