4th of July for many, marks the peak of the barbecue season. This homemade fresh summer squash & zucchini salsa makes a excellent side dish. Less than 8 ingredients & under 10 Minutes. So easy and quick to make; a perfect side for barbecue season.

3 tablespoons EVOO
1 medium Zucchini (8oz) (- diced)
1 medium Yellow Squash (8oz) (- diced)
1/2 Red Bell Pepper (- diced)
1/2 Yellow Bell Pepper (- diced)
1/2 medium Red Onion (- diced )
2 teaspoon Apple Cider Vinegar (- optional )
1 tablespoon Fresh Basil (- chopped)
1 tablespoon Fresh Parsley (- chopped)
Salt and Pepper to taste

Steps:

  • In medium saucepan and 1 tablespoon of olive oil over medium heat.
  • Add diced zucchini, yellow squash and salt and pepper to taste.
  • Sautee until just tender about 3 minutes. Careful to not over cook, should still have crunch to them you do not want them to become mushy.
  • Set squash aside to cool
  • In bowl tossed cooled vegetables, parsley, basil and 2 tablespoons of olive oil

1 medium spaghetti squash
1 medium onion, chopped
2 cups salsa
1 can (15 ounces) black beans, rinsed and drained
3 tablespoons minced fresh cilantro
1 medium ripe avocado, peeled and cubed

Steps:

  • Cut squash lengthwise in half; discard seeds. Place squash on a microwave-safe plate, cut side down. Microwave, uncovered, on high for 15-18 minutes or until tender., Meanwhile, in a lightly oiled nonstick skillet, cook and stir onion over medium heat until tender. Stir in salsa, beans and cilantro; heat through. Gently stir in avocado; cook 1 minute longer., When squash is cool enough to handle, use a fork to separate strands. Serve squash topped with salsa mixture.

30 tomatoes, peeled and chopped
10 cups chopped onions
2 cups vinegar
2 (8 ounce) cans tomato paste
2 green bell peppers, chopped
2 red bell peppers, chopped
4 banana peppers, chopped
½ cup white sugar, or more to taste
10 cloves garlic, chopped
8 teaspoons pickling salt
2 teaspoons ground black pepper
½ bunch fresh cilantro, chopped
17 (1 pint) canning jars with lids and rings

Steps:

  • Combine tomatoes, onions, vinegar, tomato paste, green bell peppers, red bell peppers, banana peppers, sugar, garlic, pickling salt, and black pepper in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 30 minutes. Mix cilantro into salsa.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack salsa into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 35 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

  • In a large saucepan, bring 1 in. of water to a boil; place squash in a steamer basket over water. Reduce heat; cover and steam for 10-15 minutes or until tender., Meanwhile, in a large saucepan, saute onion and garlic in butter until tender. Stir in the salsa, salt and squash cubes. Spoon half of the mixture into a greased 1-qt. baking dish. Sprinkle with 1/4 cup of cheese. Top with the remaining squash mixture. , Cover and bake at 400° for 15 minutes. Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a baking sheet. Bake at 325 degrees about 35 mintues, until tender.
  • Meanwhile, in a skillet coated with nonstick spray, cook onion until tenter. Stir in salsa, beans and cilantro; heat through. Gently stir in avocado; cook 1 more minute.
  • Separate squash strands with fork and scoop out.

1 spaghetti squash
1 (12 ounce) can black beans, drained & rinsed
1 (12 ounce) can corn
1 pint cherry tomatoes, halved
0.5 (1 ounce) package old el paso taco seasoning mix
3/4 lb ground turkey
1 onion, diced
1/2 teaspooon salt (to taste)
1 garlic clove, minced
1/4 cup monterey jack cheese

Steps:

  • Cut squash in half and remove seeds. Spray with olive oil and sprinkle with salt. Turn cut-side down onto a greased cookie sheet and bake at 400 F for 40 minutes or until tender.
  • Meanwhile, place ground turkey, onion and garlic in a pan and sauté until meat is cooked. Drain any excess fat. Add seasoning and mix together. Add corn, tomatoes and black beans and mix well.
  • Remove squash from oven and loosen strands. Add 1/2 meat mixture to each half of the squash and mix. Sprinkle cheese on top and place under broiler until cheese is melted. Serve immediate with or without salsa and/or sour cream.

2 cups finely diced butternut squash
1 cup fresh cranberries
2 clementines, peeled
1/3 cup maple syrup
Grated zest of 1 orange
Juice of 1 lime
Pinch of cinnamon
1/2 teaspoon finely minced fresh mint

Steps:

  • Bring a saucepan of water to a boil, add the diced squash and when the water returns to the boil, drain the squash and place in a bowl.
  • Chop the cranberries fairly fine by pulsing in a food processor. Add them to the bowl with the squash.
  • Using kitchen shears, snip the clementine segments in small pieces. Add them to the bowl.
  • Fold in the maple syrup, orange zest, lime juice, cinnamon and mint. Set aside at least 2 hours before serving. May be refrigerated overnight.
