If you just went apple picking, here's the perfect recipe to enjoy the fruits of your labor. We've included two varieties of fresh apples, plus warm spices and tangy cider. The sweet, buttery crumble topping is flavored with brown sugar and studded with nutty pecans for the ultimate easy apple dessert.

Unsalted butter, for greasing the pan
3/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/4 cup apple cider
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
2 pounds Granny Smith apples
2 pounds Honeycrisp apples
1 1/2 cups all-purpose flour (see Cook's Note)
1 cup old-fashioned rolled oats
2/3 cup firmly packed light brown sugar
1/2 cup pecans, coarsely chopped
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cubed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.
  • Transfer the apple mixture to the prepared baking dish in an even layer.
  • For the topping: Combine the flour, oats, brown sugar, pecans, cinnamon and salt in a medium bowl. Add the butter cubes and use your fingers to completely work the butter into the flour mixture. The mixture should hold its shape when squeezed.
  • Sprinkle the crumble topping over the filling, squeezing some of the mixture into small clumps. Bake until the filling is bubbly, the apples are tender and the topping is golden brown, about 1 hour.
  • Let sit for at least 45 minutes and serve slightly warm or at room temperature.

1/4 cup orange juice
1 cup sugar
3/4 cup flour

4 cups apples
2/3-3/4 cup packed brown sugar (light)
1/2 cup flour
1/2 cup oats
3/4 teaspoon cinnamon
1/3 cup butter or 1/3 cup margarine
1/2 teaspoon cinnamon (for apples)
2 tablespoons sugar (for apples)

Steps:

  • The ingredients as listed should make enough to fill an 8x8 square baking dish. For a 13x9 baking dish, I usually quadruple the recipe.
  • For the apples, tart is usually better. Apples will cook down, so for 13x9, 2 bags of apples usually does the trick. This will vary on the size of bag, and size of apples.
  • Preheat oven to 375 degrees F.
  • Spray a 13x9 baking dish with nonstick cooking spray.
  • Peel and slice apples, put into large bowl.
  • Sprinkle an extra 1/2 teaspoon of cinnamon, and 2 tablespoons of sugar on top of apples. Mix cinnamon and sugar through apples (I use my hands for this).
  • Place apples into baking dish.
  • In medium to large bowl, combine brown sugar, flour, oats, butter and cinnamon. Use your hands, it works the best.
  • Place the mixture on top of the apples, packing it down lightly to prevent it from falling off.
  • Place baking dish on top of cookie sheet to prevent ooze from dripping down into oven.
  • Bake at 375 for approximately 30 minutes or until top is golden brown (time may vary depending on your oven).

Choose a variety of apples, then adjust the amounts of sugar and lemon juice to strike the right tangy balance for the filling. Or customize your crisp by using your favorite spices and nuts. The dessert tastes particularly comforting hot out of the oven, with the caramelized apple juices bubbling around the nutty cookie-like clusters, but it's just as good cold for breakfast the next day.

1/2 cup/71 grams all-purpose flour
3 tablespoons packed brown sugar
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1/4 teaspoon fine sea salt
6 tablespoons/84 grams cold unsalted butter, cut into 1/2-inch cubes
1 cup/116 grams chopped pecans or walnuts, or a combination
1/4 cup/28 grams old-fashioned rolled oats
1 to 4 tablespoons granulated sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1/4 teaspoon fine sea salt
3 pounds apples, preferably firm, with a mix of tart and sweet-tart (8 to 10 apples)
1 to 2 tablespoons fresh lemon juice

Steps:

  • Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
  • Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
  • If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
  • Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 dash salt
1 cup brown sugar
1 cup flour
1/2 cup butter, melted
cream (optional)
oatmeal (optional)

Steps:

  • Place apples in greased 12x7 inches baking dish. Sprinkle with the sugar, cinnamon, nutmeg, and salt.
  • In a separate bowl, combine brown sugar, flour, and butter (and a little oatmeal, optional). I added a little oatmeal, maybe 1/4 cup or less. Sprinkle over apple mixture.
  • Bake 350 for 40-45 minutes or until apples are tender. Serve warm or at room temp, with cream if desired.
