CARAMEL SAUCE:
1/2 cup packed brown sugar
2 tablespoons cornstarch
1/2 cup light corn syrup
1/4 cup half-and-half cream or evaporated milk
1/4 cup butter, cubed
1/4 teaspoon salt
1 large egg, lightly beaten

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, nutmeg and cinnamon; gradually add to creamed mixture and mix well. Stir in apples and walnuts. , Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Meanwhile, for caramel sauce, combine brown sugar and cornstarch in a saucepan. Add remaining ingredients. Bring to a boil; cook and stir until thickened, about 3 minutes. Serve cake warm or cold with warm caramel sauce.

¼ cup butter
2 large apples
2 eggs
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon baking soda

Steps:

  • Peel, core, and grate the apples.
  • Cream together 1 cup sugar and 1/4 cup butter or margarine. Stir in the grated apples and eggs. Sift together flour, salt, soda, nutmeg, and cinnamon; mix into the apple mixture. Pour batter into an ungreased 9 inch glass pie plate.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes. Remove from oven.

Steps:

  • 1. Preheat oven to 325 F. Grease a 10" tube pan, 2 loaf pans or a 13x9" cake pan.

  • Place the rack in the center of your oven. Preheat the oven to 325 degrees F. Line a 9x9-inch or 8x8-inch square baking pan with parchment paper so that it overhangs two of the sides like handles. Lightly coat the parchment with nonstick spray. Set aside. When it's done, place the pan on a wire rack and let cool completely before frosting.
  • To make the frosting: In a mixing bowl or a stand mixer fitted with the paddle attachment, beat the cream cheese, butter, and brown sugar at medium speed until creamy, about 1 to 2 minutes. Add the vanilla and salt and beat until blended. Reduce the mixer speed to low. Gradually add the powdered sugar, beating just until combined. Increase the mixer speed to high. Beat 1 additional minute or until smooth. Spread the frosting generously onto the cooled cake. Sprinkle the remaining walnuts over the top. Slice generously and serve.

3/4 cups Wesson oil
2 cups sugar
2 large eggs, (beaten)
3 teaspoons vanilla
3 cups flour
1 1/2 teaspoons baking soda

1 cup walnuts (coarsely chopped)
3 generous cups apples (coarsely chopped, fresh/unpeeled and uncooked )
Bundt or tube pan & wax paper

Steps:

  • Preheat the oven to 350 ° Fahrenheit.
  • In a large mixing bowl combine the first 4 ingredients. Stir by hand until smooth.
  • Sift together the soda, salt, and flour. Add the sifted mixture to the wet ingredients. The batter comes together more like a dough- stiff and dry in this step- than a regular cake batter. Beat by hand 200 strokes.
  • Fold in the nuts and apples. The apples should almost immediately start adding moisture to the dough, relaxing it and making it more "wet." However, the batter will still be thick and chunky.
  • Cut strips of wax paper and line the bottom of the tube pan.
  • Turn the cake batter into the tube pan.
  • Bake for one hour. Let cool on a wire rack. Use the wax paper to help lift the cake from the pan.

Steps:

  • IMPORTANT: Make sure all your ingredients are at room temp (see notes at the bottom of the recipe)
  • Preheat oven to 350 F (177 C)
  • Peel the apples and core them using an apple corer or a knife.
  • Cut the apples into 1/4 inch pieces and place into a bowl.
  • Squeeze 1/2 a lemon over the apples to prevent browning. Set aside
  • Sift together flour, baking soda, salt, ginger, nutmeg, cinnamon and cloves. Set aside.
  • Add butter to a stand mixer with the paddle attachment and cream until smooth.
  • Add sugar and oil to the butter and cream on medium until the mixture is white and fluffy.
  • Add egg and vanilla to the butter mixture and mix until combined.
  • While mixing on medium, add in dry ingredients in thirds and mix until combined
  • Fold in applesauce and chopped apples until combined
  • Grease three, 8 inch pans with cake goop or another type of pan release.
  • Bake layers at 350 for 30 minutes, or until a toothpick comes out clean. Layers will be thin.
  • Let cake rest in the pan until it's cool enough to touch, then flip out onto a wire rack.
  • Make sure to cool completely before stacking. (Wrap in plastic wrap and place in fridge or freezer to speed up the cooling process.)
  • Place softened butter in the bowl of your stand mixer with the whisk attachment and mix until smooth.
  • Add in your cream cheese and mix until smooth
  • Add in your browned butter and mix until smooth and creamy
  • Add in your powdered sugar one cup at a time while mixing on low until all the powdered sugar is added. Do not over-mix.
  • Add in your salt and vanilla until combined.
  • Place sugar and water in a medium-sized pot. Cover with the lid and bring to a boil on medium-high heat.
  • Remove lid and place a candy thermometer in the pot. Continue cooking the sugar until thermometer reads 350º (hard crack stage) or it's a deep golden brown color. Do not stir.
  • Remove the sugar from heat and slowly whisk in butter. Be careful, it will bubble up.
  • Whisk in cream and salt.
  • Let caramel cool completely before using it for the drip

