1 medium onion, chopped
1/2 cup chopped green pepper
2 garlic cloves, minced
2 tablespoons olive oil
1/3 cup minced fresh cilantro
3 cans (16 ounces each) red beans, rinsed and drained
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon pepper
3 cups hot cooked rice

Steps:

  • In a large nonstick skillet, saute the onion, green pepper and garlic in oil until tender. Add cilantro; cook and stir until wilted, about 1 minute. Stir in the beans, salt, cumin and pepper. Cover and simmer for 10-15 minutes. Serve over rice.

1 dried chipotle chili
1 tablespoon vegetable oil
1 large onion, chopped (1 cup)
1 can (14 1/2 ounces) ready-to-serve vegetable broth
1/2 cup uncooked regular long grain rice
1 cup fresh or frozen whole kernel corn
2 cans (14 1/2 ounces each) Mexican-style stewed tomatoes
1 can (15 to 16 ounces) light red kidney beans, rinsed and drained
Chopped or sliced avocado, if desired

Steps:

  • Cover chili with very hot water. Let stand until chili is soft; drain. Seed and finely chop chili.
  • Heat oil in 2-quart saucepan over medium-high heat. Cook onion in oil 3 to 5 minutes, stirring occasionally, until onion is tender.
  • Stir in broth and rice. Heat to boiling; reduce heat to low. Cover and simmer 15 minutes, stirring occasionally.
  • Stir in chili and remaining ingredients except avocado. Heat to boiling; reduce heat to medium-low. Simmer uncovered 10 to 15 minutes, stirring frequently. Top each serving with avocado.

1/2 cup finely chopped onion
2 cloves garlic, minced
1/2 pound smoked Creole seasoned sausage (andouille), cut into small pieces
2 cups dried red beans, soaked overnight and drained
1 quart water
Kosher salt and freshly ground black pepper
Hot cooked rice (about 3 to 4 cups)

Steps:

  • In a slow cooker, combine the onion, garlic and sausage. Stir in the beans and water and season, to taste, with salt and pepper. Cover and cook on low heat until the beans are tender, about 7 1/2 hours (on high it takes between 3 1/2 to 4 hours). Remove 1/4 cup of beans from slow cooker; mash until smooth, then sir them stir back into slow cooker. Continue to cook for another 30 minutes on low or 15 minutes on high. Remove the beans from the cooker to a serving bowl. Serve over cooked rice and enjoy!

1 pound dried red kidney beans
2 quarts water
1 large onion, chopped
1/4 cup vegetable oil
1 pound smoked ham, cubed
1 pound smoked sausages, sliced into 1/2-inch slices
1 cup water
1 tablespoon chopped garlic
1 bay leaf
1 tablespoon black pepper
2 tablespoons chopped parsley leaves
1 teaspoon whole fresh thyme leaves
2 level tablespoons salt

Steps:

  • Pick through beans, removing all bad beans and any other foreign particles. Wash beans well. Place beans in 5 quart pot. Add the 2 quarts of water. Add the onions and bring to a boil. Lower heat and let beans boil slowly for 1 hour. When beans are soft stir well, mashing some against side of pot.
  • Heat oil in a frying pan. Add the ham and sausage and saute in the oil for 5 minutes. Then add the sausage, ham, and oil to beans. Deglaze pan with the cup of water, then pour into beans. Add all other ingredients. Let simmer for 30 minutes. Beans should be nice and creamy. Serve over rice.

1 red onion, minced
1 jalapeno, seeded, minced
1 green bell pepper, minced
1 red bell pepper, minced
2 tablespoons garlic, minced
1 cup Roma tomatoes, diced
3/4 pound ground beef or turkey
2 cups long-grain rice
8 ounces kidney beans
2 cups chicken stock
1 1/2 cups water
1 teaspoon paprika
1 tablespoon chili powder
1 tablespoon salt
1 teaspoon freshly ground black pepper
3 tablespoons green onion, sliced, for garnish

Steps:

  • In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.
  • Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.
  • Fluff with fork and garnish with green onions.

1/4 cup chopped tasso, or chopped ham
1 1/2 cups chopped yellow onions
3/4 cup chopped celery
3/4 cup chopped green bell peppers

1/2 teaspoon freshly ground black pepper
Pinch cayenne
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons fresh thyme
1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
1 pound smoked ham hocks
3 tablespoons chopped garlic
10 cups chicken stock, or water
4 cups cooked white rice
1/4 cup chopped green onions, garnish

Steps:

  • Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.
  • In a large pot, heat the bacon grease over medium-high heat. Add the tasso and cook, stirring, for 1 minute. Add the onions, celery and bell peppers to the grease in the pot. Season with the salt, pepper, and cayenne, and cook, stirring, until the vegetables are soft, about 4 minutes. Add the bay leaves, parsley, thyme, sausage, and ham hocks, and cook, stirring, to brown the sausage and ham hocks, about 4 minutes. Add the garlic and cook for 1 minute. Add the beans and stock or water, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender and starting to thicken, about 2 hours. (Should the beans become too thick and dry, add more water, about 1/4 cup at a time.)
  • Remove from the heat and with the back of a heavy spoon, mash about 1/4 of the beans against the side of the pot. Continue to cook until the beans are tender and creamy, 15 to 20 minutes. Remove from the heat and remove the bay leaves.
  • Serve over rice and garnish with green onions.

1 dash salt

1/2 cup green onion, chopped

Steps:

  • Bring 2 cup lightly salted water in a heavy-bottomed saucepan to a boil, and immerse the brown rice in it. Loosely cover, lower the heat to medium-low and let simmer for 40 minutes or until the rice has absorbed all the water. Fluff it up and put it into another bowl for now.
  • Put the rinsed and drained beans into a small bowl and mix with the olive oil.

