CREAMY CHICKEN IN WHITE WINE SAUCE



Creamy Chicken in White Wine Sauce image

This creamy white wine chicken is incredibly easy to make on a weeknight but good enough for company! It's ready in only 30 minutes for an impressive yet simple meal.

2 large chicken breasts (cut in half lengthwise)
Salt & pepper (to taste)
1/4 teaspoon garlic powder
Flour (for dredging)
1 tablespoon olive oil
3 tablespoons butter (divided)
1/2 cup dry white wine
1/3 cup chicken broth
1 pinch Herbs de Provence ((or Italian seasoning))
1/2 cup heavy/whipping cream
Fresh chopped parsley, for serving (optional)

Steps:

  • Cut your chicken breasts in half lengthwise to make 4 thinner cutlets. Sprinkle them with salt and pepper and garlic powder, then dredge them in flour so they're nicely coated.
  • Add the olive oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once the pan is hot, add the chicken and cook for 4-5 minutes/side until golden. Take the chicken out of the pan and set aside (chicken shouldn't be fully cooked yet).
  • Add the wine and chicken broth to the pan and let it bubble for about a minute. Stir to scrape up any bits from the bottom of the pan.
  • Add the remaining butter and the Herbs de Provence to the pan, and continue simmering for another 2 minutes.
  • Add the cream and chicken back into the pan. Reduce the heat to medium and cook for another 5 minutes or until the chicken is cooked through and the sauce has thickened up a bit. Season with extra salt & pepper as needed and sprinkle with fresh parsley if using.

I have had chicken in white wine cream sauce at a local restaurant and found it was probably my favorite chicken dish. I have searched in vain for a recipe that would include all the ingredients I now only vaguely remember. So, in desperation, I found a basic recipe and have adapted it. I have made this a few times and found it very close to what I remember. The only missing ingredient is cheese. I have yet to remember what cheese was used (other than it was a white cheese). Eventually I will experiment with adding cheese, but for now I am really pleased with this version. I hope you like it too.

4 boneless skinless chicken breasts
2 tablespoons olive oil
1/2 cup onion, chopped
3 minced garlic cloves
5 -6 fresh mushrooms, sliced
1/4 cup butter
1/4 cup white wine
1 dash Worcestershire sauce
1 pint cream (heavy or light)
salt and pepper
1 teaspoon basil
1 teaspoon parsley

Steps:

  • Lightly brown both sides of chicken in olive oil.
  • Add onion, garlic, mushrooms, and butter and saute about 4-5 minutes until onions start to become translucent.
  • Add wine and Worcestershire sauce and cook an additional 2 minutes.
  • Lower heat and add cream, salt, pepper, basil, and parsley.
  • Too high of heat will cause the cream to curdle.
  • Simmer on low 20-25 minutes until done.

4 chicken breasts
1/2 tsp salt
1/2 tsp pepper
2 tsp vegetable oil
8 chestnut mushrooms (sliced)
1 small onion (peeled and chopped finely)
3 cloves garlic (peeled and minced)
¼ tsp dried thyme (or 2 sprigs fresh thyme)
120 ml (1/2 cup) white wine
120 ml (1/2 cup) chicken stock
180 ml (¾ cup) double (heavy) cream
fresh thyme

Steps:

  • Heat the oil on a large frying pan (skillet) over a medium/high heat.
  • Season both sides of the chicken breasts with the salt and pepper.
  • Add the chicken breasts to the pan and cook on both sides until golden (about 6-8 minutes). They don't need to be cooked through at this point - they'll continue cooking in the sauce.
  • Add the onion and mushrooms to the pan and cook for 3 minutes, until lightly softened.
  • Stir in the garlic and thyme and cook for the 30 seconds.
  • Add the wine and turn up the heat to high. Bring to the boil, then simmer until almost all of the liquid has evaporated (this will take about 5 minutes).
  • Stir in the stock and cream and heat through for 2-3 minutes.
  • Check the chicken is cooked by checking it's no longer pink in the middle, then turn off the heat and place the chicken breasts on 4 plates.
  • Spoon over the sauce and serve with your choice of sides (I love green beans and sauté potatoes with this dish). Sprinkle over the fresh thyme and serve.

1 skinless, boneless chicken breast half - pounded thin
1 tablespoon vegetable oil
¼ cup all-purpose flour

2 tablespoons butter, room temperature
2 ounces cooked angel hair pasta
