Eurasian Beef Smore is a delicious thick and dark rich beef stew from the Eurasian community in Singapore and Malaysia. It has a European base, with Asian flavourings.

Number Of Ingredients 24

500 g stewing beef (diced to about 2.5cm/1 inch cubes )
1 cinnamon stick
2 cloves
2 large onions (quartered)
4 cloves garlic (sliced widthwise)
7.5 cm ginger (julienned (in strips))
1 large carrot (chopped into similar sized chunks as the beef)
1 celery (chopped as above)
1 leek (also chopped to roughly the same size)
2 tomatoes (halved)
4 medium potatoes (quartered)
1 tsp black peppercorns
1 tsp sundried tomato paste
2 Tbsp vegetable oil
1 Tbsp plain flour (2 if you'd like a slightly thicker stew)
500 ml beef stock
500 ml water
fresh coriander leaves (cilantro, chopped, to serve)
1 Tbsp dark soy sauce
1 Tbsp kicap manis (sweet soy sauce or 1 tbsp dark with ¼ tsp sugar)
dash of light soy sauce
2 tsp clear vinegar
1 tsp salt
generous amount of freshly ground black pepper

Steps:

  • Marinade the beef with all the ingredients for about an hour.
  • Then, heat the oil in a casserole dish or large saucepan on medium heat, and fry the cinnamon stick and cloves for 30 seconds.
  • Add the onion, garlic and ginger and fry for a couple of minutes until softened but not brown.
  • Add the beef, stir to mix and brown for a couple of minutes.
  • Add the flour and stir thoroughly.
  • Tip in the rest of the vegetables, apart from the potatoes. So carrot, celery, leek and tomatoes. Stir thoroughly to coat with meat juices. If you like your vegetables like carrots, leeks and celery less cooked, add them with the potatoes, step 8.
  • Now add the stock, sundried tomato paste and black peppercorns. Stir and bring to boil.
  • Cover and leave to simmer for about 1 and a half hours.
  • Add the potatoes, bring to boil and cook until the potatoes are done, about 30 minutes, by which time, the beef will be done too. Remember, if you like your vegetables like carrots, leeks and celery less cooked, add them with the potatoes.
  • Taste for seasoning and scatter coriander leaves all over and serve with rice, bread or mashed potato.

3 pounds beef stew meat, cut into 1 inch cubes
6 cloves garlic
1 (1 inch) piece fresh ginger root - peeled, sliced and crushed
3 ½ tablespoons white vinegar
2 teaspoons salt
1 tablespoon ground black pepper
1 tablespoon curry powder, toasted
1 ½ tablespoons cayenne pepper
3 tablespoons vegetable oil
8 fresh curry leaves
4 strips pandan leaf
1 onion, sliced
1 (1 inch) piece cinnamon stick
4 green cardamom pods
2 whole cloves
2 tablespoons tomato paste
1 cup water
1 cup thick coconut milk

Steps:

  • Rinse the beef and pat dry. Crush the garlic cloves into a paste and combine it with the crushed ginger. Add the vinegar, salt, pepper, roasted curry powder, and cayenne. Mix in the beef cubes and toss to coat. Set aside for 30 minutes.
  • Heat the oil in a Dutch oven over medium heat. Add the curry leaves and pandan strips. Stir in the onions. Cook, stirring frequently, until the onion has softened and turned translucent, about 5 minutes.
  • Mix in the beef cubes and cook until browned on all sides, about 10 minutes. Stir in the cinnamon stick, cardamom pods, and cloves. Add the tomato paste and water and mix well.
  • Simmer, covered, on low heat for 1 1/2 hours or until the meat is tender. Check the curry every half hour; you may need to add more water (up to 1 cup) if the curry is too dry and is sticking to the pan.
  • Add the coconut milk and heat through. Taste and adjust the seasonings before serving.

