- Heat a large nonstick skillet over medium-high heat. Add the sesame oil and bacon; cook, stirring occasionally, until the bacon is almost crisp, 4 minutes. Add the sugar and 1 teaspoon soy sauce; stir-fry until the bacon is glazed, about 1 minute. Transfer to a bowl using a slotted spoon; reserve the drippings in a separate bowl. Wipe out the skillet.
- Heat 2 teaspoons of the drippings in the skillet over medium heat. Whisk the eggs and 1/2 teaspoon salt in a medium bowl; add to the skillet and cook, undisturbed, until just set, 3 minutes. Transfer to a plate and break up the eggs into large pieces.
- Heat the remaining drippings in the skillet over medium-high heat. Add the tomatoes and ginger; stir-fry until the tomatoes are softened, 2 to 3 minutes. Add the snow peas, bell pepper and scallions; stir-fry until crisp-tender, about 3 minutes. Add the rice and the remaining 2 teaspoons soy sauce; stir-fry until warmed through, about 2 minutes. Stir in the eggs and cook 1 minute. Top with the bacon.

- Cook bacon in a deep cast iron skillet over medium-high heat until crisp, about 4 to 6 minutes. Use a slotted spatula to remove the bacon pieces and transfer to a paper towel-lined plate.
- Add the diced onion to the bacon drippings and cook until translucent, about 1 to 2 minutes.
- Add shredded cabbage to the pan and toss to coat. Add in brown sugar, salt, and pepper and cook until cabbage is tender, about 5 to 7 minutes.
- Add the bacon back to the cabbage and cook for another 2 to 3 minutes. Serve hot and season with additional salt and pepper if desired.

CRISPY DEEP FRIED BACON
Battered and fried bacon that is even better after cooking in the oven for 7 minutes. My husband and I saw the idea of fried bacon on the travel channel where they just battered and fried it and we decided to make it. It was so good. But then we cooked in the oven and it was even better. Serve with white gravy and it is a heart attack waiting to happen but tastes so good!

- Whisk together the eggs and milk in a bowl until smooth. Separate the bacon strips, and soak in the milk mixture for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep skillet to 375 degrees F (190 degrees C).
- Whisk together the flour, salt, and pepper in a separate bowl. Remove the bacon from the egg mixture, and toss with the flour to coat. Line a baking sheet with aluminum foil.
- Fry the bacon strips 3 to 5 slices at a time until golden brown, about 4 minutes. Drain on a paper towel-lined plate. Once all of the bacon has cooked, place onto the prepared baking sheet, and bake in the preheated oven until crispy, about 7 minutes.

This is a fried rice recipe that I luckily created from practically threadbare cabinets one evening. It's the epitome of comfort food and is a breeze to make. The green beans really complement the flavors but feel free to use any veggie you have on hand. Enjoy!

- Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until just beginning to brown, about 7 minutes. Drain all but 1 to 2 teaspoons of bacon grease from the skillet. Add green beans, onion, and garlic; saute until bacon is crisp and green beans and onions are softened, about 3 minutes.
- Push bacon mixture to one side of the skillet; heat sesame oil on the empty side, about 30 seconds. Pour in egg; cook until just set, about 1 minute. Stir into bacon mixture to combine. Mix in rice. Stir in soy sauce, a tablespoon at a time, until rice is evenly coated. Cook until rice is heated through, 3 to 5 minutes.

- Heat a cast-iron or other heavy skillet over medium heat. When hot, add bacon strips in a single layer. Cook until browned on bottom, 3 to 4 minutes.
- Flip bacon, using tongs, and cook until browned on both sides, about 2 minutes.
- Drain and reserve fat for another use, and repeat with remaining bacon. Drain bacon on paper towels. Serve immediately.

- Use a 4 sided pan like a jelly roll pan.
- Line pan with tinfoil.
- Fold parchment paper to fit over tinfoil in pan. Must use parchment paper & line the pan for easy cleanup, important step!
- Set oven to 400*.
- After lining pan lay strips of bacon on parchment paper.
- Put in preheated 400* for 15 minutes, I turn bacon over after 10 minutes.
- Take out when crispy & lay on paper towels.
- When pan cools roll up tinfoil & parchment paper & throw away, no pan to wash!

- Heat oil in a frying pan over med-high heat.
- Whisk egg and milk together in a bowl.
- Place flour in another bowl - season it if you'd like (garlic, pepper, salt, lemon, cajun, etc.).
- Double dip - first in the egg mixture, then into the flour and repeat.
- Fry in oil until golden brown.
- Serve with cream gravy for dipping; also good served with steak.

- Place the bacon slices onto a large, cold saute pan on the stove. Turn heat to medium. Fry bacon for a few minutes on each side, until crispy.
- Remove bacon and set aside to drain on paper towels. Leave the bacon grease in the pan.
- Add 2 tbsp (30 mL) olive oil to the pan and swirl around. Add brussels sprouts. Season with sea salt and black pepper, and stir to distribute.
- Increase heat to medium-high. Arrange brussels sprouts in a single layer in the pan, with as many surfaces touching the pan as possible. Sear for about 3-4 minutes, without moving, until well browned on the bottom. Flip or stir, and repeat on the other side. Repeat as necessary to brown all sprouts.
- Meanwhile, chop the bacon while waiting for the sprouts to brown.
- Add balsamic vinegar and remaining 1 tbsp olive oil to the pan. Cover and cook for 2 to 3 more minutes.
- Return chopped bacon to the pan.

- Heat the oven to 350°F and line a rimmed baking sheet with parchment paper. Hold one end of the bacon with one hand and use your other hand to twist each strip of bacon tightly. Lay the twisted bacon down on the prepared baking sheet.

FRIED CABBAGE AND BACON
Steps:
- Heat vegetable oil in dutch oven or deep bottom skillet. Add bacon and cook until crispy. Remove bacon to a papertowel lined plate. Set aside. Remove all but 3 tablespoons of bacon grease from pot. Turn heat to low.
- Add mustard, chicken stock, salt and pepper, stirring to incorporate. Carefully add in cabbage and toss to coat with liquid. Continue to cook on low heat for approximately 15 minutes until cabbage is cooked but not mushy. Add bacon back to pot and gently stir into cabbage. Taste and adjust seasoning.
- Serve immediately. Can be stored in a sealed container in fridge for 2 days.
SERIOUSLY GOOD BACON FRIED CABBAGE
Bacon makes this simple fried cabbage crave-worthy. As the cabbage cooks in the pan, it wilts, turns tender, and becomes sweet. White cabbage is our favorite for this, but other cabbage varieties will work. Keep in mind, though, that Napa cabbage will release more moisture and won't brown as nicely in the pan. We love using peppered bacon for extra flavor, but your favorite type of bacon will also work.

- Add bacon, in one layer, to a large skillet over medium heat. Cook, stirring occasionally until the fat renders and the bacon is crispy; 6 to 8 minutes. Take the pan off of the heat, and then use a slotted spoon to transfer the bacon to a bowl and save for later.
- Remove all the bacon fat from the pan except for one tablespoon. (Leave more or less, depending on your preference. One tablespoon tastes great, but doesn't make the cabbage greasy.)
- Place the pan back onto medium-high heat then add the cabbage, garlic, red pepper flakes, and the salt. It might seem like too much cabbage for the pan, but as it cooks, the cabbage will wilt down.
- Cook, occasionally stirring until the cabbage is tender and some of the cabbage begins to turn light brown; 10 to 15 minutes. Stir in the mustard, apple cider vinegar, and the reserved cooked bacon. Taste then adjust with more salt, pepper, and vinegar as needed.
