- For the Caramelized Onions: In a large skillet, melt butter over medium heat, then add onions, sugar, and 1 teaspoon salt. Cover and cook, stirring every few minutes, until onions have softened, about 10 minutes. Remove lid and cook, stirring frequently and keeping skillet uncovered, until onions are deep golden brown, 20 to 25 minutes; if onions threaten to burn at any point, stir in a tablespoon or two of water as needed, and/or lower heat. Add garlic and thyme and cook 1 minute longer. Add sherry and wine and cook until liquid has almost completely evaporated, about 3 minutes. Remove from heat and set aside.
- Meanwhile, for the Strata: Preheat oven to 350°F (177°C). Spread bread in a single layer on a baking sheet. Bake until bread is dry but not browned, about 8 minutes.
- In a large bowl, whisk together eggs, half and half or milk, mustard, Worcestershire sauce, fish sauce (if using), 1/2 teaspoon salt, and pepper. Add dried bread and let soak in custard for at least 15 minutes and up to 30 minutes.
- Butter a 12-inch cast iron skillet or a 9- by 13-inch baking dish and add half of bread. Scatter half of caramelized onions and half of cheese all over. Layer remaining bread on top and scatter remaining onions and cheese over. Drizzle any remaining custard all over, then bake until bread is crisp and custard is just set, about 35 minutes. Serve hot or at room temperature.

- Butter a 9-by-13-inch baking dish.
- Heat the olive oil in a large skillet over medium high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon. Add the onion to the skillet and cook over medium heat, stirring occasionally, until very soft and golden, 20 to 25 minutes. Increase the heat to medium-high and cook, stirring often until golden brown, about 6 minutes more. Set aside.
- Whisk the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Muenster cheese, followed by the sausage-onion mixture. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Muenster cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

- Rub a small splash of olive oil across an 8-inch baking dish, or equivalent.
- In a medium bowl, whisk together the oil, onion dip mix, and milk. Add the eggs and whisk well again. Arrange the bread cubes in the prepared baking dish in an even layer. Very slowly, drizzle the liquid mixture over the bread and sprinkle with the cheese. Cover the dish and refrigerate overnight.
- When you are ready to bake, preheat the oven to 350°F and place a rack in the center. Bake the strata, uncovered, for 45 to 55 minutes, until the egg is set and puffy and the edges are golden brown. (Cut into it to be sure it is well cooked.)

- Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
- In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
- Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
- Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
- Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
- Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!

- The NIGHT BEFORE:.
- In large skillet, cook bacon until crisp.
- Drain off excess bacon fat, but keep a little in skillet in order to cook onion.
- Add onion, ham and chopped bacon to skillet and cook until onion is tender and transparent.
- Butter a large baking dish - I used a glass lasagna dish.
- Layer the bread to cover bottom of dish - will use probably 5-6 slices or half the amount of bread cubed.
- Add half of potatoes and cheese.
- Top with bacon, onion and ham mixture.
- Add remaining pieces of bread, potatoes and cheese.
- In large bowl, beat eggs, milk, Worcestershire sauce, mustard, salt and pepper.

- The NEXT MORNING:.

- Preheat oven 425F. Grease or oil down a casserole dish. 9×3 or 8×10 work.
- Slice your french bread down the middle lengthwise (long) so that it makes 4 half loaves. Like a sandwich
- Spread the garlic and butter evenly on all four slices.
- Place bread slices lined up with each other in the casserole dish.
- Next prepare you egg batter. Whisk together the egg, milk, egg white, salt, pepper, and parmesan. Set aside.
- Sprinkle your ham, celery, and onion evenly over the gluten free french bread.
- If you are making this ahead, see notes before pouring batter
- If you are making all at once, then you will pour the egg parmesan batter evenly over the bread, veggies, and ham. Don't worry, you will have some bread crust ends sticking out above the batter if you have a smaller dish.
- Spread the feta crumbles on top and any extra parmesan you'd like to make more cheesy.
- Place in oven for 25-30 minutes or until bread is crusty/golden brown and eggs are cooked. Baking times will vary depending on the thickness of you french bread and your oven. Check at 25 minutes to be safe.
- Once you know it's cooked, remove from oven.
- Garnish with red pepper flakes and fresh herbs before serving.
- Salt/pepper to taste.

HOW TO MAKE A STRATA

- Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1-2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. - Cut the stale bread in cubes and place it on the baking dish.
- Add shredded cheese, but keep a handful of cheese to sprinkle on top of the dish before you bake it.
- Add meat and vegetables.
- Separately, beat the eggs and add milk or sour cream(according to your preference). Add salt and pepper to your taste.
- Mix well and pour over the bread.
- Sprinkle the rest of the cheese over the top and cover with foil.

- Preheat oven to 350. Grease a 9x13 casserole dish
