6 cups cubed cooked chicken
3 (10 3/4 ounce) cans condensed cream of chicken soup
3/4 cup mayonnaise
3 tablespoons lemon juice
1 1/2 cups grated cheddar cheese

Steps:

  • Line two Corningware casseroles, 2½ and 3 qt, with foil, spray with cooking spray.
  • Briefly cook broccoli in boiling water until bright green and tender (2-3 min).
  • Spread broccoli into each baking dish.
  • Layer cubed, cook chicken on top of broccoli.
  • Combine cans of cream of chicken soup, mayo, and lemon juice.
  • Spread on top of chicken.
  • Bake for 25 minutes at 375 degrees (F).
  • Flash freeze for 2-3 hours.
  • Remove casseroles, place in freezer bags, label, pack with cheddar cheese.
  • Return to freezer.
  • To reheat: thaw, reheat, sprinkle with cheese; return to oven and cook for 10 additional minutes.

Like many casseroles, you can prepare this one ahead and keep in the freezer for another day, or bake for supper tonight. I first found the recipe in the book "Once-A-Month Cooking".

10 ounces frozen broccoli florets
4 cups cooked chicken, diced
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup light mayonnaise
1 (4 ounce) can mushroom stems and pieces, drained
1/4 teaspoon curry powder
1 pinch grated black pepper
3/4 cup parmesan cheese, freshly grated

Steps:

  • Thaw broccoli flowerets and spread in a prepared 13x9 inch baking dish.
  • Mix chicken, soup, mayonnaise, drained mushrooms, curry powder, pepper and 1/2 cup of the Parmesan cheese in a mixing bowl.
  • Spread the chicken mixture over the broccoli, and cover with the remaining Parmesan cheese.
  • Bake at 350 degrees for 30-40 minutes.
  • If freezing for future use, cover with foil and freeze.
  • To bake after freezing, omit the last 1/4 cup of Parmesan until later.
  • Remove from freezer and bake in a 350 degree oven, covered with foil, for 40 minutes, then take off foil and stir it so the whole casserole gets hot.
  • Sprinkle the remaining 1/4 cup Parmesan cheese on top and bake 20 minutes longer.

1/2 cup orange juice
1/2 cup low-sodium soy sauce
1/4 cup honey
1 tablespoon cornstarch
1 tablespoon toasted sesame oil
One 2-inch piece peeled fresh ginger, grated
Kosher salt and freshly ground black pepper
6 cups small broccoli florets
1 1/4 pounds boneless, skinless chicken breasts, cut into 1/2-inch pieces
Cooked white rice, chopped scallions and toasted sesame seeds, for serving

Steps:

  • Whisk together the orange juice, soy sauce, honey, cornstarch, sesame oil, ginger, 1 teaspoon salt and several grinds black pepper in a large microwave-safe bowl. Add the broccoli and toss to coat. Cover with plastic wrap and microwave until the broccoli is crisp-tender and still bright green, about 4 minutes. Remove the plastic wrap and let cool completely.
  • Transfer the broccoli with the marinade to a large resealable plastic bag and add the chicken. Squeeze out most of the air and seal, then toss gently to coat the chicken with the marinade. Freeze until ready to use. Thaw in the refrigerator for at least 24 hours before cooking.
  • Pour the chicken, broccoli and marinade into a large skillet and heat over high heat. Cook, stirring often, until the chicken is cooked through, about 12 minutes. Season with salt and pepper.
  • Divide the chicken and broccoli among 4 plates. Serve with rice and garnish with scallions and sesame seeds.

12 ounces fettuccine pasta, uncooked
1 1/2 lbs boneless chicken breasts (about 5 breasts per meal)
1/4 cup butter
1 garlic clove, minced
1/2 teaspoon black pepper
1 lb fresh broccoli, chopped (1 head or bunch or about 4 cups chopped per recipe)
1 1/2 teaspoons seasoning salt
8 ounces fat free sour cream
1 pint heavy whipping cream (2 cups per recipe, sold in pints)
1 cup half-and-half (milk & cream)
3/4 cup romano cheese, freshly grated
3/4 cup parmesan cheese, freshly grated

Steps:

  • Assembly Directions:.
  • Cook Fettuccini aldente (slightly chewy), drain, and set aside. Wash, drain and chop fresh broccoli. Cut chicken breasts into bite-sized pieces or cut crosswise into 1/2 inch wide slices. Heat butter, garlic and ground black pepper in a large skillet over medium heat. When the skillet is hot, add the chicken and broccoli to the skillet. Cook and stir until the meat is no longer pink in the center (8-10 minutes per recipe). Sprinkle the seasoning salt over the chicken and broccoli and toss to mix.   • Thaw all three bags completely. Place pasta in the bottom of a spray coated casserole or baking pan. Spread chicken mixture over pasta and toss gently to mix. Pour sauce over all. Cover the pan tightly and heat until very hot. Do not bring to a boil or the sauce will curdle. This can be heated in the microwave on 50% power for 5 minutes, stir gently and repeat until hot, or heated in the oven at 350 degrees for about 30 minutes or until hot.
  • Remove the dish from heat and allow to sit a few minutes so the pasta will absorb some of the sauce.

2 cups milk

¾ cup shredded Parmesan cheese
1 sleeve Ritz crackers (crushed)

Steps:

  • Cook the chicken, then slice or break it into bite size pieces.
  • Cook broccoli in salted water.
  • Place the broccoli in a 9 x 13 inch greased casserole dish.
  • Heat the milk, cream cheese, garlic salt and Parmesan cheese over low heat, stirring till the mixture is smooth.
  • Pour 1 cup of sauce over the broccoli. Add the chicken into the pan and pour rest of sauce over it. Sprinkle the top with 1/4 cup Parmesan cheese and Ritz cracker crumbs.
