Provided by Heather Harris

Categories     Dessert

Number Of Ingredients 7

2 pounds lard (or other traditional fat of choice)
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
2 1/4 cups all purpose flour
1 cup powdered sugar

  • Add flour to the bowl and mix to combine. Knead for one minute to form a smooth dough.
  • Roll dough on a floured surface to 1/4" thick. Cut into 1/2" wide strips.
  • Twist each strip, then bring the ends together and form a circle. Pinch ends tight.
  • Drop carefully into the hot fat and allow to brown and cook 2 minutes.
  • Remove from oil, and lay on paper towel to drain. Sprinkle with powdered sugar and serve immediately.

CLASSIC CAKE DONUT RECIPE

Classic Cake Donut Recipe image

A classic fried cake donut recipe that makes the most delicious old fashioned donuts ever! Light and crispy on the outside, tender, moist, and cakey on the inside.

Provided by Elizabeth Marek

Categories     Breakfast

Time 30m

Number Of Ingredients 19

4 ounces unsalted butter (softened but not melted)
5 ounces granulated sugar
2 large eggs (room temperature)
6 ounces buttermilk (room temperature)
2 teaspoons vanilla extract
15 ounces All-Purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon salt
32 ounces lard or oil (for frying (4 cups))
5 ounces powdered sugar
2 Tablespoons milk (or water)
4 ounces chocolate chips
2 Tablespoons butter
1 Tablespoon corn syrup (or glucose/honey)
2 Tablespoons heavy cream
1 cup granulated sugar
2 Tablespoons cinnamon

Steps:

  • In the bowl of your stand mixer with the paddle or the whisk attachment, cream the softened butter and the sugar on medium high speed until the mixture is light in color and fluffy.
  • While mixing on low, add in one egg, let it mix in and then add in the second egg and mix on medium speed until everything is smooth and combined
  • Add in the buttermilk and the vanilla and mix until combined
  • While mixing on low, add in the flour, salt, baking powder, baking soda, and nutmeg and mix until the dough is combined. Do not over-mix. The dough will be sticky.
  • Lightly flour your work surface and transfer the sticky dough to the floured surface.
  • Press the dough down lightly until its about 1" thick.
  • Fold the dough over onto itself 3-4 times until the dough is smooth.
  • Flatten the dough down to about 1/2" or use a rolling pin. Let the dough rest for 5-10 minutes while your oil is heating up.
  • Turn on your FryDaddy or begin heating your oil to 360ºF-375ºF (182ºC -190ºC). Set up a draining station for the donuts by placing a cooling rack over a sheet pan to catch the oil.
  • Use a donut cutter or ring cutter to cut out the donuts. You can press together the scraps and roll them out again to get as many donuts as you can. Just keep in mind the more you work the dough, the tougher the donuts will get.
  • Add the donut to the hot oil using your slotted spoon to lower it gently. Fry the donut for 2 minutes then flip it over and fry it for 1 more minute.
  • Fry your donut holes for about 1 minute, stirring and pushing them down with your spoon until golden brown on the outsides.
  • Transfer the dough to a cooling rack over a sheet pan to let the oil drain away from the donut
  • Once your donuts are cooked you can roll them in powdered sugar, cinnamon sugar, glaze them with donut glaze or chocolate glaze!
  • Store donuts in a paper bag at room temperature for up to two days. They are best eaten fresh! Do not refrigerate.
  • Sift the powdered sugar into a bowl and add the milk (or water). Whisk together to combine, add more powdered sugar to make it thicker or more milk to make it thinner.
  • In a medium sized bowl, add the heavy cream, butter and corn syrup to the chocolate chips. Microwave for 30 seconds and stir together until the chocolate is melted. Microwave for another 15 seconds if needed.

BASIC FRIED DONUTS

Basic Fried Donuts image

This recipe for Basic Fried Donuts yields fluffy and soft fried donuts that can be glazed, dipped or eaten plain, rolled in sugar.

Provided by sanna

Categories     baking diaries

Time 2h

Number Of Ingredients 10

1/2 cup warm water (105- 115 F)
2 and 1/4 tsp active dry yeast
1/4 cup sugar
2 eggs, lightly beaten
3/4 cup warm milk
1/2 cup melted butter
1/2 tsp salt
4 and 1/2 cup all-purpose flour
canola oil, for frying the donuts
sugar, for rolling the fried donuts

Steps:

