FRENCH CABBAGE SOUP
My cousin gave me a cookbook with some French recipes in it for Christmas one year. This recipe was in it and has been a hit with my family ever since. We even sold it to the pool hall for their daily soup special and it was a hit with the general public too. I like a piece of warm french bread served with it.

Steps:
- Chop up all vegetables.
- Place butter in soup pot over medium heat.
- Once melted, add the cabbage, leeks, carrot, turnip, onion, celery and garlic.
- Stir occasionally until the vegetables are tender, but not browned.
- Peel potatoes and cut into large pieces.
- Add potatoes and drained beans to pot.
- Add the water and broth.
- Season to taste with salt & pepper.
- Simmer for 1 hour.
- Cut smoked sausage into small pieces and fry until browned.
- To serve, place a few pieces of sausage in the bottom of your soup bowl and ladle the soup over them.

- Cut the cabbage and carrots finely in strips.
- Heat the chicken broth in a large casserole.
- Add the cabbage and carrots.
- Let boil 20 to 25 minutes.
- You can add seasonning to your own taste.
- I tried with red cabbage and I won't do it again cause the color is not inviting.

CORNED BEEF AND CABBAGE SOUP
A delightful St. Patrick's day dish. Very filling and easy to make. I like the red-skinned potatoes because of the coloring it adds. Remember, times are approximate. Adjust to your own style.

Steps:
- Cut up potatoes and place in a large pot. Fill with water and boil potatoes until skin starts to fall off (aproximately 1 hour).
- Wash cabbage head and cut into desired size (I like to cut the cabbage into quarters, then slice into strips).
- Add cabbage to pot. Boil for 10 minutes or so until cabbage is tender.
- Add can of corned beef, breaking up chunks with ladle.
- Add butter, salt, pepper, and other spices to taste. Let boil for about 20 minutes, then serve.

- Heat the oil in a large saucepan over medium heat.
- Add in the onion, carrot, and garlic; cover and cook 5 minutes or until softened.
- Transfer the cooked vegetables into a 6-quart slow cooker.
- Add in the cabbage, potato, beans, stock, and thyme; season to taste with salt and pepper.
- Cover and cook on LOW for 8 hours.
- Just before serving, stir in the liquid smoke (if using), and parsley; taste to adjust seasonings.

- Heat the broth, beer, tomatoes with their juice and bay leaf to a boil in a Dutch oven over high heat. Add the cabbage, potato, onion, carrot, kielbasa, thyme and caraway.

- Boil beef bone and onion in soup pot filled half way with water for 20 minutes.
- Add barley and simmer for another 15 to 20 minutes.
- Remove beef bone and cut off cooked meat.