2 teaspoons baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
4 large eggs
1 cup unsalted butter, melted and cooled ((2 standard sticks))
1 cup light brown sugar
½ cup granulated sugar
½ cup plain Greek yogurt
2 teaspoons vanilla extract
3 Honeycrisp apples, peeled and diced ((see note))
½ cup chopped pecans ((optional))
Butter for pan
6 tablespoons unsalted butter
1 cup light brown sugar
½ teaspoon salt
3 to 4 tablespoons heavy cream

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13 baking pan with butter. Set aside.
  • Combine the dry ingredients: In a large bowl, whisk the flour, baking powder, salt, and ground cinnamon until evenly combined. Set aside.
  • Combine the wet ingredients and sugars: In another large bowl, mix the eggs, butter (melted and cooled), brown sugar, granulated sugar, Greek yogurt, and vanilla extract.
  • Combine the dry ingredients with the wet ingredients using a rubber spatula. Do not overmix. Then, fold in the diced apples and the chopped pecans. The batter will be thick.
  • Pour the batter over the greased pan, and smooth the top over. Bake for 50 minutes or until a cake tester or toothpick inserted inside comes out clean. Cover loosely with foil if it starts to brown too quickly. Mine took 50 minutes.
  • Meanwhile, make the caramel sauce: Melt all the ingredients in a saucepan over medium heat, and simmer for 3 to 5 minutes until thickened. Transfer to a bowl to cool slightly.
  • Remove the cake from oven and let it cool for 30 minutes. To serve, drizzle the top with warm caramel. Enjoy!

1 1/2 cups vegetable oil
2 cups sugar
3 cups all purpose flour ((Divide flour into 2 3/4 cups + 1/4 cup))
3 eggs
1 1/2 tsp baking soda
1/2 tsp salt
1 cup chopped pecans (optional)
1 tsp vanilla
4 apples (I use Red Delicious) (peeled and chopped)
Crisco and about 1/4 cup powdered sugar for greasing and dusting the pan

Steps:

  • Preheat oven to 300 F
  • Using a stand mixer, combine vegetable oil and sugar.
  • Add eggs one at a time and beat well.
  • In a separate bowl, mix pecans and 1/4 cup flour
  • In a separate large bowl, combine 2 3/4 cups flour, baking soda and salt and gradually add into the sugar mixture
  • Add floured pecans and vanilla
  • Fold in apples
  • Thoroughly grease a tube pan with crisco and "flour" the pan with powdered sugar. This creates an AMAZING crust, so don't skip this part!
  • Pour batter into greased pan and bake for 1 hr and 20 minutes
  • Test for doneness before removing from oven

1/2 teaspoon baking soda
1/4 teaspoon salt
150 grams (3/4 cup) caster sugar or granulated sugar
1 cup (approximately 1 large) red apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) Greek yogurt
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted
30 grams (1/4 cup) icing sugar or powdered sugar, sifted
1-2 tablespoons milk

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
  • In a separate bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.
  • Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined - but be careful not to over mix. Spoon batter into prepared tin.
  • To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over cake batter.
  • Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
  • To make the glaze, mix together sugar and 1 tablespoon of milk. Stir until smooth. If the glaze is too thick, add an extra tablespoon of milk. Drizzle glaze all over the cake.

Steps:

  • Preheat oven to 350 degrees F.

  • Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.
