Roasted Figs and Goat Cheese with Rosemary Honey Balsamic Dressing image

There is NO better way to enjoy fresh figs than roasted, warm, straight out of the oven with melted goat cheese and a sweet, savory, and tangy dressing made from rosemary, honey, and balsamic vinegar spread over crostini. DELICIOUS!

1/2 lb. fresh figs (about 8, stems removed and halved or quartered (depending on size))
3 oz. chevre (soft) goat cheese
1 tablespoon rosemary (chopped)
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
kosher salt (to taste)
16 crostini or crackers (for serving)

Steps:

  • Preheat oven to 450 degrees.
  • In a small bowl, whisk together chopped rosemary (1 tablespoon), olive oil (2 tablespoons), balsamic vinegar (2 tablespoons), honey (1 tablespoon), and salt to taste.
  • In a small baking dish, arrange figs cut side up.
  • Crumble goat cheese on top of the figs (I usually use a fork or knife to get chunks off the goat cheese log right over the baking dish, since it's so soft and difficult to crumble).
  • Drizzle the dressing evenly on top of the figs.
  • Roast in oven for 15 minutes, or until figs have reached the desired tenderness/are starting to brown. (if they are taking a while to brown, you can finish them under the broiler).
  • Serve figs and goat cheese on crostini drizzled with extra dressing from the bottom of the baking dish.

Here's a super-simple appetizer. Fresh figs are halved and stuffed with any creamy, flavorful cheese. A good blue works, but creamy goat cheese, drizzled with balsamic vinegar, is even more crowd-pleasing.

2 ounces, approximately, of soft, fresh goat cheese
1 tablespoon good balsamic vinegar
12 fresh figs, washed and drained

Steps:

  • Use your fingers to roll the goat cheese into 24 1/2 teaspoon-sized balls.
  • Cut figs in half. Press a cheese ball into the center of each fig. Plate them and drizzle with vinegar. Serve within an hour.

11 ounces soft mild goat cheese at room temperature (about 1 1/4 cups)
1/2 cup heavy cream
2 teaspoons finely chopped fresh rosemary leaves, or to taste
1 tablespoon honey
1 pound fresh figs

Steps:

  • In a bowl whisk together all ingredients except figs until smooth and season with salt and pepper. Rosemary goat cheese may be made 1 day ahead and chilled, covered. Bring goat cheese to cool room temperature before serving.
  • Mound goat cheese in center of a platter. Halve figs and arrange around goat cheese for dipping.

4 stalks fresh rosemary, about 6 inches long
4 large fresh figs, any variety, stems trimmed, halved lengthwise
1/8 cup liquid honey
1 tablespoon lemon juice, freshly squeezed
2 ounces goat cheese, crumbled

Steps:

  • Strip the leaves from the bottom of the rosemary stems, leaving about 1 1/2 inches of leaves at the tip.
  • Place the stems in a bowl and add cold water to cover; soak for at least 30 minutes.
  • Skewer fig halves crosswise on each rosemary stem.
  • Arrange the skewers on a plate with the cut sides of the figs facing up.
  • In a small bowl, mix together honey and lemon juice.
  • Brush the honey/lemon mixture over the cut side of the figs.
  • Preheat the broiler to high.
  • Broil the figs cut side up until they are lightly browned and softened, about 1 to 2 minutes.
  • Top with cheese and place back under broiler for 1 minute.
  • Serve on the skewers while still hot.

1 lb prepared pizza dough, room temperature (I used Pizza Dough Bread Machine for one pie)
1 tablespoon olive oil
1 small sweet onion, sliced
4 -6 fresh figs, cut in half
5 ounces goat cheese (if you can get goat cheese with cranberries it fabulous)
1 teaspoon chopped fresh rosemary
1/2 cup mozzarella cheese, shredded
olive oil
cornmeal

Steps:

  • In a pan saute onions in oil till a caramel color, set aside to cool completely.
  • Preheat oven to 450 degrees.
  • Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
  • Place on a pan that is dusted with corn meal.
  • Spread a thin coat of olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Place in oven and bake for 15-20 minutes.
  • ALTERNATE method:.
  • If grilling preheat grill to medium high.
  • Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
  • Flip and then lightly spread olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Cook a couple more minutes.

3 ounces soft fresh goat cheese
1 1/2 teaspoons snipped fresh chives
1 1/2 teaspoons snipped fresh parsley
1/2 teaspoon snipped fresh rosemary
salt and pepper
6 fresh figs (or apricots)
fresh rosemary sprig

Steps:

  • In a small bowl combine the goat cheese, chives, parsley,, snipped rosemary, salt, and pepper.
  • Cut the figs in half. If using apricots, cut in half; remove and discard pits. Top the fig halves with the herbed cheese. Cover and chill up to 1 hour before serving. Top the figs with rosemary sprigs. Enjoy!
  • Makes 6 servings.

25 g butter (I used a garlic infused one)
2 eggs (medium)
125 g flour
1 teaspoon baking powder
85 g yogurt (low-fat is fine)
1 tablespoon olive oil
1 sprig fresh rosemary, minced
2 tablespoons goat cheese, heaping (cream cheese)
1/8-1/4 teaspoon fresh ground black pepper (to taste)
2 tablespoons pistachios, chopped (preferrably roasted)

Steps:

  • In a big bowl cream butter and eggs until very creamy.
  • In another bowl combine flour and baking powder. Add to egg mixture alternating with yogurt. Add oil. Mix in well.
  • Stir in chopped rosemary and goats cheese. Season with pepper.
  • Fill into prepared muffin tins (I used silicone ones). Sprinkle with chopped pistachios.
  • Bake at 180°C/350°F in the preheated oven for 25 minutes or until toothpick inserted in the centre comes out clean.
  • Enjoy! :).
