1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup shortening
¾ cup white sugar
2 eggs
1 cup rolled oats
1 cup diced apple without peel
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

1 1/2 cups all-purpose flour (200g)
1 teaspoon baking powder (3g)
1/2 teaspoon salt (3g)
1 1/2 teaspoons ground cinnamon (5g)
1 teaspoon ground cardamom (2g)
2 cups old fashioned rolled oats (185g)
1 cup pecan halves (110g), coarsely chopped (plus a few for topping cookies)
1 KORU Apple from Yes! Apples, peeled & diced (110g, roughly 1 cup)
3/4 cup (1 1/2 sticks) unsalted butter, room temp. (166g)
1 1/2 cups light brown sugar, packed (290g)
1 tsp. vanilla extract (3g)
1 large egg, room temp. (50g)

Steps:

  • In a medium-sized mixing bowl, whisk together your flour, baking powder, salt, cinnamon, and cardamom. Set aside. In a different medium-sized mixing bowl, toss together your rolled oats, chopped pecans, & diced apples. Set aside as well.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together your butter and light brown sugar on medium-high speed for about 1 minute, stopping to scrape the bowl halfway through. Then add your egg + vanilla extract and mix on medium speed for about 30 seconds until fully incorporated.
  • With the mixer on low, slowly add your flour mixture spoonfuls at a time until just combined and no flour streaks remain. Then take your bowl off of the stand mixer and fold in your oat/pecan/apple mixture with a spatula.
  • Cover the bowl with plastic wrap or lid if you have one and refrigerate for at least 1-2 hours (see notes below) or overnight. When the dough has about 15 minutes left to chill, preheat the oven to 375°F, positioning your racks on the upper and lower thirds of your oven. Prep two large baking sheets with parchment paper.
  • Scoop out 3 tablespoons of dough at a time and roll into balls in your hands. Place 8 on each baking sheet spaced a few inches apart. You may have a few balls of dough left, so just keep those in the fridge until you're ready to bake them.
  • Bake at 375°F for 15-17 minutes until the edges start to brown, rotating your baking sheets 180° and top to bottom halfway through. This ensures an even bake as the top of your oven is typically warmest.
  • Take them out of the oven and quickly (also gently) push one pecan half into the top of each. Let cool on the baking sheets for 10 minutes before transferring to separate racks to cool completely. Enjoy!

1 cup quick oats (not instant)

2 teaspoons grated lemons, zest of (from 1 medium lemon)
1 cup packed dark brown sugar
3/4 cup salted butter
1 large egg
1/2 cup unsweetened applesauce
1/2 cup honey
1 medium apple, peeled,cored and finely chopped (about 1 cup)
1 cup raisins (about 6 ounces)

Steps:

  • Preheat the oven to 300 degrees F.
  • In a bowl, combine the flour, oats, salt, baking soda, cinnamon, cloves and lemon zest.
  • Mix well with a wire whisk and then set it aside.
  • Cream the butter and sugar together in a large bowl with an electric mixer.
  • Add the egg, applesauce and honey, and beat at medium speed until smooth.
  • Add the flour mixture, fresh apple and raisings.
  • Blend at a low speed until just combined.
  • Don't overmix it, and don't worry, it's supposed to be a soft dough.
  • Drop the dough by rounded tablespoons on to ungreased cookie sheets (I like to cover the sheets in parchment paper).
  • The cookies should be spaced about 1 ½ inches apart.
  • Bake for 18-22 minutes, or until the bottoms are golden.

That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.

I had "inherited" bags and bags of apples and was trying to use them up and found this recipe in the August/September 2006 Taste of Home magazine that was chock full of other apple recipes. In the second batch, I added walnuts which were also a very nice addition. Even though the recipe calls for dried apples, don't let that make you hesitate in making these. I used chopped apples - 1 cup - and they were delicious! Also, be sure to flatten these a bit on the cookie sheet, they do not spread out while baking.