3 tablespoons ghee or 3 tablespoons oil
2 large onions, finely chopped
1 tablespoon finely chopped fresh ginger
3 -4 garlic cloves, finely chopped
4 tablespoons ceylon curry powder
1 teaspoon ground turmeric
2 teaspoons black mustard seeds
2 teaspoons salt
1 tablespoon vinegar
2 fresh chilies, seeded and chopped
3 ripe tomatoes, peeled and chopped

Steps:

  • Cut steak into 2 inch squares.
  • Heat the ghee in a saucepan and gently fry the onions, ginger and garlic until just beginning to turn golden.
  • Add curry powder, turmeric, mustard seeds and fry over a low heat for 2-3 minutes.
  • Add salt and vinegar and stir well.
  • Add steak and fry, stirring to coat meat well.
  • Add chillies and tomatoes, cover pan and simmer on a very low heat for about 2 hours.
  • If the gravy is too thin when the meat is tender, cook over a high heat, uncovered until reduced.
  • Serve with rice.

One 2 1/2-pound piece of beef (shoulder meat, tied as a roast, or a piece of chuck, or even brisket-any beef chunk suitable for braising)
Salt
Freshly ground black pepper
4 teaspoons whole coriander seeds
1 teaspoon whole cumin seeds
1 teaspoon whole fennel seeds
1/4 teaspoon whole fenugreek seeds
4 tablespoons olive or canola oil
One 2-inch cinnamon stick
1 large onion, finely chopped
One 2-inch piece fresh ginger, peeled and finely grated
4 cloves garlic, finely chopped
2 tablespoons red wine vinegar
1 1/2 cups beef or chicken stock
1/2-1 teaspoon cayenne pepper
1 cup coconut milk from a well-shaken can

Steps:

  • Pat the meat dry and sprinkle lightly with salt and lots of black pepper.
  • Set a small cast-iron or other heavy frying pan over medium heat. When very hot, sprinkle in the coriander, cumin, fennel, and fenugreek seeds. Stir for 30 seconds or so until the spices just start to emit a roasted aroma. Empty onto a piece of paper towel, and, when cooled off a bit, grind the spices in a clean coffee grinder or crush in a mortar.
  • Preheat oven to 325°F.
  • Pour the oil into an ovenproof casserole-type pan and set over medium-high heat. When hot, put in the meat and brown on all sides. Remove to a plate. Add the cinnamon, onions, ginger, and garlic. Stir and cook 4-5 minutes. Add the vinegar, stock, cayenne, 1 1/2 teaspoons salt, and the beef as well as its accumulated juices. Bring to a boil, stirring the sauce. Cover and place in oven. Cook, basting and turning every 20 minutes or so, about 2-2 1/2 hours or until meat is tender. Remove pan from oven. Add the coconut milk, stir, and bring to a simmer before serving.

3 lbs stewing beef, in one piece
2 medium onions, finely chopped
6 garlic cloves, finely chopped
1 tablespoon finely chopped fresh ginger
1 cinnamon stick
10 curry leaves
1 stalk lemongrass or 2 slices lemon rind
3 tablespoons ceylon curry powder
1/2 teaspoon fenugreek seeds
1/2 cup vinegar
1/2 lemons, juice of or 1/2 cup tamarind juice
2 cups thin coconut milk
1 teaspoon ground turmeric
2 teaspoons chili powder (or to taste)
2 teaspoons salt (or to taste)
1 cup thick coconut milk
2 1/2 tablespoons ghee (clarified butter)

Steps:

  • Pierce the meat well with a skewer and put in a large saucepan with all the ingredients except the thick coconut milk and ghee.
  • Cover and simmer gently until meat is tender, approximately 11/2 - 2 hours.
  • Add thick coconut milk and cook uncovered for 15 minutes longer.
  • Lift meat out on to a serving dish.
  • If the gravy is too thin reduce it by boiling rapidly uncovered.
  • Put gravy into a bowl.
  • Rinse the pan to remove any gravy, return to the stove and heat the ghee in it.
  • Fry meat on all sides, pour gravy over the meat and heat through.
  • Serve.

  • Lamprais. Sri Lankan cuisine has been influenced by culture including the Dutch Burgher community. Lamprais is a Dutch word combining two other Dutch words for “lump” and “rice.”
  • Wambatu Moju. Wambatu moju is a flavored candied eggplant pickle that is commonly served with rice and curry. The eggplant is long, slender, and usually the purpled-skinned fruit variety.
  • Kukul mas Mirisata. Kukul mas mirisata is simply a spicy chicken curry and a common household dish in the country. There are several variations of the dish depending on taste preference and regions.
