SLOW COOKED PAPRIKA BEEF (GOULASH)

This slow cooked beef dish using beef brisket is a one pot dish. A great Winter warming stew with the smokiness of paprika.

1 kg beef brisket joint (or similar stewing cut of beef)
1 tbsp smoked paprika
salt and black pepper
2 tbsp olive oil
3 large onions (quartered)
2 sticks celery (chopped)
2 large carrots (peeled and sliced)
1 red pepper (deseed and sliced into cubes)
4-6 cloves garlic (sliced)
1 bunch parsley (chopped)
1 glass red wine
250 ml tomato passata
1 tbsp worchester sauce
1 Knorr rich beef stock pot
1 tsp salt
1 tsp sugar

Steps:

  • Cut the brisket into large chunks and roll the pieces in the smoked paprika, salt and pepper, taking care to cover all sides. Cutting the brisket up allows for better coverage of spice into the meat. Heat the oil in a heavy based casserole and brown the meat on all sides, remove from the pan and set aside.
  • Put all the vegetables into the casserole and saute gently for 5 minutes, allowing the onions to soften a little but not colour. Pour the red wine over the vegetables and cook for 2 minutes to deglaze the pan and allow some of the alcohol to burn off.
  • Add the remaining ingredients to the pan stir to combine. Return the beef to the pan, along with any beef juices. Cover with a lid and cook in a low oven 150C/140CFan for approximately 4 hours or until the beef pulls apart. If the dish looks like it is drying out, add a little water to loosen the gravy as required.

This is a very rich and flavorful beef dish with a thick, red, smoky tasting sauce. Great for making a day ahead and reheating. Instead of noodles, you can serve over rice or potatoes.

1 tablespoon vegetable oil
3 onions, sliced
3 cloves garlic, chopped
¼ cup smoked Spanish paprika
2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper
3 pounds lean beef stew meat, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
1 ½ cups water
1 (6 ounce) can tomato paste
1 (10 ounce) package egg noodles
½ cup sour cream
8 sprigs fresh parsley

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook and stir onions until they soften and begin to brown at the edges, 8 to 10 minutes. Add the garlic and cook for one minute. Transfer mixture to a slow cooker. Cover and set cooker to Low.
  • Mix together paprika, salt, and pepper in a large bowl. Toss the meat cubes in the paprika mixture until evenly coated.
  • Heat one tablespoon of the oil in the skillet over medium-high heat. Put a third of the beef cubes into the skillet and cook until nicely browned on all sides. Transfer to the slow cooker. Pour 2 tablespoons of water into the skillet and scrape the browned bits from the pan; pour liquid into the slow cooker. This prevents the paprika from burning when you brown the next batches of beef. Add another tablespoon of oil to the skillet and cook the next batch the same way; repeat for the third batch.
  • Stir the tomato paste and the rest of the water into the slow cooker; cover. Cook on High for 4 to 5 hours (or on Low for 6 to 9 hours).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles, and cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain.
  • Serve goulash over noodles with a dollop of sour cream and a sprig of parsley.

1 medium onion, sliced
2 pounds cubed beef stew meat (about 1- to 1 1/2-inch pieces)
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper

2 red bell peppers, stemmed, seeded and coarsely chopped
2 cloves garlic, minced
1/2 cup low-sodium beef broth
2 tablespoons sweet paprika
2 tablespoons tomato paste
1 teaspoon caraway seeds, crushed
1/2 cup sour cream
1/4 cup freshly chopped dill and/or parsley
Hot boiled egg noodles or potatoes, for serving

Steps:

  • Spread the onions in the bottom of an 8-cup slow cooker. Toss the beef with the flour, 1 teaspoon salt and 1/4 teaspoon pepper and place on top of the onions. Top with the bell peppers and garlic. Stir together the broth, paprika, tomato paste and caraway and pour over the beef. Cover and cook until the meat is very tender, either on high for 4 to 5 hours or on low for 7 to 8 hours.
  • Uncover and let stand at least 10 minutes. Stir in the sour cream and dill and season to taste with salt and pepper. Serve over egg noodles or potatoes.

