1 small scallion (chopped)
2 tsp lime juice
2 tbsp chopped cilantro
kosher salt and pepper
1/8 teaspoon garlic powder
1/8 teaspoon cumin
1/8 teaspoon chile powder
low sodium chicken broth (check labels for Keto or use bullion)

Steps:

  • Combine cooked chicken, mayonnaise, scallions, lime juice, and cilantro.
  • Season to taste with salt, pepper, garlic powder, cumin, and chile powder.
  • Add a little chicken broth if chicken seams too dry, 1 tbsp at a time.

1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper

Juice of 1 lime

Steps:

  • Combine the mayonnaise, with the garlic, salt, pepper, and lime juice and mix.
  • In a large bowl, stir the chicken, celery, onion, bell pepper, and cilantro with the mayo mixture until everything is coated.
  • Chill for 1 hour for flavors to meld.

3 tablespoons Apple Cider Vinegar
1 tablespoon Honey
1 tablespoon Lime Juice
1/2 teaspoon Lime Zest
3 Garlic Cloves (minced)
2 tablespoons chopped Cilantro
1 teaspoon ground Cumin
1 teaspoon Paprika
1 teaspoon Salt
1 pound boneless, skinless Chicken Breasts
2 heads Romaine Lettuce (roughly chopped)
1 Red Bell Pepper (cubed)
1 Red Onion (sliced)
1 cup Mango Salsa ((optional))

Steps:

  • Whisk together all the ingredients for marinade dressing. Marinate the chicken in half the dressing for 10 minutes, reserving the rest for the salad.
  • Heat a grill pan and place the chicken breasts on it. Cook on each side for 4-5 minutes. Let the chicken rest for 10 minutes and then slice.
  • In the same grill pan, add the red bell peppers and onions along with a tablespoon of the dressing and grill on high heat till lightly charred. Remove and set aside.
  • To assemble the salad, place roughly torn romaine lettuce at the bottom of the bowl. Place red bell peppers, onions, chicken and mango salsa (if using) on top. Drizzle with the remaining dressing. Toss and enjoy!

1 large head romaine lettuce, chopped

1 cup black beans (drained and rinsed)
corn from 2 ears sweet corn ((raw))
1/2 cup finely grated sharp cheddar cheese (or more to taste)
2 avocados, chopped
Tortilla Chips, slightly crushed or tortilla strips (to taste (the more the better!))
1/4 cup ketchup
1/4 cup red wine vinegar
3 tablespoons sugar (more or less to taste (start with less))
1/4 cup mayonnaise
1/4 cup sour cream ((may sub yogurt))
1 tablespoons reserved Cilantro Lime Marinade ((in directions))

Steps:

  • Prepare Cilantro Lime Chicken according to directions, reserving 1 tablespoon marinade for dressing. Slice or chop cooked chicken.
  • Meanwhile, whisk together all of the Dressing ingredients in a medium bowl, including the 1 tablespoon reserved Cilantro Lime Marinade. Store in the refrigerator. Best if chilled at least 30 minutes. May keep in an airtight container up to 7 days.
  • To assemble, add the Salad Ingredients to a large bowl and toss to combine. Drizzle individual servings with desired amount of dressing. Season with additional salt, pepper, hot sauce and/or lime juice to taste.

2 lbs chicken breasts or thighs (boneless & skinless)
1 bunch cilantro
4 limes (juice of)
3 garlic cloves
2 tbsp olive oil
1 tbsp cumin
1/2 tsp salt
1/8 tsp cayenne pepper
Ground black pepper (to taste)

Steps:

  • In a food processor or blender, add cilantro (whole and with stems), lime juice, garlic, olive oil, cumin, salt, cayenne and black pepper. Process until marinade forms, pausing and scraping the walls.
  • Add chicken in a medium bowl and poke with a fork randomly. This will allow marinade to penetrate the meat. Pour marinade on top and toss with a fork to coat well. Cover and refrigerate for 30 mins - 48 hours. The longer you marinate, deeper the flavor, but even after 30 mins cilantro chicken tastes awesome.
  • To pan fry (pictured): Preheat large ceramic non-stick skillet on medium heat and swirl a bit of avocado oil to coat. Add as many chicken breasts as fit, cover and cook for 5-6 minutes. Flip and cook for another 5-6 minutes or until the thickest part juices run clear when poked with a knife or fork. Discard marinade.
  • To grill: Preheat grill on medium-high (450-500 degrees F) and rub with oiled paper towel. Place chicken on the grill, close the lid and grill for 8-10 minutes turning once. Do not overcook. Discard marinade.
  • To bake: Preheat oven to 450 degrees F. Rub bottom of large baking dish with oil and lay chicken breasts in a single layer. Bake uncovered for 25 minutes (thinner) to 35 minutes (2″+) or until 150 degrees F internal temperature. Discard marinade.
  • For all methods: Make sure you let chicken rest. Remove from heat and cover dish with tin foil, silicone lid or paper towel. Let rest for 5 minutes. This step helps juices to settle back into the meat.

2 tablespoons low sodium soy sauce
1 chicken breast, no skin, boned, cubed

6 chicken thighs (bone-in and skin-on)
3 tablespoons olive oil (divided)
2 limes (zested and juiced)
3 cloves garlic (minced)
1 tablespoon honey
1 teaspoon ground cumin
1/2 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup cilantro leaves (chopped)

Steps:

  • In a mixing bowl, whisk together two tablespoons of olive oil, lime juice and zest, cumin, chili powder, minced garlic, honey, salt, pepper, and chopped cilantro. You can also pulse in a food processor until it's combined.
  • Combine the marinade and chicken thighs in a bowl or shallow dish. Marinate chicken for 30 minutes to an hour in the fridge.
  • When the chicken is done marinating, take it out of the fridge and let it sit for 10-15 minutes at room temperature.
  • Preheat your oven to 425 degrees fahrenheit.
  • Heat the remaining one tablespoon of olive oil in a large ovenproof skillet over medium-high heat. Sear the chicken for 5-6 minutes with the skin side down, until they're golden brown.
  • Then flip the chicken and sear the other side for 2-3 minutes. The chicken will not be fully cooked at this point.
  • Transfer the skillet to the oven and bake the chicken thighs for 15-20 minutes or until the internal temperature reaches 160 degrees fahrenheit.
  • Remove the chicken from the oven, let it rest for 5 minutes, and garnish with extra lime slices and cilantro leaves before serving.

vegetable cooking spray

1/2 cup thin sliced green bell pepper
1/2 cup thin sliced red bell pepper

1 (15 ounce) can pinto beans (optional) or 1 (15 ounce) can black beans, rinsed and drained (optional)

1 tablespoon chili powder (I love Ancho or chipotle)

  • Place a large skillet coated with cooking spray over medium-high heat until hot.
  • Add chicken and sprinkle chicken with fajita seasoning and saute 8 minutes or until chicken is done (no longer pink inside) and browned on the outside
  • Sprinkle with 1 tablespoon fresh lime juice. Salt and fresh ground pepper to taste. Garnish with chopped fresh cilantro set aside.

1 cup loosely packed cilantro (leaves and stems)
4 garlic cloves, peeled
3 tablespoons lime juice

2 tsp. minced garlic (about 2 cloves)
2 tsp. chili powder