  • In a fry pan, add oil and set heat to medium-high. Add garlic and saute for 5 minutes.

  • Add beans after rinsing them thoroughly.
  • Mix 2 teaspoons tomato paste, 1 teaspoon bouillon, 1/2 cup water, and 1 tablespoon cornstarch together, then add to the meat mixture.
  • Mix everything together very well in the fry pan and reduce heat to low, cover, and wait until the rice is done.

8 ounces bacon, cooked and cubed
1 ½ cups chopped onion

2 cups dry kidney beans, soaked overnight
1 teaspoon Cajun seasoning
1 teaspoon Worcestershire sauce
8 cups chicken broth

1 ½ cups cooked rice
6 tablespoons thinly sliced green onion

Steps:

  • In a large pot over high heat, heat the oil. Add the bacon and saute for 2 minutes. Add the onions, bell pepper, garlic, bay leaves, sausage and ham hock and saute for 2 more minutes.

This is one of Jeanne Lemlin's recipes (from her wonderful cookbook "Quick Vegetarian Pleasures") that I have adapted a little to my taste. It is one of my favorite quick and healthy weeknight meals. It tastes good with or without the sour cream, and also is good with a sprinkling of cheddar cheese on top. It makes great leftovers and is good for work lunches.

1 1/2 cups brown rice or 1 1/2 cups converted white rice (I prefer brown rice with this dish)
3 cups water
1 tablespoon vegetable oil
1/2 teaspoon salt
1 -2 tablespoon olive oil
1 large onion, finely diced
1 tablespoon chili powder
2 (15 ounce) cans red kidney beans, rinsed and drained
1 cup salsa (mild, medium or hot according to taste--I like Newman's Own medium salsa)
1/8 cup water
light sour cream, for topping (optional)
minced fresh parsley, for garnish (optional)

Steps:

  • In medium saucepan, combine rice, water, vegetable oil and salt; cover and bring to boil.
  • Reduce to simmer and cook rice (without lifting lid) for 45 minutes for brown rice or 20 minutes for white rice, or until water is absorbed and rice starts to stick slightly to pot.
  • During the last 15 minutes that rice cooks, prepare bean mixture.
  • Heat olive oil in large skillet over med-high heat.
  • Add onions& saute for approx.
  • 10 minutes or until translucent and soft.
  • Sprinkle the chili powder over onions in pan and cook for 1 minute, stirring constantly.
  • Add beans, salsa and water to pan and cook for approx.
  • 5 more minutes, until mixture is hot.
  • To serve, spread bean mixture on top of mound of rice; top with dollop of sour cream and garnish with parsley, if desired.

2 medium onions, finely diced

1 cup tomato sauce
1/4 cup water
A few dashes hot sauce (such as Tabasco)
2 (15-ounce) cans kidney beans, rinsed well in a strainer
4 cups hot cooked rice (from 1 cup raw rice)
Sour cream (optional)

Steps:

  • 1. Heat the oil in a large skillet over medium heat. Add the onions, garlic,and green pepper, and sauté until the pepper is very tender, about 10 minutes.
  • 2. Sprinkle in the chili powder and paprika, and cook 30 seconds. Mix in the tomato sauce, water, hot sauce, and kidney beans, and simmer about 10 minutes, or until the mixture is hot and fragrant. Serve over rice with a small spoonful of sour cream on top, if desired.

1 lb dried red kidney beans
9 3/4 cups water, divided
1 (14 1/2 ounce) can low sodium chicken broth
3 tablespoons vegetable oil
2 1/2 cups chopped onions, divided
1 1/4 cups fully cooked andouille sausages or 1 1/4 cups hot Italian sausage links, diced
1 cup chopped green bell pepper
1 cup chopped celery
6 garlic cloves, minced
2 teaspoons salt, divided
3/4 teaspoon ground black pepper, divided
1 teaspoon paprika
1/2 teaspoon cayenne pepper (ground red pepper)
1 1/2 cups long-grain white rice
3 tablespoons butter
1 bay leaf
1/2 teaspoon dried thyme

Steps:

  • Place kidney beans in large pot. Add enough water to pot to cover beans by 2 inches. Bring to boil. Remove pot from heat. Cover and let beans stand 1 hour to soften. Drain. Return beans to same pot. Add 7 cups water and chicken broth. Bring to boil. Reduce heat to medium-low and simmer until beans are tender, about 1 hour. Drain beans, reserving 2 cups of cooking liquid.
  • Heat vegetable oil in heavy large skillet over medium-high heat. Add 2 cups onions and saute' until beginning to soften, about 4 minutes. Add sausage, bell pepper, celery, and garlic. Reduce heat to medium and saute' until vegetables are tender, about 10 minutes. Stir in beans, reserved 2 cups cooking liquid, 1 teaspoon salt, 1/2 teaspoon black pepper, paprika, and cayenne. Reduce heat to low; simmer until liquid thickens slightly, about 15 minutes.
  • Meanwhile, combine remaining 2 3/4 cups water, rice, butter, bay leaf, thyme, and remaining 1/2 cup chopped onion, 1 teaspoon salt and 1/4 teaspoon black pepper in a large saucepan. Bring to simmer over high heat. Cover, reduce heat to low and cook until rice is tender and water is absorbed, about 20 minutes. Remove from heat and let stand covered 10 minutes.
  • Spoon kidney beans into bowls. Top with rice and serve.
