- In a large cast-iron or other ovenproof skillet, saute onions in 3 tablespoons butter until tender. Stir in flour and pepper until blended; gradually add broth and sherry. Bring to a boil; cook and stir until thickened, about 2 minutes., In a microwave, melt remaining butter. Add croutons; toss to coat. Spoon over onion mixture. - In a large pot over medium high heat, saute the onions in the butter or margarine for about 5 minutes, or until tender. Add the consomme, broth, water and wine. Reduce heat to low and simmer for 45 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- In individual oven-proof bowls, break up Swiss cheese slices and place one slice in the bottom of each bowl. Place one slice of bread on each slice of cheese. Ladle in the soup, place another slice of bread on top and cover with more Swiss cheese. Put bowls in the oven and allow cheese to melt on top.

- Melt butter in a large soup pot over medium heat. Cook and stir onions, garlic, salt, black pepper, and thyme until onions are soft and brown, about 30 minutes. Pour in red wine and sherry; bring to a boil. Reduce heat to low and simmer until you can no longer smell alcohol cooking off, about 15 more minutes.
- Sprinkle onion mixture with flour and stir until coated; cook for 10 minutes. Pour in broth, stir to blend in flour, and simmer until slightly thickened, about 20 minutes.

- Sice the onions crosswise, cut each slice in half.
- Melt the butter in a frypan, cook the onions and the mushrooms until tender.
- Spoon the mixture into a lightly greased baking dish.
- Sprinkle with 1 cup Swiss cheese.
- In a bowl, combine the soup, evaporated milk Parmesan cheese (if using) and soy sauce; pour the mixture over the cheese.

- Blend in flour, salt, and pepper.
- Add bouillon and sherry.
- Cook and stir until thickened and bubbly.
- Turn into 1 quart casserole.

BEAUTIFUL BAKED FRENCH ONION AND MUSHROOM SOUP
This recipe takes some time to make but it needs very little attention. You can work on the main meal while this is cooking. Breaking into the cheesy crust on top is a unique way to present this soup to your guests.

- Cut onions in half lengthwise and thinly slice into half moon shapes.
- Pour olive oil into a large pot and heat to one notch over low. Add onions and sprinkle them with salt. Cover and let onions sweat for 15 minutes. Give onions a quick stir, cover and let sweat for another 15 minutes.
- While onions are cooking, thinly slice your mushrooms, mince your garlic and preheat oven to 375°F.
- Get 4 ovenproof bowls and place face-down on the pie crust. Cut 4 large circles out of pie crust, about 1" bigger than the size of your bowl. They do NOT have to be perfect circles - they look more rustic if the edges are jagged.
- When onions are done sweating, uncover, turn heat to medium and brown slightly while stirring frequently for about 10 minutes. Add mushrooms, garlic, sherry, balsamic vinegar, Worcestershire sauce, beef broth, bay leaf, and black pepper. Bring to a boil, turn down to simmer for ½ hour or more.
- Remove bay leaf. Pour soup evenly into bowls and cover each bowl with a crust. The crust should not be touching the soup. Poke 1 small hole in the middle of each crust. Bake for 12 minutes. Crust should be just golden.
- Remove, and sprinkle each bowl evenly with Swiss cheese. Put back in the oven for about 3 minutes, until cheese has just melted.
- Serve immediately and let your guests cut into the crunchy crust with their spoons and the cheese will melt into the soup.

- Add the onion and cook stirring occasionally (do not burn) until tender and a golden brown (approx 15-20 minutes).
- Stir rosemary, salt and pepper into the onions and remove from heat.
- Preheat oven to 375 degrees F.
- Lightly butter one side of each slice of french bread.
- Place the bread, butter side down, on a baking sheet.

- Slice onions into rings and separate them.

- Heat 2 tablespoons butter and olive oil in a large skillet over medium heat. Add onions and cook, stirring constantly, for 1 minute. Reduce heat to medium-low and cook, stirring occasionally, until golden brown, about 40 minutes.

- In a large skillet, saute onions in butter until softened. Reduce heat to medium-low; cook for 30 minutes or until deep golden brown, stirring occasionally.
