STEAK TORTELLINI ALFREDO
This dish requires a bit of multitasking but the end result--a filet mignon nestled over mushrooms and tortellini coated with Alfredo sauce--is worth it! Psst... after you get the photo, please cut the filet mignon into strips. Serves 2 hungry people or 3 with smaller appetites.

Steps:
- Season filet mignon on both sides with garlic salt, granulated onion, and pepper. Set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes.
- Meanwhile, set a grill pan over medium high-heat. Melt butter in the hot pan. Add filet and quartered mushrooms. Cook the filet for 3 minutes per side. Cook mushrooms for 1 to 2 minutes. Remove filet, cover, and allow to rest.
- Meanwhile, for the sauce, melt butter in a saucepan over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Push garlic to the side of the pan and stir in flour until smooth. Slowly add half-and-half, stirring until sauce thickens. Stir in Parmesan cheese and nutmeg.
- Cut filet into strips. Distribute tortellini among the plates, drizzle with sauce, and top with steak strips and mushrooms.

SKILLET CHICKEN TORTELLINI ALFREDO
Store-bought tortellini are the star of this quick and creamy weeknight meal. They simmer in their own sauce, making this a one-skillet meal with easy cleanup. Try one-inch pieces of Italian sausage instead of chicken for a variation.

TORTELLINI ALFREDO
Refrigerated tortellini, ham, mushrooms and peas are treated to a mild homemade Alfredo sauce in this fast fix Chris Snyder shares. "When we're having company, I prepare this dinner shortly before guests arrive, put it in a casserole dish and keep it warm in the oven," notes the Boulder, Colorado reader.

TORTELLINI SAUSAGE ALFREDO
I invented this dish for my kids when were young using all the things they like-sausage, mushrooms, onions, green pepper and pasta. It's still a favorite with them today.-Nelson Wandrey, Paulden, Arizona

TORTELLINI ALFREDO
Steps:
- Drop the box of tortellini into a pot of boiling salted water. Place the Alfredo mix, the powdered milk and the water in a saucepan and mix until blended. Over medium heat, stir constantly while bringing mixture to a boil. While tortellini and Alfredo sauce are cooking, pour hot water over the sun-dried tomatoes and rehydrate them until soft (about the same time as the tortellini takes to cook). When cooked, drain tortellini and add to Alfredo sauce. Add sun-dried tomatoes and prosciutto, toss and sprinkle with Parmesan.
TORTELLINI SAUSAGE ALFREDO
Nice fast meal to fix for dinner. It is from a Taste of Homes magazine. I did use frozen tortellini, left out the green pepper (DH does not like them) and use half-half cream.

SAUSAGE TORTELLINI ALFREDO
A wonderful combination of rich alfredo sauce and three cheese tortellini -with veggies and Italian sausage to make matters worse (or better!). This is not for the faint of heart for calories, but that's why they invented the "just a garden salad for me" lunch! :) This recipe looks fancy enough for company but uses pre-made sauces and pasta for convenience. I have used Buitoni refrigerated pasta and sauce as well as those listed in the recipe. Using homemade versions could only make it tastier!
