ROASTED FIGS AND GOAT CHEESE WITH ROSEMARY HONEY BALSAMIC DRESSING
There is NO better way to enjoy fresh figs than roasted, warm, straight out of the oven with melted goat cheese and a sweet, savory, and tangy dressing made from rosemary, honey, and balsamic vinegar spread over crostini. DELICIOUS!

Steps:
- Preheat oven to 450 degrees.
- In a small bowl, whisk together chopped rosemary (1 tablespoon), olive oil (2 tablespoons), balsamic vinegar (2 tablespoons), honey (1 tablespoon), and salt to taste.
- In a small baking dish, arrange figs cut side up.
- Crumble goat cheese on top of the figs (I usually use a fork or knife to get chunks off the goat cheese log right over the baking dish, since it's so soft and difficult to crumble).
- Drizzle the dressing evenly on top of the figs.
- Roast in oven for 15 minutes, or until figs have reached the desired tenderness/are starting to brown. (if they are taking a while to brown, you can finish them under the broiler).
- Serve figs and goat cheese on crostini drizzled with extra dressing from the bottom of the baking dish.

FIGS STUFFED WITH GOAT CHEESE
Here's a super-simple appetizer. Fresh figs are halved and stuffed with any creamy, flavorful cheese. A good blue works, but creamy goat cheese, drizzled with balsamic vinegar, is even more crowd-pleasing.

FIGS WITH HERBED GOAT CHEESE
I found this treasure in Better Homes & Gardens magazine. Fig season is short, making them a precious commodity. Goat cheese adds a little something to the already wonderful fig!

- Pancetta-and-Fig Pasta. This pasta dish uses heavy cream and Parmesan cheese for a cheesy, decadent dish. Bucatini is a hearty, hollow, spaghetti-like pasta.
- Fig and Lemon Refrigerator Jam. Prolong the short-lived fig season by using them to make "refrigerator jam," which requires no canning. This straightforward jam recipe is cooked directly on the stovetop and can stay in the refrigerator for up to three months.
- Fig-and-Bourbon Fizz. This bourbon beverage is worth the wait of two to seven days. Choose Black Mission figs or another purple-skinned variety to give the drink a pretty tint.
- Rosemary Flank Steak with Fig Salsa. Sweet figs provide a satisfying complement to the savory steak and Gorgonzola cheese. Use figs to create a fresh salsa to top this meat, or enjoy it on its own.
