8.5 oz vegetarian Jiffy corn muffin mix
14.75 oz can of creamed corn
15 oz can of whole corn (drained)
1/4 cup onions (finely chopped (optional))
1 cup dairy free plain yogurt
1/4 cup vegan butter (melted)

Steps:

  • Preheat oven to 350 degrees F. In a large mixing bowl, combine corn muffin mix, creamed corn, whole corn, chopped onion, vegan butter, and plain dairy free yogurt. Stir until combined.
  • Transfer to a 2 1/2 qt baking dish greased with coconut oil. Using your spatula, evenly spread across the top.
  • Bake for 1 hour at 350 degrees F. Allow to cool for 10 minutes before serving. Top with fresh herbs. Serve warm.

3 cans whole kernel sweetcorn
1/2 cup whole-wheat or gluten-free flour
1/2 cup cornmeal
2 tbs chia seeds
2 tsp baking powder

Steps:

  • Blend the chia seeds together with one can of corn (including the liquid) for 1 to 2 minutes. Set the blended mixture to the side.
  • Add all of the dry ingredients to the baking dish and evenly mix the flour, cornmeal, baking soda, and baking powder.
  • Drain the liquid from the remaining two cans of sweet corn before mixing them and the rest of the ingredients (dry and wet) together in a large mixing bowl. Once everything has been mixed, evenly spread the mixture out in the baking dish.
  • Bake at 375 degrees Fahrenheit for 45 minutes or until the top of the dish is golden brown.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off the grease. Stir in the green beans and corn, and cook for a few minutes. Mix in the cans of soup until well blended. Transfer to a 9x13 inch baking dish. Top with shredded cheese and crushed potato chips.

1 onion (diced)
2 cloves garlic (minced)
1 green pepper (diced)
1 cup frozen corn kernels
1 15-ounce can black beans, drained and rinsed

1 15-ounce can dark red kidney beans, drained and rinsed
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika

2 cups 16 ounces jarred chunky-style salsa
8 to 9 cups about 7 ounces corn tortilla chips

Steps:

  • Preheat the oven to 375ºF. Lightly mist a 9 x 13-inch baking dish with cooking spray or an oil mister. Set aside.
  • To a large skillet over medium heat, add the olive oil. When the olive oil is hot, add the onion and cook, stirring occasionally, until it starts to soften, about 2 minutes. Add the garlic and cook until fragrant, about 30 seconds. Stir in the pepper and corn. Cook, stirring occasionally, until tender, about 5 minutes. Add all of the beans, chili powder, cumin, paprika, oregano, cayenne (if using) and salsa. Stir to combine and cook until warmed through, about 1 minute. Remove from heat.
  • Spread half of the tortilla chips evenly in the prepared baking dish. Drop half of the bean mixture in dollops over the chips. Sprinkle evenly with half of the cheddar cheese and half of the pepper jack cheese. Top with the remaining chips, then spoon on the rest of the bean mixture, and finally sprinkle on the remaining cheddar and pepper jack cheeses.

5 1/2 cups whole corn chips, crushed (about 2 1/2 cups after crushing to the size of a dime)
one 10-ounce can chili
one 10-ounce can black beans, red beans, refried beans, bean medleys
one 10-ounce jar salsa or tomato sauce
one 8-ounce package shredded cheese blend such as Mexican-style or similar (both store-brand and name-brand packages will say "2 cups" on the package)
1 1/4 cups sour cream
2 1/2 cups whole corn chips, crushed (about 1 to 1 1/2 cups after crushing to the size of a dime)

Steps:

  • Preheat oven to 375F. Line a 9-by-9-inch baking pan with aluminum foil, spray with cooking spray, and set aside. In a large mixing bowl, add 5 to 6 cups chips (about 5 big handful of chips from the bag) and with a wooden spoon or similar, poke and crush the chips to the size of a dime. You don't want powder, but make them small. Add the chili, beans, salsa, 2 loosely-packed cups cheese (about two-thirds of the package), and stir to combine. Pour mixture into prepared pan and bake for 20 minutes.
  • After 20 minutes, remove pan from oven and spread sour cream in an even, flat layer over the casserole. Sprinkle 1 to 1 1/2 cups loosely packed cheese (the remaining cheese in the package) evenly over the top of the sour cream. Sprinkle 1 to 1 1/4 cups crushed corn chips over the top and bake for 9 to 12 minutes, or until top is browned to desired level.
  • Serve immediately. Optionally, garish with a dollop of sour cream, a sprinkling of cheese, or a pinch of chopped cilantro or onion. Store leftovers in a Glad Freezerware container or similar airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.

