- In a large skillet, brown sausage and onion over medium heat until sausage is no longer pink, breaking sausage into crumbles, 6-8 minutes; drain., Separate 1 egg; reserve yolk for brushing pastry. In a large bowl, whisk remaining eggs and egg white. Stir in sausage mixture, spinach, mozzarella cheese, ricotta cheese, garlic powder and pepper., Preheat oven to 375°. On a lightly floured surface, roll one half of pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim pastry even with rim. Add sausage mixture. Roll remaining pastry dough to a 1/8-in.-thick circle. Place over filling; trim, seal and flute edge. , In a small bowl, whisk water and reserved egg yolk; brush over crust. Cut slits in top., Bake until golden brown, 50 minutes. Let stand 10 minutes before serving.

- Roll out dough in a 9 inch pie plate; set aside.
- Cook sausage in olive oil over medium heat until browned; set aside.
- Cook spinach according to package instructions.
- Run under cold water then squeeze out as much moisture as possible.
- In a large bowl beat eggs.
- Add mozzarella and ricotta and beat well to combine.
- Then add cooked sausage and spinach and garlic powder.
- Season to taste with salt and pepper.
- Pour filling into pie crust.
- Bake until crust browns, about 1 hour and 15 minutes.

- Place pie shell in oven during the pre-heating time for about 5- 10 minutes in order to firm the bottom some.
- Don't overcook!
- Remove casing from the sausage and crumble.
- Sauté sausage and onions; drain well and spoon into prepared pie shell.
- Blend eggs, milk, cheese, salt and pepper; pour over sausage mixture.
- Bake at 350 degrees F. for 35 minutes, or until custard sets and tests clean with a knife.

ITALIAN SAUSAGE PASTA
This scrumptious Italian Sausage Pasta combines rigatoni with sundried tomatoes and spinach in a creamy garlic Parmesan sauce. This easy pasta is truly one of our favorites and is always a hit with friends and family.

- Start browning the Italian Sausage. After 3-4 minutes add the onion and continue cooking until the sausage is browned and the onions are soft. Reduce the heat to low. Add the garlic, marjoram, black pepper, rosemary, thyme leaves, and crushed red pepper cooking for 1 minute while stirring constantly. Plate the sausage mixture and cover with foil.
- Meanwhile cook the pasta according to package instructions and drain well.
- Add the chicken broth to the skillet working to deglaze the bottom and collect all the brown bits. Add the heavy cream to the skillet. Bring to a boil and then reduce to a simmer. Let it reduce by about half.
- Turn the heat to low and stir in the parmesan cheese, sundried tomatoes and spinach. Continue cooking until the cheese is melted and the spinach is wilted. Add the sausage mixture and pasta to the skillet. Stir to coat. Season with salt and pepper to taste. Continue cooking over low heat until the pasta dish is heated through.
- NOTES Several shapes of medium pasta will work with this dish including penne, ziti, rotini, elbow, medium shells, and cavatappi. Use a spoon to break up the Italian sausage so you have some small pieces and a few larger pieces. Variety is good. The cream and chicken broth mixture can take up to 20 minutes to reduce so plan accordingly. Reduce by about 50%. Drain the oil from the sundried tomatoes. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or in the microwave. Because of the amount of cream I do not recommend freezing this dish. It would not harm you. It just would not be as appetizing or aesthetically appealing.

- Line a 9-inch pie pan with the pastry and press the edges of the crust with a fork to seal it to the pie dish. Cover loosely with plastic wrap and refrigerate while you prepare the sauce.
- Heat a large skillet over medium-high heat and stir in the ground beef, turkey sausage, and 1 clove of minced garlic. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add the onion, red bell pepper, and mushrooms and cook, stirring frequently, until the onion is soft and translucent and the mushrooms have given off their liquid, about 5 minutes. Add the remaining garlic and cook for 30 seconds.
- Stir in the tomato paste, water, salt, basil, and oregano and bring the sauce to a boil. Reduce the heat to low, cover, and simmer for 10 minutes. Remove from heat and set aside.
- Preheat an oven to 450 degrees F (230 degrees C).
- Line the chilled pie crust with a double thickness of aluminum foil. Bake for 9 minutes. Remove the foil and continue baking until the bottom of the crust is set, about 7 more minutes (see Editor's Note for tips). Remove from the oven and set aside. Reduce the oven temperature to 350 degrees F (175 degrees C).
- Combine the spinach, ricotta, and 1/2 cup mozzarella cheese. Spoon the filling into the baked crust. Top with the meat mixture. Cover the edges of the pie crust with foil to prevent over-browning, place the pie on a baking sheet, and bake for 45 minutes.
- Remove the pie from the oven. Top the meat mixture with 1 cup of mozzarella cheese, chopped tomatoes, and sliced olives. Return it to the oven and bake until the cheese is melted, about 10 minutes. Let stand for 10 minutes before serving.