  • In a large mixing bowl, combine warm water, yeast and 1 tsp of the sugar. Stir and let stand for 5 minutes, until the mixture is frothy.
  • Add the remaining sugar, milk, butter, egg and salt.
  • Start to add the flour gradually while stirring, adding only enough just until the dough gathers in the center of the bowl.
  • Turn the dough over onto a floured board and knead until the dough is smooth and elastic. To knead, use your palms to push the dough down and away from you, then fold it inwards. Push out the dough again then fold. Repeat until the dough is adequately kneaded. New to kneading? Check out How to How to Knead Bread Dough with Video.
  • Shape the kneaded dough into a ball. Place it in a bowl and cover with a clean towel. Let it rise for 1 and 1/2 hours until doubled in size.
  • After rising, divide the dough into 2 equal portions. On a floured board, roll out one portion until it is 1/4 inch thick. Use a donut cutter that is 3 inches in diameter to cut out as many donuts ( and holes) as you can from the dough. Place cut-out donuts, together with the holes on individual pre-cut parchment papers, and set them on a large tray or plate. Fold the scrap and re-roll, then cut out more donuts as possible. Repeat with the other half of the dough.
  • On a medium, heavy-bottomed pan, heat about 2-3 inches of oil to 375 F. Carefully lower a few donuts at a time into the oil, peeling them off from the parchment paper before cooking. Cook on one side for 2-3 minutes, or until golden. Then cook on the other side for 1 minute or less, until golden. Drain fried donuts on a wire rack set over a large tray, or on paper towels.
  • If you are glazing or dipping the donuts, allow them to cool first. If you wish to roll them in sugar and/or cinnamon, roll them while they are still moderately hot.

THE BEST OLD-FASHIONED DOUGHNUTS

The Best Old-Fashioned Doughnuts image

We spent a lot of time perfecting this doughnut. We wanted a cakey and light texture that wasn't greasy-and we achieved it! The classic craggy edges add a pleasant texture and hold onto the sweet glaze. A combination of buttermilk and sour cream provides tang and richness. But the secret ingredient to the batter is vegetable oil. Surprisingly, it doesn't weight the doughnuts down but makes them even more moist and tender.

Categories     dessert

Time 1h30m

Yield 8 doughnuts and 8 holes

Number Of Ingredients 11

2 2/3 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/2 cup granulated sugar
1 tablespoon baking powder
1 1/4 teaspoons plus 1/8 teaspoon kosher salt
1 teaspoon freshly grated nutmeg
2/3 cup plus 6 tablespoons buttermilk
1/2 cup sour cream
1 large egg and 1 egg yolk, beaten to blend
1 tablespoon plus 1 teaspoon vanilla paste
3 tablespoons vegetable oil, plus more for frying
2 cups confectioners' sugar

Steps:

  • Whisk together the flour, granulated sugar, baking powder, 1 1/4 teaspoons of the salt and the nutmeg in a large bowl until completely combined. Whisk together 2/3 cup of the buttermilk, the sour cream, eggs, yolks, 1 tablespoon of the vanilla paste and the oil in a medium bowl until completely combined. Fold the wet ingredients to the dry ingredients just until a soft and sticky dough comes together (do not overwork).
  • Line a rimmed baking sheet with parchment paper and liberally dust with flour (about 1/3 cup).
  • Scrape the dough onto the prepared baking sheet. Dust your hands and the top of the dough with more flour, then gently pat the dough to 3/4-inch thick.
  • Working on the baking sheet, punch out as many rounds as you can with a 3 1/4-inch cutter. Then use a 1 1/4-inch cutter to punch out the center of each round. Dip the cutters in flour before each cut to avoid sticking. Gather the dough scraps and gently re-roll without overworking the dough. Repeat cutting until all the dough has been used (you should have 8 doughnuts).
  • Set a wire rack inside a rimmed baking sheet and line a second rimmed baking sheet with several layers of paper towels. Fit a large heavy pot with a deep-fry thermometer and pour in oil to a depth of 3 inches. Heat over medium-high until the thermometer registers 375 degrees F.
  • Fry the doughnuts in batches until deep golden brown, about 2 minutes per side. Transfer to the wire rack and let cool slightly. Fry the doughnut holes until deep golden brown, about 90 seconds per side. Transfer to the wire rack and let drain for 1 minute. Then transfer to the paper-towel lined baking sheet to cool for 10 minutes before glazing. (This two-step process gets a lot more oil out of the doughnuts than using only one method.) Repeat with the remaining dough, making sure the oil returns to temperature between batches.
  • Whisk together the confectioners' sugar, the remaining 6 tablespoons buttermilk, the remaining 1 teaspoon vanilla paste and 1/8 teaspoon salt in a medium bowl until the glaze is smooth and the consistency of honey; add more confectioners' sugar or buttermilk if necessary.
  • Dip each doughnut into the glaze on one side (we like the craggy side, it has more texture for an appetizing appearance), letting the excess drip back into the bowl, then return it to the wire rack. Toss the doughnut holes in the glaze to coat completely and return to the wire rack. Let the glaze set for 10 minutes before serving.
