4 tablespoons canola oil, divided
2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes, optional
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
1/2 medium sweet red pepper, julienned
1/2 medium green pepper, julienned
4 green onions, thinly sliced
1/2 cup chopped onion
6 flour tortillas (8 inches), warmed
Optional: Shredded cheddar cheese, taco sauce, salsa, guacamole, sliced red onions and sour cream

Steps:

  • In a large bowl, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Refrigerate for 1-4 hours. , In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm. , Drain chicken, discarding marinade. In the same skillet, cook chicken over medium-high heat until no longer pink, 5-6 minutes. Return pepper mixture to pan; heat through. , Spoon filling down the center of tortillas; fold in half. Serve with toppings as desired.

Chicken thighs are used in this recipe, but boneless, skinless breasts could be used instead. Be careful not to overcook, as the result could be rather dry chicken. Serve with warm flour tortillas, salsa and sour cream.

1 tablespoon Worcestershire sauce
1 tablespoon cider vinegar
1 tablespoon soy sauce
1 teaspoon chili powder
1 clove garlic, minced
1 dash hot pepper sauce
1 ½ pounds boneless, skinless chicken thighs, cut into strips
1 tablespoon vegetable oil
1 onion, thinly sliced
1 green bell pepper, sliced
½ lemon, juiced

Steps:

  • In a medium bowl, combine Worcestershire sauce, vinegar, soy sauce, chili powder, garlic and hot pepper sauce. Place chicken in sauce, and turn once to coat. Marinate for 30 minutes at room temperature, or cover and refrigerate for several hours.
  • Heat oil in a large skillet over high heat. Add chicken strips to the pan, and saute for 5 minutes. Add the onion and green pepper, and saute another 3 minutes. Remove from heat, and sprinkle with lemon juice.

guacamole, salsa, sour cream/Mexican crema, flour/corn fresh warm tortillas, pico de gallo
2 limes- juice and rind
2 teaspoons granulated sugar
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon ground cinnamon
1 teaspoon salt
3-4 medium skinless boneless chicken breasts
2 large onions sliced thinly
3 bell peppers(1 green, 1 yellow or orange, 1 red)
3 tablespoons vegetable oil

Steps:

  • Slice the chicken breasts into 3/4in(2cm) wide strips and place these in a large bowl.
  • Add the lime rind and juice, sugar, oregano, cayenne, cinnamon, and salt.
  • Mix thoroughly and set aside to marinate for at least 30 minutes.
  • Cut the onions in half and slice them thinly. Cut the peppers in half, remove the cores and seeds and slice them into 1/2 inch(1 cm) wide strips.
  • Heat the oil in a large frying pan. Stir fry the marinated chicken for 5-6 minutes. Add the peppers and onions and cook for 3-4 minutes more, until the chicken strips are cooked through and the vegetables are soft and tender but still juicy.
  • Spoon the chicken mixture into a serving bowl and take it to the table.
  • Serve with fresh warm corn/flour tortillas, guacamole, sour cream, crema, salsa, etc.

These authentic Mexican chicken fajitas (fajitas de pollo) are so easy, healthy, and loaded with flavour! Infused in a homemade fajita seasoning and quickly fried in a skillet, these traditional chicken fajitas are a delicious one pan restaurant-style dish that the whole family will love. Ready to serve in less than 30 minutes!{Gluten-free & dairy-free}

1 1/2 pounds boneless skinless chicken breasts ((about 3 large chicken breasts))
1 medium onion (thinly sliced)
Juice of one lime
3 large bell peppers (red, yellow and green, sliced)
3 tablespoons olive oil (divided)
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon cumin
1/2 teapoon dried oregano
1/2 teaspoon each salt and black pepper
8-10 small tortillas (corn or flour)
sour cream or Greek yogurt
fresh cilantro
other desired toppings

Steps:

  • In a large bowl, combine sliced chicken breast, one tablespoon olive oil, juice of half a lime and the fajita seasoning spices. Toss the chicken until it's evenly coated in the oil and spices. If you have the time, allow the chicken to marinate for at least 30 minutes.
  • When ready to cook, heat one tablespoon of olive oil over medium high in a large non-stick heavy bottomed or cast iron skillet. Add half of the chicken strips and cook until just cooked, about 3-5 minutes.
  • Remove from the pan and set aside. Repeat with remaining chicken. Set chicken aside in a bowl or on a plate.
  • Add the remaining tablespoon of oil to the pan. Add sliced onion and cook for 2 minutes. Add in sliced peppers and cook an additional 2-4 minutes or until they start to soften.
  • Add chicken back to the pan and toss to combine.
  • Squeeze additional lime juice over the mixture.
  • Serve warm over tortillas with desired toppings.

Making homemade fajita seasoning is a lot easier than you might think, and you probably already have the ingredients in your spice cabinet. Simply combine a mixture of chili powder, cumin, paprika, cayenne pepper, garlic powder, salt, and black pepper, and voila, you're ready to make fajitas. Brighten up this dish with a mixture of red, orange, yellow, and green peppers. Top with your favorite garnishes. We use sour cream, pico de gallo, and guacamole.

1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon garlic powder
1 ½ pounds skinless, boneless chicken breast, cut into strips
4 tablespoons olive oil, or more as needed
2 bell peppers, sliced
1 onion, thinly sliced
8 (6 inch) flour tortillas

Steps:

  • Whisk chili powder, paprika, salt, pepper, cayenne pepper, and garlic powder for fajita seasoning together in a small bowl.
  • Trim chicken of any excess fat and place in a large, lidded bowl. Add 2 tablespoons olive oil and sprinkle with about 3/4 of the fajita seasoning. Toss, adding more oil if necessary, until coated. Poke chicken with a knife to allow penetration of seasoning and oil. Place the lid on the bowl and shake until chicken is thoroughly coated. Marinate in the refrigerator, shaking every couple of hours, for 4 to 6 hours.
  • Remove the marinating bowl from the refrigerator and let sit on the counter until chicken is room temperature, about 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Preheat the oven to 350 degrees F (175 degrees C). Make 2 stacks of 4 tortillas, and wrap each one in aluminum foil.
  • Heat remaining 2 tablespoons olive oil in a large skillet over medium heat. Add peppers and onion. Stir in remaining fajita seasoning and cook, stirring occasionally, until vegetables are soft, 8 to 10 minutes.
  • While vegetables are cooking, place tortillas in the oven to warm. At the same time, grill chicken, turning halfway through, until no longer pink in the center and the juices run clear, 2 to 3 minutes per side.
  • To assemble fajitas, fill warmed tortillas with chicken, peppers, and onions.
