When my sister Catherine made her apple cake for me, I knew I needed the recipe. When I made it, I added some pears from the trees on our acreage. The resulting apple pear cake is so moist and tastes so good. Now every time I make it, people want my recipe. -Mary Ann Lees, Centreville, Alabama

2 cups shredded peeled tart apples
2 cups shredded peeled pears
2 cups sugar
1-1/4 cups canola oil
1 cup raisins
1 cup chopped pecans
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
CREAM CHEESE FROSTING:
3 ounces cream cheese, softened
3 cups confectioners' sugar
1/4 cup butter, softened
2 tablespoons 2% milk
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture. , Pour into a greased 13x9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 1 hour. Cool on a wire rack. , For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and butter until smooth. Beat in the milk and vanilla; frost cake. Store in the refrigerator.

5 cups apples, peeled and cut into 1 in. pieces
1 tsp cinnamon
1/4 tsp. nutmeg
2 tbsp. sugar
2 tsp. vanilla
2 1/3 cups flour
1 1/4 cups sugar
1 tbsp. baking powder
3/4 tsp. salt
3/4 cup butter, melted

Steps:

  • Combine cinnamon, nutmeg, sugar and vanilla; add to apples and mix well. Spread into a greased 9x13 baking dish.
  • Using the same bowl, make the topping by combining the flour, sugar, baking powder and salt. Pour over top of the apple mixture and spread it out evenly.
  • Pour melted butter all over the top of the cake. Tilt the pan if necessary to get the butter to cover as much of the surface of the cake as possible.
  • Bake at 350° for 45 to 50 minutes until bubbly and lightly browned.
  • Eat warm or cold as is or serve with milk, whipped cream or ice cream.

This is the recipe that I like to use with the fresh pears that I get from my trees in late August. It's also lower in fat and cholesterol than most regular cakes.

4 cups peeled, cored and chopped pears
2 cups white sugar
3 cups sifted all-purpose flour
1 teaspoon salt
1 ½ teaspoons baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
½ teaspoon ground cloves
4 egg whites
⅔ cup canola oil
1 cup chopped pecans

Steps:

  • Combine the pears and the sugar and let stand for one hour.
  • Preheat oven to 325 degrees F (165 degrees C). Spray a 10 inch bundt pan with non-stick cooking spray.
  • Slightly beat the egg whites and combine them with the oil, chopped pecans and pear mixture.
  • Stir the flour, salt, baking soda, nutmeg, cinnamon and cloves. Stir in the pear mixture. Pour batter into the prepared bundt pan.
  • Bake at 325 degrees F (165 degrees C) for 1 hour and 10 minutes. Remove from oven ant let cool on a wire rack for 10 minutes before removing form pan.

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1-1/4 cups chopped peeled apples
1/2 cup chopped peeled pear
TOPPING:
1 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons cold butter
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream. Fold in apples and pear. Pour into a greased 13x9-in. baking dish., In a small bowl, combine brown sugar and cinnamon. Cut in butter until the mixture resembles coarse crumbs. Stir in pecans. Sprinkle over batter. , Bake until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool on a wire rack.

1 lb raisins
1 lb pecans, shelled (reserve 4 pecan halves)
4 oz pineapple

8 oz green cherries (reserve 4 cherries)
1 lb fruit cake mix
1/4 tsp allspice

Steps:

  • Sift flower and set aside Dredge fruits and nuts in a large bowl Cream sugar and the butter Beat eggs and add to cream mixture Add flour to cream mixture Mix fruits and nuts to cream mixture Grease pan heavily and cover bottom with greased brown paper Add mixed ingredients into pan. Add to the top of the cake the red & green cherries and the pecan halves for decorations Bake at 2500 for 1st hour covered with tin foil. Bake for approx 2 hours more without tin foil Place a small pan of cold water in the oven under the cake while baking.
