3 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 cup butter, chilled
8 tablespoons vegetable shortening
1 cup buttermilk
1 cup mincemeat
1/4 cup powdered sugar (optional)

Steps:

  • Combine flour, granulated sugar and salt in large bowl; set aside.
  • Cut butter into 1-inch chunks.
  • Add butter and shortening to flour mixture.
  • Cut in with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Drizzle buttermilk over top; toss just until mixture comes together to form ball.
  • Turn out dough onto lightly floured work surface; fold in half and flatten to about 1/2 inch thick.
  • Knead about 8 times.
  • Divide dough in half; press each half into 1/2-inch-thick disc.
  • Wrap in plastic wrap and refrigerate at least 30 minutes.
  • Preheat oven to 350°F.
  • Lightly grease cookie sheets; set aside.
  • Let dough rest at room temperature 10 minutes.
  • Roll 1 dough disc into 8X12-inch rectangle on lightly floured work surface.
  • Cut into 24 (3-inch) squares.
  • Place heaping 1/2 teaspoon mincemeat in center of each square.
  • Fold opposite corners each about 2/3 of the way over filling, overlapping dough corners.
  • Place 2 inches apart on prepared cookie sheets.
  • Repeat with remaining dough.
  • Bake 20 minutes or until lightly browned.
  • Remove cookies or wire racks; cool completely.
  • Sprinkle pastries lightly with powdered sugar, if desired.

Apple turnovers image

Treat family and friends to these moreish apple turnovers. With an apple and cinnamon filling encased in puff pastry, they're delicious served with ice cream

Number Of Ingredients 8

2 medium-large Bramley apples, peeled, cored and roughly chopped
50g golden caster sugar
½ tsp ground cinnamon
1 tbsp butter
1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
320g pack puff pastry
2 tbsp milk to glaze
2 tsp demerara sugar

Steps:

  • Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
  • Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
  • Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
  • Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.

1 tablespoon brandy (optional)
powdered sugar

Steps:

  • * "Make a windowed gift bag: cut out a diamond or square window from a brown lunch bag or colored gift bag. Tape a piece of clear cellophane inside. Fill with turnovers. Seal top of bag with a holiday sticker." Preheat oven to 425°. On a lightly floured surface, using one pastry round at a time, roll pastry into a 12-inch circle. Using a 2 1/2-inch round cutter, cut out 16 circles. Re-roll pastry and cut out 4 additional circles. Repeat with remaining pastry round.In a small bowl, mix mincemeat and brandy. Place 1/2 teaspoon of the mincemeat in center of each circle fold in half. With tines of a fork, press edges together. Place turnovers on ungreased baking sheets.Bake 10 to 12 minutes until lightly browned. Cool on wire racks. Roll in powdered sugar. Store in an airtight container in a cool place. Dust with powdered sugar before serving.

2 large Bramley apples , peeled, cored and finely chopped to give 450g/1lb
450g currants
450g sultanas
450g raisins
200g pot mixed candied peel
zest and juice of 1 orange
zest and juice of 1 lemon
450g dark muscovado sugar
1 ½ tsp ground mixed spice
100ml Armagnac or brandy , plus more if needed
200g pack beef or vegetable suet

Steps:

  • Put everything except the suet into a large mixing bowl and mix well using your hands. Leave for at least 2 hrs, or overnight if you can. Add the suet, mix again, then spoon into sterilised jars (see tip, bottom left) while they are still warm. Will keep for up to 1 year in a cool, dark place. If the mincemeat starts to look dry as it matures, add a little more brandy.

Louisiana Sweet-Dough Mincemeat Turnovers image

Yield Makes 4 turnovers

Number Of Ingredients 9

1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon double-acting baking powder
1/4 teaspoon salt
3 tablespoons unsalted butter, softened
3 tablespoons sugar
1/4 teaspoon vanilla extract
1 tablespoon beaten egg
2 tablespoons milk
4 tablespoons bottled mincemeat

Steps:

  • Preheat the oven to 375°F. In a bowl whisk together the flour, the baking powder, and the salt. In a bowl with an electric mixer cream together the butter and the sugar until the mixture is light and fluffy, beat in the vanilla and the egg, and beat in the flour mixture in batches alternately with the milk. Chill the dough, dusted with flour and wrapped in plastic wrap, in the freezer for 10 minutes.
  • Divide the dough into fourths and roll out 1 piece of the dough 1/8 inch thick on a well-floured surface, keeping the remaining pieces covered and chilled. Cut a 4-inch round from the dough, brush off any excess flour, and brush the edges with water. Put 1 tablespoon of the mincemeat in the center of the round, fold the dough over to enclose the mincemeat, and pinch the edges together to seal them. Make 3 more turnovers in the same manner with the remaining dough and mincemeat. Bake the turnovers on a buttered baking sheet in the middle of the oven for 15 minutes, or until the edges are golden.
