Canola oil, for frying
6 eggs
Worcestershire sauce, optional
Hot sauce, optional

Steps:

  • Heat some canola oil in a pan over medium (not too hot!) heat. Crack in the eggs 3 at a time. As they cook, spoon hot oil over the whites of the eggs so the top will set but still be pretty. Towards the end of cooking, carefully pour a couple of spoonfuls of oil over the yolks. Keep going until the egg is the doneness you want.
  • Serve with a dash of Worcestershire sauce and a dash of hot sauce if you'd like!

Steps:

  • Heat a small cast-iron or nonstick skillet over medium-high heat. Add the butter and swirl it to coat the skillet. Immediately crack the egg into the skillet. Add the water to the pan, reduce the heat to medium low, cover, and cook for 1 minute. Remove the egg from the pan immediately. Season to taste with salt and pepper and serve.

  • In a 7- or 8-in. skillet or omelet pan, melt butter over medium heat. Break eggs, 1 at a time, into a custard cup or saucer, then gently slide into the pan. Immediately reduce heat to low. Cook slowly until whites are completely set and yolks begin to thicken. , For eggs sunny-side up, cover pan and cook until yolks thicken, but are not hard. For basted eggs, spoon butter in pan over eggs while cooking. For over-easy eggs, carefully turn eggs to cook both sides but do not cover pan.

My son has always been a breakfast food lover. He could eat it morning, noon, and night. When he was about 10, he wanted to learn to cook his favorites, but he just could not get the hang of frying eggs. They would always break or stick to the pan etc. So I came up with this easy way to make foolproof eggs. I had forgotten all about it--this was over 10 years ago. But when I recently went to his house to visit, he was cooking, and he still makes his eggs like this.

1 tablespoon margarine
2 eggs
1 tablespoon water

Steps:

  • Use a nonstick frying pan with a tight fitting lid.
  • Melt margarine over med to med high heat.
  • When bubbly, carefully break eggs into the pan.
  • When the whites are good and white, add the water next to the eggs and immediately cover with the lid.
  • Give the pan a good shake to loosen eggs from pan.
  • Cook until yolks are to desired doneness.
  • Slide the eggs out of the pan onto your plate.

2 hard-boiled eggs, shelled
1/2 teaspoon chili powder
1/4 teaspoon turmeric powder
salt
pepper
1/2 lemon, juice of

Steps:

  • Make around six slits on the eggs, do not go deep into the egg white, otherwise it would split.
  • Mix the chilli powder, turmeric powder, lemon juice, salt and pepper into a paste, add little water if necessary.
  • Roll the eggs and coat it properly.
  • Leave for a couple of minutes for the mixture to properly coat.
  • Heat pan and pour oil, let it heat.
  • Fry the eggs till golden brown.
  • Serve with ketchup.

This method for making fried eggs lies somewhere between the techniques for Spanish fried eggs and for classic sunny side up: The edges are crispy and golden, the whites are set, yet the yolk is still runny. To achieve this contrast in textures, the eggs are cooked in a thin layer of rippling-hot oil. While this recipe is written for four eggs, it will work with any number. (Adjust the pan size and oil accordingly). Avoid touching the eggs until the bottoms and edges are lacy and crisp. Once that happens, spoon some of the oil onto the whites until cooked through. The yolk remains untouched, ready to be sopped up by toast or potatoes, or with yogurt.

Steps:

  • In a medium (10-inch) cast-iron or nonstick skillet, heat the olive oil over medium-high until it ripples like the ocean. (This can take 2 to 2 1/2 minutes).
  • Crack the eggs into the pan. To minimize splatters and spreading, open the shell near the oil (not from high up), and slowly let the egg pour out of the shell. Leave the eggs untouched until the edges are golden brown, 2 to 3 minutes.
  • Gently tilt the pan towards you, spoon up some of the oil, and baste just the whites and edges of the yolk until the whites are set, about 1 minute. (Avoid the yolk so that it stays runny). Turn off the heat, season with salt and pepper, then transfer the eggs to plates using a spoon or slotted spatula.
