SEARED SIRLOIN WITH JAPANESE DIPS
This recipe is based on the southern Japanese dish tataki, which means 'hit into pieces'. Serve with our spicy soy dressing and wasabi-laced soured cream for an extra hit of heat

- Rub the beef generously with oil and season well. Heat a heavy frying pan and sear the beef on all sides for about 8 mins in total for very rare, 10 mins for rare and 12 mins for medium-rare. Remove from the pan and set aside.
- While the meat is resting, prepare the accompaniments. For the ponzu dipping sauce, mix all the ingredients together with a splash of water until the sugar has dissolved, then set aside. For the wasabi cream, stir the ingredients together until completely mixed, then set aside.
- After the beef has rested for 10 mins, use your sharpest knife to carve it into thin slices. Fan the slices out on a serving platter, scatter with the cucumber, then the cress, followed by the sesame seeds. Bring to the table with the two sauces and the ginger in small serving dishes for dipping and spreading over the beef slices. Serve with chopsticks and sticky rice on the side, if you like.

- Sprinkle beef with lemon pepper seasoning. In a small bowl, mix lemon peel, soy sauce and 1 tablespoon of the oil; brush over both sides of the beef.
- In a 10 inch nonstick skillet, heat remaining tablespoon oil over medium heat. Add beef; cook 10 to 12 minutes or until browned on both sides and desired doneness.

PAN SEARED STEAKS WITH BALSAMIC ONIONS
Balsamic vinegar helps to brown the onions and enhances the flavor of a quick pan sauce. This works best with steaks 1 - 1 1/4 inches thick. Cooking time given yields a medium rare steak. Recipe found in Cook's Country.

- Heat 2 tablespoons of the oil in a large heavy skillet over medium heat.
- Add onions & salt and cook, stirring often, until lightly browned, about 10 minutes. Transfer to a bowl. Wipe out skillet with paper towels.
- Add remaining oil to skillet & adjust flame to medium high.
- Pat steaks dry & add to oil. Leave them alone for for 4-5 minutes then flip & cook other side 3-4 minutes. Remove & wrap tightly in foil.
- Discard any remaining fat in skillet, return onions to pan & reduce temp to medium. Add garlic & cook 30 seconds.
- Add 1/2 cup vinegar, rosemary and brown sugar and cook, scraping up browned bits, until thick & syrupy, about 2 minutes.
- Unwrap steak & pour any accumulated juices in skillet along with remaining vinegar. Salt & pepper to taste.
- Slice steaks crosswise in 1/4 slices & serve topped with onions & sauce.

- Cook rice according to directions.
- Place butter and miso in a large bowl, stirring to combine. Sprinkle steak evenly with pepper and salt. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add steak to pan; cook 2 minutes on each side or until desired degree of doneness. Add steak to butter mixture; toss to coat. Sprinkle steak with green onions.
- Stir rice vinegar and oil into rice. Serve rice with steak mixture.

This recipe is from "Quick and Eay Low-Carb Cooking" by Nancy Hughes. It was emailed to me and sounded like something I would enjoy. As with most recipes, if I leave it sitting around it will forever be lost in a sea of papers.

- Over medium high heat, warm a nonstick skillet until it sizzles when water drops are dropped on it.
- Add the meat and cook for 4 minutes; turn and cook an additional 4 minutes or until beef is done.
- In a small bowl, combine the remaining ingredients; stir to blend and set aside.
- When the meat is done, place on cutting board and allow to rest while preparing the sauce.
- Add the sauce mixture to pan, bring to a boil over medium high heat and cook for 1 to 2 minutes, scraping bottom and sides of skillet to loosen any residue.
- Thinly slice the steak place on serving plate and top with sauce.
- Serve immediately.
