This hash brown casserole is similar to one served at a popular restaurant chain.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 8x12 inch baking dish.
- Over medium heat, cook the onion until soft.
- In a large bowl, combine the onion, potatoes, sour cream, soup, cheese, pepper and hot sauce. Mix well and pour into baking dish. Bake for 50 minutes.
- In a saute pan, heat butter or margarine and crackers. Cook until golden brown. Sprinkle over casserole and bake for 30 additional minutes.

- Preheat oven to 375°F
- Grease the bottom and sides of a 13" x 9" pan with vegetable oil.
- In a bowl, add hash browns and vegetable oil. Mix until potatoes are evenly coated. Press potatoes into bottom and up sides of pan. Put into center of oven and bake for 20-25 minutes or until browned. Remove from oven and set aside.
- In a mixing bowl, whisk together the eggs, milk, baking powder, salt and pepper. Add diced onion and mix. Pour egg mixture over pre-baked potatoes. Place two rows of sausage links on top egg mixture down the length of the pan. Cover and place in oven.
- Bake for 30-35 minutes or until center is firm. Remove from oven, uncover. Top with cheese and parsley. Return to oven uncovered and bake an additional 5-10 minutes or until cheese is melted.
- Remove from oven; allow to set 5-10 minutes before serving.

EASY WEEKEND BREAKFAST CASSEROLE
This came from a Bob Evans little grocery store cookbook - its quick to make unlike some casseroles takes minutes to cook up!

Steps:
- Preheat oven 425 F.
- Crumble and cook sausage* in skillet. Cook over medium heat til browned, stirring occasionally. (this can be done a day ahead and stored in a zip lock bag to make assembly faster the next day)
- Drain off sausage fat and drippings.
- Line bottom of greased 13 x 9 inch baking pan/dish with crescent roll dough, pinching together the perforated seams and pushing the dough so you get a nice seamless bottom that goes from edge to edge of the pan.
- Crumble sausage over dough, then sprinkle cheese over the sausage.
- Combine eggs, milk and salt and pepper and pour over sausage and cheese making sure the egg mixture gets even distributed.
- Bake 15 minutes or until set. Let stand 5 min before cutting into squares. Best served hot.
- *Experiment with precooked veggies or even ham whatever goes into an omelette will work in this recipe.

- Spread croutons on bottom of greased 13" x 9" baking dish.
- Crumble and cook sausage in medium skillet over medium heat until browned. Drain. Spread over croutons.
- Whisk eggs and milk in bowl until blended. Stir in soup, spinach, mushrooms, cheeses and mustard.
- Pour egg mixture over sausage and croutons.
- Refrigerate overnight.
- Preheat oven to 325°F Bake egg mixture 50-55 minutes or until set and lightly browned on top.

HASH BROWN CASSEROLE
I was going through recipes the other day and ran across this kindergarten cookbook 2001 my son's class made for their mama's for mother's day that year. I remember him telling me he had to take in a recipe of his favorite food... that was easy as he was a very finicky eater as a young boy. This recipe was given to me from a dear friend. And I was so grateful because my son loved this meal! I haven't made it in awhile, but I think it'll be on the menu this weekend. the recipe photo is that of his page from the recipe book. Oh, sweet memories! This can be a side, main, or breakfast dish!

- preheat oven to 350 degrees F. In a large skillet, brown sausage until cooked through. Break up the meat up as it cooks to be "crumbly." when done, drain and set aside.
- in a separate bowl, combine shredded potatoes, cheese, sour cream, French onion dip, onions, peppers, & salt and pepper. Mix well.
- spray a 10x13 casserole dish with cooking spray. Spread half the potato mixture on bottom of pan, top with half the sausage mixture on top. Repeat with remaining potatoes and top with sausage.
- Bake at 350 degrees F for one hour. This is great for a breakfast meal, church pot luck, family gathering, or as a holiday side dish! Enjoy!
