Fruity Apple Salad image

Green and red apples add a nice crunch to this pretty medley of blueberries, grapes, pineapple and mandarin oranges. The colorful salad is dressed in a refreshing lemon sauce.

1 large green apple, chopped
1 medium red apple, chopped
1/2 cup seedless red grapes, halved
1/2 cup green grapes, halved
1 can (8 ounces) unsweetened pineapple tidbits, drained
1/2 cup fresh or frozen blueberries
3/4 cup mandarin oranges
1/4 cup sugar
1/4 cup lemon juice
1/4 cup water

Steps:

  • In a serving bowl, combine the apples, grapes, pineapple, blueberries and oranges. In a small bowl, combine the sugar, lemon juice and water; stir until sugar is dissolved. Pour over fruit and toss gently. Serve with a slotted spoon.

2 (8 ounce) cans pineapple chunks
2 cups raisins

20 ounces sour cream

  • Combine the apples, undrained pineapple, raisins, pecans and sour cream. Mix well and add sugar to taste. Serve chilled.

1 (20 ounce) can unsweetened pineapple chunks
1/4 cup reduced fat margarine
2 tablespoons lemon juice
1 tablespoon cornstarch
2 tablespoons water
2 tablespoons sugar
3 cups chopped unpeeled red apples
2 cups green grapes
2 teaspoons poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple juice into a saucepan.
  • Add margarine and lemon juice; cook over medium heat until margarine is melted.
  • In a small bowl, combine cornstarch and water until smooth; stir into juice mixture.
  • Bring to a boil; boil and stir for 2 minutes.
  • Reduce heat; add sugar.
  • Cool to room temperature; about 30 minutes.
  • In a large bowl, combine pineapple, apples, grapes and poppy seeds.
  • Add the dressing; toss to coat.
  • Cover and chill for at least 1 hour.
  • Just before serving; gently toss in pecans.

Classic and timeless, Waldorf Salad is always a crowd favorite especially when apples are in season! It makes a great holiday side dish that your guests will devour thanks to a sweet and creamy dressing that coats a mixture of apples, grapes, celery, walnuts, and more!

3 tablespoons mayonnaise* (See Notes)
2 tablespoons plain Greek yogurt (or plain regular yogurt or sour cream)
2 teaspoons granulated sugar (or honey)
Lemon zest, optional
1 tablespoon lemon juice
1/2 teaspoon poppy seeds, optional
1 1/2 cups apples, cored and diced (don't peel)** (See Notes)
1 1/2 cup seedless grapes, halved*** (See Notes)
1 cup diced pineapple, optional (canned or fresh; drain juice well if using canned)
1 cup celery ribs, diced in thin 1/4-inch segments
1 cup walnuts, divided**** (See Notes)
Kosher salt, optional and to taste
1/4 cup fresh parsley, finely minced; optional
1 teaspoon lemon zest, optional and to taste for garnishing
Bibb lettuce (or butter lettuce), optional for serving

Steps:

  • To a medium bowl, add the mayo, Greek yogurt, sugar, lemon juice (make sure to zest the lemon before juicing it and reserve the zest if you're going to garnish your salad with the zest later), optional poppy seeds, and whisk to combine until smooth; set aside.
  • To a separate large bowl, add the apples, grapes, optional pineapple, celery, half the nuts, evenly drizzle the dressing over the top, and stir and toss to combine and coat evenly.
  • Taste and if desired, add salt, to taste. I recommend adding some to balance the sweetness in this salad.
  • Evenly sprinkle the remaining half of the nuts over the top.
  • Optionally and evenly sprinkle the parsley and optional lemon zest to garnish.
  • Optionally plate the salad in large leaves of Bibb lettuce (or butter lettuce will work) or simply serve family-style out of the mixing bowl, or plate on individual salad plates, minus the bed of lettuce underneath.

8 ounces pineapple chunks
1 chicken breast
1 garlic clove
1 ginger
1 teaspoon salt
1 teaspoon black pepper
1 large apple
1 -2 cup mayonnaise
8 ounces cream

Steps:

  • Boil 3 cups of water.
  • Slightly puch the ginger and garlic cloves with the flat side of the knife so that they appear squashed.
  • Add the chicken, garlic and ginger cloves, salt and pepper.
  • Let this boil for 20-25 minutes.
  • After the chicken is properly boiled, strain out the water (throw away the galic and ginger cloves). Keep chicken aside and let it cool.
  • Cut the apple into bite size and dry out the pineapple bits.
  • Get back to the chicken: cut the breast into small, bite sized pieces.
  • In a mixing bowl, add the apples,chicken and pineapple.
  • Add the mayonnaise and cream an mix well.
  • If it turns out a little stiff add just 1 tbsp of the pineapple water from the tin.
  • Decorate with pineapple or apple chunks and serve for a light and healthy lunch!

3 medium tart apples, unpeeled and diced
2 tablespoons lemon juice
1/4 cup chopped red onion
2 cups sliced celery
1 (20 ounce) can pineapple chunks, well drained
8 ounces sharp cheddar cheese, cut into small cubes
3/4 cup slivered almonds, toasted
1/2 cup reduced-fat sour cream
1/4-1/2 cup mayonnaise mayonnaise
salt and pepper, to taste

Steps:

  • Toss the diced apple with the 2 tbsp lemon juice and them place in a large mixing bowl.
  • Add the chopped red onion, sliced celery, well-drained pineapple chunks, diced cheese and toasted almonds to the mixing bowl.
  • In a seperate bowl, mix together the sour cream and mayonnaise (start with just 1/4 cup of mayo).
  • Add sour cream/mayo mixture to the salad and toss to evenly coat.
  • Add salt and pepper to taste and, if necessary, more mayonnaise.
  • Serve on lettuce leaves.
