These pies are hot pockets of heaven; with a caramel apple filling, and just the right size for snacking, you might as well make a batch, because they go fast!

2 (14 ounce) packages empanada wrappers, 10 dough rounds each
1 (20 ounce) can apple pie filling
1 (11 ounce) bag Kraft caramels
1/8 teaspoon ground cinnamon
6 cups vegetable oil

Steps:

  • Make Filling:.
  • In a microwave safe container, melt 20 caramels with 1 cup apple pie filling. Stir in remaining pie filling and ground cinnamon. Allow to filling to cool completely.
  • Place 2 tablespoons caramel apple filling on one half of each dough round, leaving a 1/4-inch border around the filling. Brush border with water; fold dough over filling to enclose completely. Press edges to seal, then press to crimp with hands. Chill finished pastries in freezer for 10 minutes before cooking.

  • Attach a deep-frying thermometer to the side of large heavy-bottomed pot or dutch oven, heat 2-inches of oil, over medium-high, to 340°F.
  • Line two baking sheets with paper towels. Working in batches, fry empanadas until they are light brown in color and crisp, about 5 minutes a batch, transfer empanadas to prepared towel lined baking sheets. Cool slightly before serving.
  • Tip: Copycat Taco Bell Caramel Apple Empanda's can be formed and chilled in the refrigerator up to one day ahead; or frozen and thawed before cooking.

4 ½ cups all-purpose flour
1 ½ teaspoons salt
½ cup shortening
1 ¼ cups water, or as needed
2 tablespoons olive oil
1 small onion, chopped
1 ½ pounds ground beef
1 pinch salt
2 tablespoons paprika
1 tablespoon cumin
½ teaspoon ground black pepper
½ cup raisins
1 tablespoon white vinegar
2 hard-cooked eggs, peeled and chopped
1 quart oil for frying, or as needed

Steps:

  • In a medium bowl, stir together the flour and salt. Cut in shortening using a pastry blender, or pinching into small pieces using your fingers, until the mixture resembles coarse crumbs. Use a fork to stir in water a few tablespoons at a time, until the mixture forms a ball. Pat into a ball, and flatten slightly. Wrap in plastic wrap and refrigerate for 1 hour.
  • Heat the oil in a large skillet over medium heat. Add the onion and cook until tender. Crumble in the beef, and season with salt, paprika, cumin and black pepper. Cook, stirring frequently, until beef is browned. Drain excess grease, and stir in the raisins and vinegar. Refrigerate until chilled, then stir in the hard-cooked eggs.
  • Form the dough into 2 inch balls. On a floured surface, roll each ball out into a thin circle. Spoon some of the meat mixture onto the center, then fold into half-moon shapes. Seal edges by pressing with your fingers.
  • Heat oil in a deep-fryer to 365 degrees F (180 degrees C). Place one or two pies into the fryer at a time. Cook for about 5 minutes, turning once to brown on both sides. Drain on paper towels, and serve hot.

10 caramel candies, each cut into 4 pieces
1/3 cup all-purpose flour
3 cups apples, peeled and chopped
2/3 cup caramel ice cream topping
2 teaspoons lemon juice

Steps:

  • Lightly grease 2 baking sheets. Heat oven to 375 degrees F (190 degrees C).
  • Combine caramel pieces and flour. Add apples, caramel topping and lemon juice; mix well.
  • Place dough for one roll on lightly floured surface; roll into 4-inch circle. Spoon about 2 tablespoons apple mixture onto lower half; brush edges with milk. Fold dough in half; crimp edges with fork. Repeat with remaining dough. Brush each empanada with butter; sprinkle with cinnamon sugar. Place on prepared baking sheets.

20 * 20 8 inch flour tortillas
8-10 * 8-10 cups oil for frying
* Cinnamon and sugar mix, optional
* Ice cream
* Sharp cheddar cheese

Steps:

  • Stir together sugar, cinnamon, and flour then set aside. Bring apples and water to a boil, cover, reduce heat to simmer, and cook 10 minutes or until apples are tender. Remove from heat and gently stir in sugar and flour mixture, caramel topping and butter. Do not over stir. Cool to lukewarm. Spoon 3-4 tablespoons filling on each tortilla. Fold end up and sides in, over filling, then roll like a burrito. Secure with 1-2 toothpicks. Tortillas roll easier when they are fresh, and when each one is warmed 10-15 seconds in microwave oven. Using a deep heavy pan, pour oil to 2 inch depth. Heat to 360 degrees. Using tongs, place 2-3 empanadas in hot oil and fry until golden brown, 1-2 minutes. 1 (12 ounce) package stouffer's frozen harvest apples
1 tablespoon all-purpose flour
1/4 cup butter or 1/4 cup margarine
1/4 cup firmly packed light brown sugar
1/4 teaspoon ground allspice
3 1/2 cups baking mix
1 cup whipping cream
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Thaw apples in microwave at half power 6 to 7 minutes; let stand 3 minutes. Stir together apples and flour.
  • Melt 1/4 cup butter in a medium skillet over medium heat; add apple mixture, brown sugar, and allspice. Cook, stirring constantly for 4 minutes or until thickened. Remove from heat. Coarsely mash apple mixture, and set aside.
  • Stir together baking mix and 1 cup whipping cream with a fork until moistened. Turn dough out onto a lightly floured surface, and knead 3 to 4 times.
  • Roll dough to 1/2-inch thickness. Cut into 12 (5-inch) squares.
  • Divide apple mixture into 12 servings and place 1 serving in center of each square. Fold 1 side of square over, pressing edges with a fork to seal. Place on a lightly greased baking sheet. Brush tops evenly with 2 tablespoons melted butter.
  • Bake at 400F for 18 to 20 minutes or until golden brown. Serve immediately.

1 teaspoon salt
1 cup shortening
6 -7 tablespoons water
1 egg, beaten (to be used later)
2 large apples, peeled and diced
1/2 cup apple cider
1/2 cup granulated sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 cup raisins (these are optional)
1 tablespoon cornstarch
1/4 cup granulated sugar
1/2 teaspoon cinnamon

Steps:

  • Pastry:.
  • In a medium bowl, mix flour and salt; cut in shortening until crumbly. Stir in water until completely moistened. Divide pastry into 2 equal portions. Roll out each portion thinner than you would for pie crust. Cut into circles with a 3-1/2" biscuit or cookie cutter.
  • Apple filling:.
  • In a medium saucepan, simmer diced apples, cider, sugar, cinnamon, and nutmeg over low heat until apples are soft. In a small bowl, mix cornstarch with enough water to form a thin consistency; stir into apple mixture and cook until mixture thickens.
