1/2 cup chopped green onions
3 tablespoons butter
1 package (9 ounces) frozen cut green beans
1 can (4 ounces) mushroom stems and pieces, drained
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large saucepan, saute onions in butter until tender. Add the beans, mushrooms, lemon-pepper and salt. Cover and cook over medium heat for 5 minutes or until beans are tender. Sprinkle with cheese; cover and let stand for 1 minute or until cheese is melted.

2 cups shredded Monterey Jack cheese
3/4 cup ranch salad dressing with bacon
1 loaf (1 pound) unsliced French bread
2 tablespoons butter, melted
Minced fresh parsley

Steps:

  • In a small bowl, combine 2 cups (8 oz.) cheese and 3/4 cup salad dressing with bacon; set aside. Cut 1 loaf (1 lb.) French bread in half lengthwise; brush with 2 Tbsp. melted butter. Broil 4 in. from heat on baking sheets until golden brown. Spread with cheese mixture. Bake at 350° for 10-15 minutes or until cheese is melted. Sprinkle with minced fresh parsley. Serves 8.

Number Of Ingredients 15

1/3 cup pine nuts
1/2 cup freshly grated Parmesan
2 large garlic cloves
1 1/2 cups packed fresh basil leaves
1 1/2 cups packed fresh cilantro sprigs
1 cup packed fresh flat-leafed parsley leaves
1/4 cup fresh tarragon leaves
2 tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin
1/4 cup olive oil
1 pound dried black beans
1 ham hock
4 cups water
2 cups long-grain rice
1/2 stick (1/4 cup) unsalted butter, softened

Steps:

  • Preheat oven to 350°F.
  • Toast pine nuts in middle of oven until golden, 8 to 10 minutes, and cool completely. In a blender or food processor blend pesto ingredients with salt and pepper to taste until smooth. Pesto may be made 2 days ahead and chilled, its surface covered with plastic wrap.
  • Pick over beans. In a large bowl soak beans in water to cover by 2 inches overnight or quick-soak . Drain beans.
  • In a kettle cover drained beans and ham hock with cold water by 2 inches. Add salt to taste and simmer until beans are tender, about 1 hour. Drain beans, discarding ham hock, and keep warm in kettle.
  • While beans are simmering, in a large heavy saucepan bring 4 cups water to a boil and stir in rice and salt to taste. Cook rice, covered, over low heat, undisturbed, 18 to 20 minutes, or until water is absorbed and rice is tender. Fluff rice with a fork and add to beans. Stir in butter, pesto, and salt and pepper to taste.

½ cup butter, divided
½ cup chopped onion
8 large mushrooms, chopped
1 clove garlic, minced
2 tablespoons all-purpose flour
½ cup chicken stock
1 teaspoon celery salt
½ teaspoon white pepper
½ cup white wine
1 ½ cups shredded Monterey Jack cheese
1 cup all-purpose flour
salt and pepper to taste
8 skinless, boneless chicken breast halves - pounded thin

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease a medium baking dish.
  • Melt 1/4 cup butter in a medium skillet over medium heat. Stir in onion, mushrooms and garlic. Cook until tender, about 10 minutes. Stir in 2 tablespoons flour, chicken stock, celery salt, white pepper and white wine. Reduce heat to low, and cook, stirring frequently, until thickened and well blended, about 10 minutes. Mix 1/2 cup Monterey Jack cheese into the thickened sauce mixture, and stir until melted.
  • In a shallow medium bowl, mix 1 cup flour with salt and pepper. Dredge chicken breast halves in the flour mixture to coat. Melt remaining 1/4 cup butter in a large skillet over medium high heat. Cook chicken until lightly browned on all sides. Arrange breast halves in the prepared baking dish, and cover with the sauce.
  • Top chicken breast halves with remaining Monterey Jack cheese. Bake in the preheated oven 25 minutes, or until chicken is no longer pink and juices run clear.

4 (5 ounce) skinless, boneless chicken breast halves
1 cup teriyaki marinade sauce
½ pound bacon
2 tablespoons butter
1 small onion, cut into long slices
1 small green bell pepper, cut into thin strips
1 (8 ounce) package fresh mushrooms, coarsely chopped
4 slices mozzarella cheese

Steps:

  • To Marinate: Place chicken in a nonporous glass dish or bowl. Pour marinade over chicken and toss to coat. Cover and refrigerate to marinate for 1 to 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove chicken from the marinade and place in a 9x13-inch baking dish. Reserve 1/3 cup marinade and discard the rest.
  • Bake chicken in the preheated oven for 20 to 30 minutes, or until cooked through and juices run clear.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In same skillet, melt butter over medium high heat. Saute onion, bell pepper and mushrooms for about 3 to 5 minutes. Add reserved 1/3 cup of marinade and simmer until soft. Drain and set onion mixture aside.
  • Top baked chicken with bacon strips. Add onion mixture and top each breast with a slice of cheese. Bake for another 10 to 15 minutes, or until cheese is melted and bubbly.