2 lb 90% lean ground beef sirloin
1 Tbsp olive oil
salt and freshly ground black pepper, to taste
1 Tbsp worcestershire sauce
1 medium onion, finely chopped
4-6 clove garlic, finely chopped
6 oz can sliced jalapeno peppers
2 1/2 - 3 Tbsp dark chili powder
1 Tbsp cumin
1 c beef stock or broth
14 oz can diced stewed tomatoes
8 oz can tomato sauce
2 can(s) 15 oz each, black beans, drained
3 c corn chips (fritos)
2 c shredded monteray jack cheese (or cheddar)
2 Tbsp fresh cilantro, chopped - optional
3 scallions, chopped

Steps:

  • 1. In a large deep skillet or pot, brown ground beef in the olive oil over high heat. Season the meat with salt and pepper, then add Worcestershire sauce. When the meat is browned and crumbled, reduce heat to med-high, then add onion, garlic and jalapeno.
  • 2. Season veggies and meat with chili powder and cumin. Cook veggies and meat together for 5 minutes.
  • 3. Stir in broth and scrape up pan drippings. Stir in diced tomatoes, tomato sauce and black beans. When the mixture comes to a bubble, reduce heat and simmer 5 minutes more.
  • 4. Preheat the broiler. Transfer chili to a shallow casserole and top with the corn chips and cheese. Melt cheese under broiler. Tope casserole with cilantro and scallions and serve.

1 yellow onion (medium onion, peeled and diced)
1 package taco seasoning mix
1 cup salsa
15 ounce kidney beans (drained and rinsed)
15 ounce cream style corn
9 oz. bag Fritos corn chips (divided)
2 cups shredded cheese (divided)
top with your favorite taco toppings: green onion, cilantro, sliced black olives, tomato and a dollop of sour cream. (optional)

Steps:

  • Preheat the oven to 350ºF. Prepare a 9x13-inch glass baking dish by spraying it with non-stick cooking spray, set aside.
  • Crumble the ground beef into a large skillet. Add the onions and cook over medium-high heat, stirring often, cook ground beef until fully browned. Drain off the excess fat if desired.
  • Add the taco seasoning mix and cream style corn stir to combine. Add the salsa, corn and beans; stir well; bring to a simmer and cook for 3-4 minutes, stirring often.
  • Pour half Fritos into the bottom of the large baking dish and sprinkle with 1 cup of the cheese. Evenly spread the meat mixture over the chips. Add the rest of the corn chips then add the remaining cheese on top of the Frito corn chips.
  • Cover the casserole and bake the casserole at 350ºF for 18-20 minutes until hot and bubbly.

1 tablespoon extra virgin olive oil
1 large yellow onion, (chopped)
1 medium garlic clove, (minced)
1 teaspoon ground cumin
1½ teaspoons chili powder
1 (14-ounce) can fire roasted diced tomatoes, (drained, 1/4 cup juice reserved)
¼ cup tomato paste
2 (15 ounce) cans black or pinto beans (or a mix), (drained)
1½ cups frozen corn
3 cups coarsely chopped fresh spinach ((baby or regular will work))
salt and ground black pepper
8 corn tortillas
2 cups monterey jack or cheddar cheese ( (I used both))
Optional toppings: chopped fresh cilantro, chopped fresh jalapeño, sour cream, salsa

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8x11 or 9x9 inch baking dish (or a similar sized pan) with cooking spray.
  • Heat the olive oil in a large skillet over medium low heat and add the onion, garlic, cumin and chili powder. Stir for a few minutes until the onions are soft and the spices are fragrant, about 3-5 minutes. Add the tomatoes, reserved tomato juice, tomato paste, beans, corn and spinach. Stir and cook for another minute or two until the spinach has wilted and the corn has thawed. Season with salt and pepper to taste.
  • Place two corn tortillas in the bottom of the prepared pan and top with 1/4 of the bean mixture, spreading the mixture evenly. Sprinkle evenly with 1/2 cup of the cheese. Repeat until all of the ingredients have been used up, finishing with the cheese.
  • Bake until the tortilla casserole has cooked through, approximately 20 minutes. Allow to cool for 5 minutes before cutting.
  • Serve with garnishes, if desired (I highly recommend them!).