3 tbsp olive oil
2kg braising or stewing steak, cut into chunks
2 large onions, finely chopped
4 mixed peppers, cut into 4cm chunks
3 garlic cloves, crushed
2 tbsp flour
2 tsp caraway seeds
2 tsp hot smoked paprika
1 tbsp sweet smoked paprika, plus extra to serve
4 tbsp tomato purée
4 large tomatoes cut into small chunks
400-500ml beef stock
300ml soured cream
small bunch of parsley, chopped

Steps:

  • Heat the slow cooker to low and heat 2 tbsp oil in a deep frying pan over a medium heat. Season and sear the beef in batches until brown on all sides. Transfer to a plate.
  • Put the remaining oil in the pan and fry the onions for 10 mins until lightly golden. Add the peppers and garlic, and fry for another 5-10 mins, then stir in the flour and all of the spices. Cook for 2 mins more, then stir in the tomato purée, tomatoes and 400ml beef stock. Season well. Bring the mixture to a simmer, then tip into the slow cooker with the seared beef. Add the remaining stock, if needed, to cover the meat completely. Cover and cook for 6-7 hrs until the beef is tender and the sauce has thickened slightly.
  • Season to taste, then swirl the soured cream and most of the parsley through the stew. Scatter over the remaining parsley and some sweet smoked paprika, then serve with small roasted potatoes or brown rice, if you like.

1/2 teaspoon pepper
2 lbs stewing beef, cut in 1-inch cubes
2 tablespoons vegetable oil
2 onions, sliced lengthwise into eighths
2 garlic cloves, minced
3/4 cup red wine
1 cup chili sauce (bottled)
1 (798 ml) can diced tomatoes
1/4 cup paprika

Steps:

  • In a slow cooker, combine flour, salt and pepper.
  • Add beef and toss to coat. In a large skillet, heat 1 tablespoons of the oil over medium-high heat; brown seasoned meat in 4 batches, adding more oil as needed. Return to slow cooker.
  • Add remaining oil to skillet; cook onions and garlic for 1 minute. Add wine and bring to a boil, scraping up brown bits from bottom of pan.
  • Pour over beef, stir in chili sauce, tomatoes and paprika.
  • Cover and cook on high for 4-6 hours until meat is tender.
  • SMALL BATCH GOULASH: Prepare recipe as above, substituting1 can (340ml) seasoned tomatoes for the plain tomatoes, and reducing all ingredients by half. Cook on low for 5-6 hours or on high for 2-3 hours.

6 large yellow onions, halved and cut in 1/4 inch thick slices
3 tablespoons vegetable oil, divided
1 cup beef broth, divided
3 tablespoons flour
1 teaspoon caraway seed
3 tablespoons smoked paprika, divided
1 teaspoon kosher salt
2 1/2 lbs trimmed beef chuck, cut in chunks for stew
1 tablespoon dark brown sugar
1 tablespoon ketchup
1 tablespoon cider vinegar
1 tablespoon chopped fresh flat leaf parsley

Steps:

  • Preheat an oven to 375°F Toss onions with 1 tablespoon oil on a large rimmed baking sheet. Roast until lightly browned, about 45 minutes, tossing once halfway through. Remove from oven and pour 1/2 cup beef broth over the onions, scraping up any browned bits from the pan. Scrape into a slow cooker.
  • While onions roast, mix the flour, caraway seed, 1 tablespoon paprika, and salt in a bowl. Add beef and toss to coat. Pat off excess flour and reserve remaining flour mixture.
  • Heat 1 tablespoon oil in a large heavy skillet over medium high heat and brown beef on all sides in 2 batches. Add the remaining tablespoon oil for the second batch. Transfer the browned meat to the slow cooker.
  • Add the reserved flour to the pan, and cook, stirring, until lightly browned, about 4 minutes. Stir in remaining 1/2 c beef broth, the brown sugar, ketchup, vinegar, and 1 tablespoon of the remaining paprika. Bring to a boil and pour in slow cooker. Cover and cook 3 to 4 hours on high, or 6 to 8 hours on low, until onions are practically liquefied and beef is tender.
  • Stir in remaining paprika and the parsley and cook for 5 minutes. Serve over cooked egg noodles if desired.
