Fresh berry bruschetta is a simple dish that doesn't take much time AND everyone loves it. The cream cheese spread is the secret ingredient that makes this dish special.

6 slices French bread
1/2 cup raspberries
1/2 cup blackberries
1/4 cup blueberries
1/4 cup powdered sugar
4 oz cream cheese (softened)
1/2 teaspoon vanilla

Steps:

  • Beat softened cream cheese, powdered sugar, and vanilla together until smooth.
  • Lightly toast 6 slices of French bread.
  • Spread cream cheese mixture evenly on toast and top with a mix of berries. Top with additional powdered sugar.

10 slices French bread (1/2 inch thick)
Cooking spray
5 teaspoons sugar, divided
6 ounces fat-free cream cheese
1/2 teaspoon almond extract
3/4 cup fresh blackberries
3/4 cup fresh raspberries
1/4 cup slivered almonds, toasted
2 teaspoons confectioners' sugar

Steps:

  • Place bread on an ungreased baking sheet; lightly coat with cooking spray. Sprinkle with 2 teaspoons sugar. Broil 3-4 in. from the heat for 1-2 minutes or until lightly browned. , In a small bowl, combine the cream cheese, extract and remaining sugar. Spread over toasted bread. Top with berries and almonds; dust with confectioners' sugar. Serve immediately.

1 garlic clove, peeled and halved
14 slices French bread (3/4 inch thick)
4 medium tomatoes, seeded and diced
1/4 cup chopped red onion
2 tablespoons olive oil
1 tablespoon minced fresh basil
1/4 teaspoon salt
1/8 teaspoon pepper
14 fresh basil leaves

Steps:

  • Rub cut side of garlic over one side of each slice of bread. Place bread garlic side down on an ungreased baking sheet. Bake at 350° for 5 minutes on each side or until lightly browned. , In a large bowl, combine the tomatoes, onion, oil, minced basil, salt and pepper; spoon about 2 tablespoons onto each piece of toast. Top each with a basil leaf.
