½ fresh pineapple - peeled, cored, and cut into chunks
2 cups pineapple juice
¼ teaspoon coconut extract
10 cubes ice

Steps:

In a blender, combine pineapple chunks, pineapple juice and coconut extract. Puree until smooth. Then, with the blender running, drop ice cubes one at a time into the opening in the lid of the blender. Make sure each cube is crushed before adding the next. Blend to desired texture. Serve in tall glasses.n

This 1 is truly Chef Kate recipe inspired. After having made her Natilla De Pina (Pineapple Custard) Recipe #170308 for the 2nd time at DH's request, I used my excess pineapple juice for this new effort & now I'm really hooked on both of them. Enjoy!

2 cups boiling water
3 tablespoons raw sugar

Steps:

Steep the tea in the boiling water for 10 minutes, with the sugar.
Remove bags.
Put in a pitcher.
Add the remaining ingredients.
Let chill in the fridge until cold.
Serve in frosted glasses!
