FRESH CRANBERRY SAUCE WITH MANDARIN ORANGES

Fresh Cranberry Sauce With Mandarin Oranges image

This is the quintessential cranberry sauce from the Ocean Spray package to which I add a can of Mandarin oranges---(I use unsweetened, especially if you use sugar---don't want to completely drown out the tart berries!) I also substitute Splenda or other sweetener for sugar.

CRANBERRY SAUCE WITH ORANGE AND CINNAMON

Cranberry Sauce with Orange and Cinnamon image

Blanching the chopped orange in boiling water before cooking it with the cranberries removes any bitterness from the peel and pith.

1 cup sugar
2 Tbsp. unsalted butter
1 (3"-long) cinnamon stick
1/2 tsp. ground allspice
Pinch of kosher salt

Steps:

  • Place orange in a large saucepan and pour in cold water to come 1" up sides of pan. Bring to a boil, then remove immediately from heat and drain orange in a mesh sieve or colander. Rinse under cold water; return to saucepan. Add cranberries, sugar, butter, cinnamon, allspice, and salt and bring to a boil, stirring to dissolve sugar. FRESH CRANBERRY SAUCE (RELISH)

Fresh Cranberry Sauce (Relish) image

This is a cranberry relish my Mom has made every Thanksgiving. I never liked any sort of cranberry sauce until I tried hers! Now it's a must-have and goes amazingly well with turkey! Feel free to play with the amount of sugar and orange juice for taste and consistency!

Provided by OtakuGirl

Categories     Oranges

Time 12m

Yield 3-5 cups, 12 serving(s)

Number Of Ingredients 5

1 (12 ounce) bag cranberries
2 granny smith apples, quartered
1 orange, peeled and separated
2 cups orange juice
1/2 cup sugar

Steps:

  • Place 1 cup (or about 1.5 handfuls) of cranberries, 1/4 apple, 1 orange wedge, 1 tablespoon of sugar and 1/4 cup orange juice into a blender.
  • Using the pulse method, begin to chop up ingredients. You may have to use a spoon or knife halfway through to get any stuck cranberries below the blades. Continue until contents are consistency of relish (smooth but not puree).
  • Remove contents into a bowl and repeat until all ingredients are used up.
  • For best taste, chill at least 4 hours prior.

FRESH CRANBERRY SAUCE

Fresh Cranberry Sauce image

A great side dish for Thanksgiving dinner. It can be used as filling for cranberry/cream cheese tarts and also makes a great topping on bagels, corn bread, or cheesecake. Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.

GRAND MARNIER CRANBERRY SAUCE WITH ORANGES

Grand Marnier Cranberry Sauce With Oranges image

This recipe is my family's favorite recipe for cranberry sauce. It appeared in a local newspaper about 10 years ago and I have made it every year since then. I always make two sauces if I'm having more than 8 guests - the other is usually Cranberry Sauce with Pears and Cardamom, which is very different from this sauce and gives people a choice of very different flavors and textures. I've always used Grand Marnier instead of the other choices of orange liqueur or orange juice concentrate, although when it comes to the fruit, I've used Minneola (aka Honeybell) or Orlando Tangeloes instead of Naval oranges. Hope you enjoy this recipe as much as we do!

Provided by KK7707

Categories     Berries

Time 30m

Yield 3 cups, 6-8 serving(s)

Number Of Ingredients 5

2 navel oranges
1 (12 ounce) bag cranberries
2 1/2 cups sugar
1 cup water
3 tablespoons orange liqueur or 3 tablespoons orange juice concentrate

Steps:

  • Grate 2 teaspoons zest from the oranges and set aside.
  • Using a sharp knife, cut away and discard the thick white pith from the oranges. Carefully cut between the membranes to release the orange sections. Set the orange sections in a colander to drain off the excess juice. (If you add the juice to the pan, it will be too watery.).
  • In a medium, heavy-bottomed, nonreactive saucepan, combine the cranberries, sugar, water and the zest. Bring to a boil over medium heat, stirring often to help dissolve the sugar. Reduce the heat to low and simmer until the sauce is thick and the cranberries have burst, 10 to 15 minutes.
  • During the last few minutes, stir in the orange sections.
  • Remove from the heat and stir in the Grand Marnier.
  • Cool completely.
  • The cranberry sauce can be prepared up to 1 week ahead, covered and refrigerated. Serve at room temperature or chilled.
