1 tsp caraway seeds (optional)
Sea salt and pepper (to taste)

Steps:

  • Heat a large skillet over medium heat, and add the ghee.
  • Add the onion and apple, cooking and stirring until the onions are translucent and the apple softened, about 5 minutes.
  • Add the cabbage and cook about 3 minutes more.
  • Drizzle with balsamic vinegar and cook for another few minutes until the vinegar has reduced a bit and everything is cooked through.
  • Season with caraway seeds, salt and pepper to taste.

8 ounces thick-cut bacon
One 2-pound head red cabbage, sliced thinly (about 12 cups)
1/4 cup apple juice
1 tablespoon honey
1 tablespoon apple cider vinegar
1 Gala apple, thinly sliced
Kosher salt and freshly ground black pepper
4 scallions, finely chopped

Steps:

  • Spread the bacon out in a large nonstick saute pan. Place over medium-high heat and cook until crispy, about 6 minutes per side. Remove the bacon and place on a paper towel-lined plate, leaving the fat in the pan. Once cool to the touch, crumble the bacon into bite-sized pieces.
  • Reduce the heat to medium and add the cabbage to the pan. Cook, stirring frequently, until slightly wilted, about 4 minutes. Pour the apple juice, honey and vinegar around the sides of the pan. Cook, stirring occasionally, until the liquid has cooked off, 2 to 3 minutes more. Add the apples and sprinkle with 1 teaspoon salt and 3/4 teaspoon black pepper. Toss to combine. 2 cups thinly sliced onions
3 pounds savoy or napa cabbage (1 head)
1 cup chicken stock
4 double cut pork chops
2 teaspoons Essence, recipe follows
2 teaspoons kosher salt
1/4 cup all-purpose flour
1 cup Calvados
1/2 teaspoon caraway seeds
2 bay leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon freshly chopped thyme leaves
1 teaspoon freshly chopped marjoram
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Season both sides of the pork chops with the Essence and kosher salt. Lightly dredge in the flour.
  • Heat the olive oil in a large Dutch oven or heavy pot over high heat. Add the pork chops 2 at a time, and cook until lightly browned, about 2 minutes per side. Remove the pork chops and transfer to a platter. Repeat with the remaining pork chops and set aside.
  • Reduce the heat to medium-high, and add the apples and onions. Cook, stirring occasionally, until the apples and onions are golden brown, 3 to 4 minutes. Add the cabbage and cook, stirring, until wilted, about 5 minutes. Stir in the chicken stock, Calvados, caraway seeds, bay leaves, salt, pepper and herbs. Cook uncovered until sauce comes to a boil. Add the pork chops, cover, reduce the heat to a simmer and cook until the pork chops are fork-tender, about 1 1/2 hours.
  • Serve the pork chops with the cabbage and pan juices.

1 cup cooked white rice
1 egg, beaten
¼ cup milk
¼ cup minced onion
1 pound extra-lean ground beef

1 tablespoon brown sugar
1 tablespoon lemon juice

3 tablespoons butter
½ pound bacon
1 onion, chopped
1 small head cabbage, chopped
1 dash garlic salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles; return to a boil. Cook, uncovered, stirring occasionally, until the noodles are cooked through, but still firm to the bite, about 5 minutes. Drain; return to the pot and stir in the butter.

1 (12 ounce) package bacon, chopped
1 head cabbage, cored and chopped
1 (8 ounce) package egg noodles

3 lbs cabbage, quartered, core removed, and cut into a large 1-inch dice
1/2 lb sliced bacon
1/2 of medium onion, sliced thinly
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
  • Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
  • Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
  • Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
  • Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
  • Crumble the cooked bacon into the cabbage and serve hot.
