Number Of Ingredients 11

6 large eggs
1/2 cup half-and-half
1 tablespoon pure vanilla extract
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 1/2 cups panko
1 1/2 cups sweetened corn and oat cereal (such as Cap'n Crunch), crushed into fine crumbs
2 tablespoons salted butter, melted
12 slices Texas toast or other thick bread slices, each cut into 3 strips
Confectioners' sugar, for serving
Warm maple syrup, for serving

Steps:

  • Preheat the oven to 425˚ F. Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Whisk lightly until combined; set aside.
  • In a separate pie plate, stir together the panko, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist.
  • One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning to coat; sprinkle and press the crumbs so they totally cover the bread. Place the bread strips on a rack set on a baking sheet.
  • Bake the French toast sticks until golden around the edges and the crumbs are crisp, 15 to 20 minutes. Sprinkle with confectioners' sugar and serve with maple syrup.

1 teaspoon brown sugar

8 slices white bread, each cut into 4 strips
3 tablespoons butter

Steps:

  • In a shallow dish, beat together the eggs, sugar, milk, maple syrup, brown sugar, cinnamon, and nutmeg with a fork until well blended.
  • Dip each bread strip into the egg mixture, coating completely.
  • In a large skillet, melt 1 tablespoon butter over medium heat.
  • Cook the bread strips a few at a time for 2 to 3 minutes per side, or until golden, adding more butter as needed.
  • Serve immediately or cool completely, flash freeze on cookie sheet, then store in a labeled freezer bag.
  • To serve: reheat in the oven, toaster oven, or microwave until heated through.

Powdered sugar, for serving
Warm pancake syrup, for serving
Raspberries and blueberries, for serving

Steps:

  • Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup of the granulated sugar and 1/2 teaspoon of the cinnamon. Whisk lightly until combined; set aside.
  • In a separate pie plate, stir together the panko breadcrumbs, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist. Crack up at the madness that is in this dish, then set it aside.
  • One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning them over, sprinkling and pressing so the crumbs totally cover the surface. Place the sticks on a rack set in a baking sheet. Flash-freeze for 30 minutes to set the surface.
  • Transfer the sticks to zipper bags for storage in the freezer. I do smaller bags of 6 to 8 sticks each, but you can do larger batches if you prefer!
  • To bake them from frozen state, preheat the oven to 425 degrees F. Line a pan with frozen sticks and bake until golden brown around the edges, 15 to 18 minutes. Sprinkle with powdered sugar. Serve with warm pancake syrup for dipping and fruit to make you feel good about life!

CINNAMON FRENCH TOAST STICKS

4 thick slices white bread, preferably stale ((Note 1))
2 eggs
1/4 cup milk
Salt
1/3 cup white sugar
1 tsp cinnamon powder
3 tbsp butter
Maple syrup to serve ((optional))

Steps:

  • Remove crust of each slice, then cut each into 3 equal thick batons.
  • Combine the eggs, milk and a pinch of salt in a bowl large enough to roll the bread sticks in.
  • Combine the cinnamon and sugar on a plate.
  • Melt 2 tbsp of the butter in a large pan over medium high heat.
  • Roll the sticks in the egg mixture quickly (do not soak them), shake off excess and place in pan. Cook in 2 batches.
  • Turn to cook each side until golden.
  • Immediately transfer to the plate with the cinnamon sugar and roll to coat. It's important to do this quickly while they are hot straight out of the pan so it sticks.
  • Melt remaining butter and cook the remaining french toast sticks.
  • Serve immediately with maple syrup to dunk the sticks in.

I got this basic recipe from another site but changed it a little for my family. The original recipe called for orange juice as the liquid instead of milk. I also added the vanilla as we think it gives it a nice flavor.

8 slices bread (Texas Toast style or French)
1/4 cup melted butter
4 eggs
1/3 cup sugar
1/4 teaspoon cinnamon
2/3 cup milk
3/4 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cut each slice of bread into 3 pieces to make sticks. Texas Toast is a very thick sliced bread about 3/4" thick. You could substitute french bread if Texas toast is not available.
  • In a bowl, mix together melted butter, eggs, sugar, cinnamon, vanilla and milk. Beat well.
  • Dip sticks into egg mixture and place on a cookie sheet that has been sprayed with cooking spray.
  • If there is any dip left, you can drizzle it over the sticks.
  • Bake for 25 minutes on middle rack of oven. Turn halfway through baking time.
  • Allow to cool.
  • Flash freeze on cookie sheet, remove and place in a ziploc bag.
  • To reheat: place 3 sticks on a microwave-safe plate and heat on high for 1 minute until warm. Serve with syrup.

This recipe is originally from Fix, Freeze Feast although it may have been altered slightly. I usually make 6 at a time and freeze for my OAMC club. Perfect for brunch with maple syrup. I usually serve with a quiche for a complete meal. I sometimes use less cream cheese depending on who's going to be eating it. You can substitute 1 cup fresh blueberries for the pie filling but recipe won't be as moist. Recipe may be doubled and prepared in a 9x12 pan if desired.

6 slices French bread, cubed
8 ounces cream cheese, cut into 1-inch cubes
1 (21 ounce) can blueberry pie filling
6 eggs
1 cup milk
1/4 cup maple syrup
1/2 teaspoon cinnamon

Steps:

  • Spray an 8x8 deep pan with non stick spray.
  • Place half the bread cubes in the bottom of pan.
  • Dot bread with cubes of cream cheese.
  • Spread pie filling over bread and cream cheese.

1 cup 2% milk
