2 Cups Flour
11/2 tsp. baking powder
1/4 tsp. salt
2 tsp. cinnamon
1 Cup maple syrup
1 tsp. vanilla extract
1 tsp. almond extract
2 eggs
1/2 cup melted coconut oil
2 Cups apples chopped fine
1/2 inch long piece of fresh ginger peeled and minced
1/2 Cup of walnuts- chopped fine

Steps:

  • Preheat Oven to 350 degrees F.
  • Whisk together flour, baking powder, salt, and cinnamon in a medium bowl.
  • Whisk together the sugar, eggs, oil, and extracts.
  • Add the apples, ginger and nuts to the wet ingredients and mix well.
  • Add in the flour mixture and mix until just combined.
  • Pour the batter into two oiled 9x4 loaf pans
  • Bake 45 minutes.
  • Cover with foil and bake an additional 15 minutes or until toothpick come out clean.
  • Cool in the loaf pans for 10 minutes before turning the loaves out on a cooling rack.

I was first introduced to this wonderful Apple Bread from a co-worker more than 20 years ago! I just recently begged her to bring me the recipe so I could make it. 1 cup sugar
1/2 cup shortening
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda

2 cups apples, chopped and pared (about 4 medium)
1/2 cup nuts, chopped
1 tablespoon sugar
1/4 teaspoon cinnamon

Steps:

  • Heat over to 350 and grease and flour loaf pan.
  • Cream together the 1 cup sugar, shortening, eggs and vanilla.
  • Stir in flour, baking powder, baking soda and salt until smooth.
  • Stir in apples and nuts and spread in pan.
  • Mix the 1 tablespoon sugar and cinnamon; sprinkle evenly over batter.
  • Bake until toothpick inserted in center comes out clean, about 50-60 minutes.
  • Immediately remove from pan; cool bread completely before slicing.
  • Store tightly covered. Makes 1 loaf.
  • Note: Unbleached flour can be used in this recipe; if using self-rising flour, omit baking powder, baking soda and salt.

1 cup plus 2 tablespoons sugar, divided
2 eggs
1/2 teaspoon vanilla extract

1 cup chopped nuts
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. 1/2 cup walnut halves (raw)
2 cups tart apples (cored, peeled, and 1/4-inch diced, such as Cortland or Granny Smith (about 2 medium))
1 1/2 cups whole wheat white flour (or whole wheat pastry flour)
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1/2 cup unsweetened applesauce
2 tablespoons canola oil (or light olive oil or melted, cooled coconut oil)
2 tablespoons milk (any kind you like (I used skim))
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 tablespoon sparkling sugar (or turbinado (coarse, raw) sugar)
1/4 teaspoon ground cinnamon

Steps:

  • Preheat your oven to 350 degrees F and lightly coat an 8x4-inch loaf pan with baking spray. Set aside.
  • Spread the walnuts in a single layer on an ungreased baking sheet. Place in the oven and bake until toasted and fragrant, about 8 to 12 minutes, stirring once throughout. DO NOT WALK AWAY during the last few minutes and set a timer. Nuts love to burn the very moment you stop watching. Transfer to a cutting board. Once cool enough to handle, roughly chop and set aside.
  • In a large mixing bowl, combine the white whole wheat flour, baking soda, cinnamon, and salt.
  • In a separate bowl, whisk together the applesauce, canola oil, milk, sugar, egg, and vanilla until smooth.
  • Make a well in the center of the dry ingredients, then add the wet ingredient all at once. Mix in by hand just until combined. The batter will look very thick and stiff.
  • Fold in the apples and walnuts. It will be hard to do because the batter is so thick. Use a rubber spatula and smush and push it around gently but firmly as needed. Distribute the apples and walnuts as evenly as you can.
  • Pour the batter into the prepared loaf pan. With the back of a rubber spatula, press and smooth the top so it is mostly flat. For the cinnamon sugar topping, stir the cinnamon and coarse sugar together in a small bowl. Sprinkle evenly over the top of the batter.
  • Bake for 25 minutes, loosely tent with foil, then bake for 20 additional minutes, until a toothpick inserted in the center comes out clean without any wet batter clinging to it.* Place on a wire rack and let cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely. Enjoy warm or at room temperature.

½ cup light brown sugar (packed)
1½ teaspoons ground cinnamon
2 large eggs
½ cup granulated sugar
½ cup (1 stick) unsalted butter, melted and slightly cooled
½ cup milk
2 teaspoons vanilla extract
1½ cups all-purpose flour, spooned into measuring cup and leveled-off
½ teaspoon salt
1½ teaspoons baking powder
1 cup peeled, cored, and finely diced tart baking apples, from 1 apple (preferably Granny Smith)

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Spray an 8.5 x 4.5-inch loaf pan lightly with nonstick cooking spray. Line the long side of the pan with a parchment paper "sling" and spray lightly with nonstick cooking spray again.
  • In a small bowl, mix the brown sugar and cinnamon until evenly combined. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, beat the eggs and granulated sugar on medium speed until pale and creamy, about 2 minutes.

Let the bread cool on a rack for about 30 minutes, then use the parchment sling to lift the bread out of the pan and onto the rack. Let cool completely before slicing, a few hours or overnight. 2 cups warm water (105° to 115°F)
½ cup granulated sugar, divided
2 large eggs
1 tablespoon kosher salt
1 tablespoon fresh lemon juice (from 1 lemon)
¼ cup plus 1 tablespoon vegetable oil, divided
6 cups to 6 ½ cups (about 25 ½ to 27 ounces) bread flour, divided
1 ½ tablespoons salted butter, melted
2 ½ cups peeled and chopped Granny Smith apples (about ¼-in. pieces) (from 2 [8 ounce] apples)
1 cup apple cider
½ cup firmly packed light brown sugar
4 tablespoons bread flour
2 teaspoons ground cinnamon

Steps:

  • Prepare the dough: Combine yeast, warm water, and 2 teaspoons of the sugar in the bowl of a stand mixer; let stand 5 minutes until yeast has started to bubble and foam. Add eggs, salt, lemon juice, ¼ cup of the oil, 3 cups of the bread flour, and remaining sugar to yeast mixture; beat on low speed, using the paddle attachment, until combined, about 30 seconds. Increase speed to medium; beat until dough is homogenous and almost smooth, about 1 minute. Microwave apples on HIGH (100%) power until softened, about 4 minutes. Drain and let cool to room temperature. Stir together brown sugar, flour, and cinnamon in a small bowl.
  • Punch dough down; turn out onto a lightly floured surface. Divide dough in half. Roll each dough half into an 18-by-9-inch rectangle. Sprinkle each rectangle with half the brown sugar mixture. Top each rectangle with half the cooled apples.
  • Starting at 1 short end, tightly roll up each rectangle, jelly-roll fashion, pressing to seal edges as you roll. Pinch ends of dough to seal, and tuck ends under dough. Place each dough roll, seam side down, in two 9-by-5-inch loaf pans, lightly greased with cooking spray. Brush tops with remaining tablespoon oil. Cover and let rise in a warm place (80°F), free from drafts, until doubled in bulk, 45 minutes to 1 hour.
  • Preheat oven to 375°F. Bake loaves in preheated oven until deep golden brown and sound hollow when tapped, 25 to 30 minutes. Transfer from pans to a wire rack, and brush with melted butter. Let cool completely, about 2 hours. Slice and serve.