1 cup frozen corn kernels
8 oz enchilada sauce
14 oz diced fire roasted tomatoes
juice of 1 lime
2 tablespoons cream cheese
4 cups COOKED white rice
1 can black beans, drained
1 teaspoon chili powder
3 teaspoons cumin
1/4 teaspoon cayenne
1 teaspoon salt
1/2 cup mexican cheese + more for topping
sour cream, for serving
tortilla chips, for serving

Steps:

  • Cook rice according to instructions (I used a rice cooker) - the amount of uncooked rice varies based on your brand. You will need 4 cups of cooked rice to add to the recipe
  • While rice is cooking, heat a large heavy bottomed pan over medium high heat (I used a dutch oven)
  • Add 1 tablespoon of olive oil, and sauté the red onion, garlic, and bell pepper for 8-12 minutes, or until onion becomes translucent
  • Add the corn and fire roasted tomatoes and stir an additional 3 minutes
  • Add drained black beans, 4 cups of cooked rice, lime juice, enchilada sauce, chili powder, cumin, cayenne, cream cheese, and 1/2 cup of mexican cheese
  • Add salt to taste (I used a teaspoon)
  • Serve topped with additional mexican cheese, sour cream, and tortilla chips

This recipe came from a cooking show on 3ABN called, "Let's Cook Together." The beauty of it is that it can be converted to non-vegetarian by using hamburger meat. But, the vegetarian version is quite good as well. My family loves both and when we have company who are vegetarians, we do the non-meat version. The prep time for the vegeburger one is less because you don't have to cook the vegeburger first. The hamburger one requires cooking and draining the meat before you proceed.

olive oil to saute the onion and garlic
16 -20 ounces veggie burgers
1 teaspoon salt (but if you use the vegeburger, leave the salt out because the vegeburger is a little salty anyway)
2 garlic cloves, pressed (you can buy it already pressed for you if you prefer)
2 (8 ounce) cans tomato sauce (I like to use the canned crushed tomatoes)
2 tablespoons lemon juice
2 tablespoons cumin
1 (25 ounce) can kidney beans, drained (I use the pink ones)
1 (11 ounce) bag of fritos scoops corn chips (you can also use the chili cheese flavor or the plain flavor flat ones)
1/2 lb sharp cheddar cheese, grated (or you can use the vegan cheese)
1 head iceberg lettuce, chopped fine 1 bunch of green onions finely chopped, 1 (16oz)

Steps:

  • Saute onions and garlic in olive oil until soft and translucent. Add the lemon juice, cumin, vegeburger (If using hamburger, cook it, drain it and then add the cooked onions, garlic and lemon juice and the rest of the spices etc.).Add tomato sauce or crushed tomatoes and mix well. Let it simmer on low for 15 minutes. Add beans and mix well. Spray a 9x13 casserole. Place one layer of chips then a layer of cheese and a layer of the vegeburger or meat mixture and another layer of cheese. Repeat layers ending with a layer of chips then a layer of cheese. Bake at 350 for 20 minutes or until hot and bubbly. Remove from oven. Place a helping of the casserole on a bed of finely chopped lettuce then top with the garnishes. and enjoy.

1 red bell pepper, diced
4 cups corn (frozen or fresh) see notes
4-ounce can diced green chilies ( or use 1/2 cup diced poblano pepper or one chopped jalapeno, and saute it with the onion )
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon smoked paprika
1/2 teaspoon salt
2 tablespoons chopped cilantro (or scallions)
1/2 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon salt
2 teaspoon sugar
2 teaspoons baking powder

2 large eggs
1 cup sour cream
1/4 cup melted butter, slightly cooled.

1 1/2 cups grated cheese- cheddar, jack or mozzarella

Steps:

  • In a large skillet, saute onion in olive oil over medium heat until fragrant and golden, about 3-4 minutes. If using fresh chilies, saute with the onion. Add the bell pepper and cook 3-4 minutes. Add the fresh or frozen corn, saute 3-4 minutes. If using canned chilies, add along with spices and salt, saute 2 minutes, then turn heat off. Stir in fresh cilantro.
  • In a large bowl, add cornmeal, flour, salt, sugar and baking powder, and whisk. In a medium bowl, whisk eggs and sour cream. Gradually whisk in the melted butter.
  • Add the sauteed corn/pepper mixture to the dry ingredients along with the egg mixture and stir to combine all. Add 3/4 cup grated cheese. Pour the batter into a 2-quart greased baking dish, ( 8×9, 11 x 7) or you can bake it in a 10-inch cast ioron skillet) and top with the remaining 3/4 cup cheese. Batter should ideally not be over 2 inches high.
  • uncovered, for 25-35 minutes, or until puffed (it will dome) and golden!
  • with cilantro and/ or scallions! Serve warm.
