Recipe video above. Pasta in a pink tomato cream sauce! You'll love how creamy this sauce is, how there's plenty of it and yet you don't need gallons of cream. Slurp-worthy as it is, or use it as a base for add ins of your choice - suggestions in the recipe notes.

300g/10 oz spaghetti
2 tbsp / 30g unsalted butter
3 garlic cloves (, minced)
½ onion (, finely chopped)
1 cup / 250 ml tomato passata (/ tomato puree (Note 1))
3/4 cup / 185 ml heavy / thickened cream ((Note 2 for subs))
1/2 cup / 125 ml milk (, low fat)
3/4 cup / 30g parmesan (, finely freshly grated (Note 3))
1 tsp dried basil, or other herb of choice
1 tsp chicken or vegetable stock powder (, or 1 bouillon cube, crumbled (Note 4))
Finely ground pepper + salt

Steps:

  • Cook pasta in a big pot of boiling water for time per packet MINUS 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.
  • Melt butter in large skillet over medium heat. Add garlic and onion, cook until translucent - about 2 minutes.
  • Add remaining ingredients. Stir until parmesan is melted. Turn heat up slightly and simmer for 2 minutes. Adjust salt to taste.
  • Add pasta. Toss for 1 to 2 minutes or until sauce thickens and is clinging to pasta instead of swimming on the base of the skillet (video shows this well). Use reserved pasta cooking water if required to thin the sauce out if it gets too thick.
  • Serve immediately, garnished with more parmesan and parsley if desired.

2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, finely diced
Two 15-ounce cans tomato sauce or marinara sauce
Dash of sugar (or more to taste)
Salt and freshly ground black pepper
1 1/2 pounds fettuccine
1 cup heavy cream
Grated Parmesan or Romano, as needed
Chopped fresh basil, for serving

Steps:

  • Heat the butter and oil in a large skillet over medium heat. Add the garlic and onions and saute for a minute or so. Pour in the tomato sauce, add sugar, salt and pepper to taste and stir. Cook over low heat for 25 to 30 minutes, stirring occasionally.
  • Cook the pasta according to the package directions. Drain, reserving 1 cup of pasta water.
  • Remove the sauce from the heat and stir in the cream. Add cheese to taste, then check the seasoning. Stir in the pasta and thin with a little pasta water if needed. Add the chopped basil and serve immediately.

1 tablespoon olive oil
1 small onion
2 garlic cloves
15 ounces diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 pinch red pepper flakes
fresh ground pepper, to taste
1/2 teaspoon salt
2 tablespoons tomato paste
2 ounces cream cheese
1/4 cup parmesan cheese, grated
1/2 lb penne pasta
9 ounces fresh spinach

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Add the pasta and cook until tender (7 to 10 minutes). Drain the pasta in a colander.
  • While waiting for the pasta to cook, dice the onion and mince the garlic.
  • Cook both in a large skillet with the olive oil over medium-low heat until softened and transparent, about 5 minutes.
  • Add the diced tomatoes with juices, oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic.
  • Stir to combine. Add the tomato paste and a 1/2 cup of water to the skillet and stir until the tomato paste is dissolved into the sauce.
  • Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet with the tomato sauce.
  • Use a whisk to stir the sauce until the cream cheese has fully melted in and the sauce is creamy.
  • Add half of the parmesan to the skillet and whisk until it is melted inches Add the remainder of the parmesan and whisk until melted in again.
  • Add the fresh spinach and gently stir it into the sauce until it has wilted (3 to 5 minutes). Add the pasta and stir until it is well coated with the creamy tomato sauce.
  • Taste and adjust the salt and pepper as needed. Serve warm.

QUICK, EASY, CREAMY, TOMATO PASTA SAUCE



Quick, Easy, Creamy, Tomato Pasta Sauce image

A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

1 can tomato paste, mixed with about
2 -3 tablespoons water
1 -2 tablespoon olive oil
3 -5 tablespoons cream
1 -2 clove crushed garlic
fresh ground black pepper
chopped fresh basil or other fresh herb

Steps:

  • Heat a saute pan on medium heat.
  • Pour in the olive oil.
  • Stir the tomato paste gently into the oil.
  • It may not completely mix just yet.
  • (Don't get the heat too high).
  • Add the cream and stir into the tomato mixture.
  • Heat it gently so that it almost starts to simmer.
  • At this point it is done.
  • Add the crushed garlic and fresh ground pepper.
  • Serve immediately over or in your pasta, and garnish with lots of fresh chopped basil.

1 teaspoon olive oil
1/4 onion, peeled and chopped
1 garlic clove, minced

1 teaspoon dried basil
1 teaspoon dried oregano

Steps:

  • Heat teaspoon of oil over medium-high heat.
  • Add onion and sauté until starting to brown.
  • Add garlic and sun-dried tomatoes; sauté 3 more minutes.
  • Add tomatoes, pepper, and other herbs. Stir well, reduce heat, cover and simmer about 20 minutes.
  • Meanwhile, cook pasta according to directions.
  • Add cream cheese, milk, and parmesan to tomato pot and melt over low heat until cheeses are incorporated.
  • Add chicken and drained pasta, and mix until blended.

After being unable to find a suitable creamy tomato pasta sauce recipe, I came up with my own, and by golly it's good. Easy to make too :)

1 (400 g) can chopped tomatoes with juice
1/2 cup cream
1/4 cup parmesan cheese
1 garlic clove
100 g shredded bacon
1 tablespoon olive oil
500 g fettuccine pasta

Steps:

  • 1. Cook fettucine as directed
  • 2. Crush and chop garlic clove finely.
  • 3. Heat oil in a frying pan on medium-high, add garlic and bacon and cook until they start to brown.
  • 4. Add tin of tomatoes to the frying pan and stir.
  • 5. Reduce heat to medium and simmer for 15 minutes.
  • 6. Reduce to low heat and add cream.
  • 7. Stir until cream is fully mixed inches.
  • 8. Stir parmesan cheeses into the sauce.
  • 9. Add fettucine and stir until heated through and covered with sauce.
  • 10. Serve, sprinkling a little parmesan cheese over the top of each serve if you wish.

  • Add tomatoes, cream, and salt.
  • Simmer until mixture thickens slightly, about 4 minutes.
  • (Can be prepared one day ahead. Cover and chill.).
  • Cook pasta in large pot of boiling water.
  • Drain.
  • Bring sauce to a simmer.
  • Add pasta to sauce and cook until pasta is heated through and sauce thickens, stirring occasionally, about 2 minutes.
  • Divide pasta between plates.
  • Sprinkle with parsley.
  • Serve, passing Parmesan separately.

  • Bring a large stock pot of water to a rolling boil. Season liberally with salt, it should taste like sea water.
  • Heat a large skillet to a medium heat. Add olive oil, onion, carrot, and garlic. Stir with a wooden spoon. Season with a little bit of salt and pepper. Sweat the vegetables until they start to soften, about 3-4 minutes.
  • Add white wine, simmer until reduced by half. Add tomatoes, sugar, garlic powder, italian seasoning, 1/2 tsp salt, and the parmesan cheese rind. Bring to a boil and then reduce to a simmer. Cover and simmer for 10 minutes. Remove the lid from the pan and use a wooden spoon to break up the tomatoes. Stir and cover and again. Simmer another 10 minutes.
  • Remove the parmesan cheese rins and then carefully transfer the sauce to a blender. Blend until smooth. You can also use a hand immersion blender, but since it's shallow it may splatter.
