Made with tasty layers of spinach and cream cheese, seasoned ground beef and mozzarella, this tasty lasagna is perfect for the keto diet!

10 oz frozen chopped spinach
1 tablespoon olive oil (plus more for the pan)
1 lb. lean ground beef ((85/15))
1 small onion (chopped (4 oz))
1 teaspoon Diamond Crystal kosher salt (divided)
1 tablespoon minced fresh garlic
1/2 cup marinara sauce ((I use Rao's))
8 oz cream cheese
1 large egg
1/4 teaspoon black pepper
3/4 cup part-skim mozzarella cheese (shredded (3 oz))

Steps:

  • Preheat your oven to 350 degrees F. Lightly grease a square 8-inch baking dish.
  • Defrost the spinach in the microwave. Drain thoroughly by transferring the thawed spinach to a colander and pressing on it repeatedly with the back of a large spoon to extract as much liquid as possible. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat, about 3 minutes. Add the beef, onion, and 1/2 teaspoon of kosher salt. Cook, using a wooden spoon to stir and to break up the ground beef into small chunks, until the onion is soft and the meat is browned, 5-7 minutes.
  • Drain the beef mixture, then return it to the skillet. Add the garlic and cook, stirring, for 30 seconds, then mix in the marinara sauce. Turn the heat off.
  • Place the cream cheese in a medium microwave-safe bowl and heat for 40 seconds to soften. With a fork, stir it until smooth and creamy. Add the egg, the black pepper, and the remaining 1/2 teaspoon of kosher salt and keep stirring the mixture until very smooth. With a spatula, add the drained spinach and mix to blend everything together. Mix well.
  • Spread the spinach mixture evenly on the bottom of the prepared baking dish. Top with the meat mixture. Sprinkle the mozzarella on top. Bake the lasagna until the cheese is bubbly and lightly browned, about 30 minutes. Let stand for ten minutes before cutting and serving.

2 Tbsp. Chopped Onion
1/8 tsp. garlic powder
1 cup spaghetti sauce
8 oz. cream cheese, softened (reduced fat works fine)
1 egg
1/8 tsp. pepper
4 oz. Shredded mozzarella cheese
2 Tbsp. Grated Parmesan cheese

Steps:

  • Brown the hamburger with the onion. Drain fat and transfer to large bowl. Add garlic powder and spaghetti sauce. In a medium bowl, stir cream cheese until creamy. Beat in egg and pepper with a spoon. Add spinach. In an 8x8 sprayed pan, spread 1/2 the meat mixture. Spread entire spinach mixture over the meat. Top with all of the mozzarella. Spread the rest of the meat mixture on top. Sprinkle with the parmesan cheese. Freezing Directions: Cover with plastic wrap and put pan into gallon size freezer bag. If you don't want to tie up your pan for awhile, flash freeze the lasagna and then pop the frozen block out of the pan, wrap in plastic wrap and freeze in a freezer bag. Serving Directions: Remove plastic wrap. Cook uncovered at 350 degrees for 30 minutes. Comments: You won't even miss the pasta in this lasagna. The cream cheese and spinach gives it a great flavor. I bake mine and then cut it into 9 squares and put them into individual freezer containers to microwave at work. Yummy! 1 lb ground turkey breast
1 (32 ounce) container cottage cheese
2 (8 ounce) packages mozzarella cheese
1/2 cup parmesan cheese
2 eggs
1 (8 ounce) package , mushrooms-sliced
2 (8 ounce) cans no-salt-added diced tomatoes
1 (8 ounce) package frozen spinach
dried- basil, Garlic Powder, Oregano, Red Pepper flakes to taste

Steps:

  • Preheat oven to 425°.
  • Microwave spinach for 3 minutes and drain well.
  • In pan brown meat and mushrooms and drain, add to the meat the 2 cans of tomatoes (drained) and as much of the desired seasonings to taste.
  • In bowl combine cottage cheese, eggs and Parmesan cheese and 1Tbsp of basil and stir up well.
  • In (large) casserole dish put down ½ of meat mixture on bottom.
  • Then layer ½ of spinach.
  • Then layer ½ of cottage cheese mixture.
  • Then put 1-8oz package of mozzarella.
  • Repeat these 4 steps again.
  • Bake at 425° for approx 30 minutes, drain any excess liquid, bake for another 10 minutes or until top is desired brown.
  • * I use whole milk products for lower carbs but if you are doing a low calorie diet use skim products.

2 tablespoons onions, chopped
1/8 teaspoon garlic powder
1/2 cup spaghetti sauce
8 ounces cream cheese
1 egg
1/8 teaspoon pepper
10 ounces frozen spinach, chopped, thawed & drained
4 ounces mozzarella cheese, shredded
2 tablespoons parmesan cheese (canned or fresh)

Steps:

  • Preheat oven to 350.
  • Brown hamburger with onion; drain off the fat.
  • Mix in garlic powder and spaghetti sauce; season to taste and heat until bubbly.
  • Soften the cream cheese in medium-size mirowaveable bowl for about 40-60 seconds. Stir until creamy. Beat in egg and pepper with a spoon until well mixed. Blend in the spinach.
  • Spread half of meat mixture evenly in bottom of greased 8"x8" glass baking pan. Spread spinach mixture over the meat. Top with mozzarella, then the rest of the meat (OK if it doesn't completely cover the top). Sprinkle with parmesan.
  • Bake at 350 about 30 minutes until hot and bubbly.
  • OR cover with plastic wrap and vent one corner, then microwave on high for 3 minutes; then reduce to medium and cook for another 7-10 minutes until hot and bubbly.
  • Let stand for 3 minutes before serving.

2 (14 1/2 ounce) cans diced tomatoes
2 (14 1/2 ounce) cans crushed tomatoes
1 cup white onion, diced
3 tablespoons fresh basil, chopped
2 teaspoons dried Italian seasoning
1 tablespoon fresh oregano, chopped
2 tablespoons unbleached cane sugar
1 garlic clove, minced
12 whole wheat lasagna noodles
1 tablespoon olive oil
3 garlic cloves, minced
15 ounces fat-free ricotta cheese
3 cups chopped spinach
1/2 cup fresh parmesan cheese, shredded
2 tablespoons kalamata olives, finely chopped (optional)
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon sea salt
1/4 cup shredded part-skim mozzarella cheese, shredded
1/4 cup fat free mozzarella cheese, shredded
1 -2 cup cooked italian sausage (optional)

Steps:

  • Prepare marinara: Saute onions in saucepan. Do not brown.
  • Add liquid drained from diced tomatoes.
  • Add basil, Italian seasoning, oregano, sugar & red peppers.
  • Simmer 30 minutes or until reduced by half.
  • Add all tomatoes & garlic, and cook 1 minute. Remove from heat & set aside.
  • Prepare Pasta: Cook pasta according to package directions. Drain, rinse, return to pot & cover w/ cold water.
  • Prepare Filling: Heat oil in nonstick skillet over medium heat.
  • Add garlic and cook 20 seconds. Add spinach and cook, stirring often, 3 to 4 minutes. Transfer to bowl.
  • Stir in ricotta, parmesan, olives, crushed red pepper, salt and 1/2-2/3 c marinara.
  • Spread 1/3-1/2 cup marinara in bottom of 9x13" baking dish.
  • Line bottom of baking dish with single layer of lasagna noodles. Spoon layer of filling over noodles and spread evenly.
  • If desired, add layer of cooked Italian sausage. Repeat layers. Top with marinara sauce & mozarella.
  • Bake 20-25 minutes until bubbling & cheese melted.
  • Can be frozen up to 1 month.
