Number Of Ingredients 10

1 lb tomatillos, husks removed and quartered
1 onion, peeled and coarsely cropped
2 cloves of garlic, crushed
2-3 hot peppers-- Hungarian, Serrano, Jalapeno, etc. Washed, stemmed and seeded, chopped
2-3 bell pepper peppers. Washed, stemmed and seeded, chopped
1 tsp cumin seeds or ground cumin
1 tsp salt
Other spices: garam masala, chili powder, cayenne to taste
Juice from two whole limes
1-2 lbs raw chicken breasts or small pork roast

Steps:

  • Add all of the ingredients (other than the meat) to your slow-cooker. No need to stir. If you're not adding meat, turn on high 4 hours. Serve as a taco filling, or mix with cooked sweet corn kernels as a thick soup.
  • If using chicken breasts, nestle those on top and turn it on to high for 5-6 hours. Remove the chicken and shred it, and either mix it back into the tomatillo mixture or serve separately, reducing the sauce for a while first.
  • If using pork, trim off any excess fat ribbons first and then salt and pepper and sear it over high heat in some oil, 4 minutes per side. Rest it on top of the other ingredients and turn the cooker on to high for 5-6 hours. Pork is done when it shreds easily. Same as with the chicken, remove it to shred and serve separately with the sauce on top (reduce the sauce for a few minutes first), or mix the shredded meat back into the pot and serve all together.

One of my most popular recipes and for good reason! This is the best chili I've ever tasted! Slow cooking it allows for the flavors to meld and the most tender beef. Try it tonight and see why everyone loves this! Recipe makes about 12 cups.

1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*
3 (8 oz) cans tomato sauce
1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)
Shredded cheddar cheese, (for serving)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

1 cup beef broth
1 cup tomatillo salsa
1 green pepper, large, diced and seeded
1 yellow onion, large, diced
3 garlic cloves, chopped
1 teaspoon cumin
1 teaspoon dried ancho chile powder
3/4 teaspoon salt
1 lb ground pork
1 lb ground beef
1 (15 1/2 ounce) can butter beans, drained and rinsed
1/4 cup fresh cilantro, chopped
optional- sliced scallion, lime wedges, and sour cream, for garnish*

Steps:

  • *I had a hard time finding ancho chile pwd so I just used regular chile pwd. Worked just fine.
  • * You can definately use less meat. I've used both the 2 lbs. and just 1 lb. before and it was still delicious!
  • Combine broth, salsa, green pepper, onion, garlic, cumin, chili powder, and salt, in base of slow cooker.
  • Crumble in pork and beef.
  • Mix.
  • Cover and cook on HIGH for 6 hours or LOW for 8 hours.
  • Break up meat with spoon
  • Stir in beans and cilantro.
  • Garnish with scallions, lime, and sour cream.

Hatch chiles and tomatillos take this white chili to another level. I like to make my own roasted salsa verde but you can always use jarred or canned. Cooked in the slow cooker for ease and convenience. Top with your choice of sliced avocados, shredded cheese, cilantro, or sour cream.

1 pound tomatillos, husked
½ onion, cut into 2 pieces
1 serrano pepper
2 cloves garlic, unpeeled
½ cup chopped fresh cilantro
1 teaspoon salt
4 cups chicken broth
2 (15 ounce) cans great Northern beans, drained
2 skinless, boneless chicken breast halves
2 teaspoons ground cumin
½ teaspoon salt, or to taste
4 Hatch chile peppers, halved and seeded
½ cup shredded jalapeno Jack cheese

Steps:

  • Place tomatillos, onion, serrano pepper, and garlic in a hot cast iron skillet and cook until blackened, turning frequently, 7 to 10 minutes. Peel garlic cloves and transfer to a blender. Add the blackened vegetables, cilantro, and salt; blend until smooth.
  • Place chicken broth, beans, chicken, cumin, and salt in a slow cooker. Pour in blended salsa. Cook on High until chicken is tender, 3 to 3 1/2 hours.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place Hatch peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
  • Remove 1 cup beans from the slow cooker; mash and stir back in. Remove chicken breasts and shred using 2 forks. Stir into the slow cooker. Peel broiled peppers and dice flesh into 1-inch pieces; add to the slow cooker. Sprinkle in Jack cheese.
  • Cook until chili is warmed through, about 30 minutes more.

My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

1 tablespoon onion powder
2 teaspoons minced garlic
1 (16 ounce) jar picante sauce (mild, medium or hot)

1 (1 1/4 ounce) packet taco seasoning (mild, medium or hot)
2 (15 ounce) cans chili beans, in sauce
1 (15 1/2 ounce) can dark red kidney beans, undrained

1 1/2 lbs tomatillos, husks removed
1/2 bunch cilantro, chopped
1 jalapeno, seeded and minced
2 medium poblano chiles, seeded and chopped
1 bell pepper, seeded and chopped
1 (15 ounce) can white beans, rinsed and drained
1/2 large onion, diced
2 teaspoons garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon cumin
1 teaspoon dried oregano

Steps:

  • Remove excess fat from the pork loin. Cut into 1" squares.
  • Wash and quarter tomatillos. Puree in blender with the cilantro and jalapeno.
  • Add all ingredients into a in a 4 quart crockpot. Stir well.
  • Cook on low 6-8 hours or on high 3-4 hours.
  • If a thicker sauce is desired, make a cornstarch slurry with 2 T. water and 2 t. cornstarch. Add 1/2 hour before serving. If a thinner sauce is desired, add chicken broth.

I really love this recipe. I make it all year round, Even the kids like it! Inspired by Country Living Magazine, January 2001. Pork tenderloin can be used as well. Be sure to top with chopped cilantro. It is great without BUT so much better with it!

2 tablespoons canola oil
2 lbs boneless skinless chicken thighs, trimmed, cut into bite size pieces
1 teaspoon sea salt
6 -8 large fresh tomatillos, husked remove, cored & quartered or 1 lb fresh tomatillo
1 large jalapeno, I use serano chili
2 (4 ounce) cans green chilies
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon ground coriander
2 (14 ounce) cans chicken broth
1 (12 ounce) can northern white beans, drained, rinsed
1/2 cup fresh cilantro, chopped
sharp cheddar cheese, shredded for topping (optional)

Steps:

  • Add oil to pot. Over medium heat, sauté chicken, season with salt, cook until no longer pink. About 3-4 minutes. Remove chicken from pot, set aside.
  • In the mean time, in a food processor, make a flavor paste. Combine tomatillos, green chilies and jalapeño and blend until thick & smooth. May need to make 2 batches.
  • Add more oil if desired, add onions and garlic, sauté until tender, about 5 minutes. Careful not to burn the garlic. Add chicken back to pot. Add cumin and coriander. Stir.
  • Add the flavor paste, green chilies, chicken broth and beans to the cooked chicken pieces.
  • Simmer for at least 45 minutes or until desired thickness is achieved. I prefer to simmer longer, for up to 2 hours.
  • Top with cilantro at serving.
  • Serve with warm torn flour tortillas or crispy tortilla chips.
