It should not come as a surprise that the best Caesar salad is also the most traditional version. That means it's time to bring out the anchovies and eggs -- and don't skimp on quality Parmesan cheese. We've even included garlicky homemade croutons to balance the tangy dressing.

3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 cloves garlic, crushed
Kosher salt
3 cups rustic bread (about 3 ounces), torn into bite-sized pieces
2 tablespoons freshly grated Parmesan
Freshly ground black pepper
2 anchovies packed in oil
1 clove garlic
1 egg yolk, at room temperature
1 teaspoon Dijon mustard
1 tablespoon freshly squeezed lemon juice, at room temperature
1/2 cup extra-virgin olive oil
5 tablespoons freshly grated Parmesan
Kosher salt and freshly ground black pepper
2 romaine hearts, chopped (see Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F.
  • For the croutons: Put the olive oil and butter in a small saucepan over medium-low heat. When the butter is completely melted add the garlic and 1/4 teaspoon kosher salt. Carefully swirl the pan to combine. Set aside for 10 minutes to allow the garlic to infuse the oil mixture.
  • Put the bread pieces on a baking sheet. Evenly pour the garlic mixture over the bread and toss to coat. Spread the bread in a single layer and bake until golden brown, 8 to 10 minutes. Stir the bread halfway through cooking to ensure even browning. Remove from the oven and sprinkle with black pepper and Parmesan. Set aside to cool.
  • For the salad: Soak the anchovies in a small bowl of water for 5 minutes. Rinse with cold water, drain and pat dry. Finely chop the anchovies and garlic, then use the side of your knife to mash them to a paste.
  • Add the anchovy paste, egg yolk, Dijon mustard and lemon juice to a large bowl and whisk to combine. While whisking, slowly drizzle in the olive oil in a steady stream until emulsified. Stir in 3 tablespoons grated Parmesan. If needed, add water, 1 teaspoon at a time to thin the dressing. Season with salt and pepper to taste.
  • Add the lettuce and croutons to a large bowl and gently toss with the dressing until coated. Top with grated Parmesan and serve immediately.

3 tablespoons plus 1/4 cup (105ml) extra-virgin olive oil, divided
2 medium cloves garlic, minced (about 2 teaspoons)
3 cups hearty bread, cut into 3/4-inch cubes
2 ounces finely grated Parmesan cheese (about 1 cup), divided
Kosher salt and freshly ground black pepper
1 large egg yolk
1 tablespoon (15ml) juice from 1 lemon
2 to 6 anchovies (see note)
1 teaspoon (5ml) Worcestershire sauce (see note)
1/3 cup (80ml) canola oil
2 heads romaine lettuce, inner leaves only, washed and carefully dried, large leaves torn into smaller pieces, smaller leaves left intact

Steps:

  • Adjust oven rack to middle position and preheat oven to 375°F (190°C). In a small bowl, combine 3 tablespoons (45ml) olive oil with minced garlic and whisk for 30 seconds. Transfer to a fine-mesh strainer set over a large bowl and press with the back of a spoon to extract as much oil as possible, leaving garlic behind. Reserve pressed garlic separately. Add bread cubes to garlic oil and toss to coat.
  • Add 2 tablespoons Parmesan cheese, toss again, and season to taste with salt and pepper. Transfer to a rimmed baking sheet. Bake until croutons are pale golden brown and crisp, about 15 minutes. Remove from oven and toss with 2 more tablespoons Parmesan. Allow to cool.
  • While croutons bake, make the dressing. Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, pressed garlic, and 1/4 cup Parmesan cheese in the bottom of a cup that just fits the head of an immersion blender or in the bottom of a food processor. With blender or processor running, slowly drizzle in canola oil until a smooth emulsion forms. Transfer mixture to a medium bowl. Whisking constantly, slowly drizzle in remaining 1/4 cup (60ml) extra-virgin olive oil. Season to taste generously with salt and pepper.
  • To serve, toss lettuce with a few tablespoons of dressing, adding more if desired. Once lettuce is coated, add half of remaining cheese and three-quarters of croutons and toss again. Transfer to a salad bowl and sprinkle with remaining cheese and croutons. Serve.

The combination of cold crunchiness, mild bitterness and salty dressings is everlastingly refreshing and satisfying. This authentic version (get out those anchovies and eggs) from Mark Bittman does not disappoint.

About 1/2 cup extra virgin olive oil
1 cup rustic bread, cut into 1-inch cubes
Salt
freshly ground black pepper
1 clove garlic, halved
2 eggs
2 tablespoons freshly squeezed lemon juice
2 to 3 tablespoons minced anchovies, or to taste
Dash Worcestershire sauce
1 large head romaine lettuce, washed, dried and torn into pieces
1/2 cup freshly grated Parmesan

Steps:

  • Put 2 tablespoons of the oil in a skillet large enough to hold the bread in a single layer and turn heat to medium. When oil shimmers, add bread and sprinkle with salt and pepper; brown lightly on all sides, adding a little more oil if necessary. Remove and set aside.
  • Rub the inside of a salad bowl with the garlic clove; discard it. Bring a small pot of water to a boil. Pierce a tiny hole in the broad end of each egg with a pin or needle and boil them for 60 to 90 seconds; they will just begin to firm up. Crack them into the salad bowl, being sure to scoop out the white that clings to the shell.
  • Beat eggs with a fork. Gradually add lemon juice and 6 tablespoons oil, beating all the while. Stir in anchovies and Worcestershire. Taste and add salt if needed, and lots of pepper. Toss well with lettuce; top with Parmesan and croutons; toss again at table. Serve immediately.

Steps:

  • Wash lettuce and tear into bite-size pieces.
  • whisk together next 7 ingredients.
  • Let dressing sit for at least 1 hour, not refrigerated.
  • Toss lettuce with cheese and croutons.
  • Toss well with dressing.

1 large egg yolk
2 garlic cloves, peeled
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/2 tablespoon Worcestershire sauce
1/2 cup extra virgin olive oil
1 ounce anchovy fillet, chopped (optional)
kosher salt, to taste
black pepper, to taste
1 head romaine lettuce, cut up
1/2 cup crouton
1/4 cup parmesan cheese, shredded
4 slices bacon, crumbled (optional)

Steps:

  • In a food processor combine the egg yolk, garlic, mustard, lemon juice, vinegar, and Worcestershire. Pulse the mixture together until garlic is finely chopped.
  • Then, while continuing to pulse, add the olive oil in a very patient, slow, steady stream to produce a smooth, creamy mayonnaise like emulsion.
  • Add the anchovy, pulse for 30 seconds, and season with salt and pepper to taste. (Can be stored covered in the refrigerator for up to 4 days).
  • Place lettuce into 6 individual salad bowls (if wooden, smear with additional clove of garlic).
  • Pour desired amount of dressing over top of each salad.
  • Sprinkle with croutons, Parmesan cheese, and optional bacon bits.

2 tablespoons vinegar
2 tablespoons grated parmesan cheese
1/4 cup olive oil
1/4 cup vegetable oil
1 head romaine lettuce
1/4 cup parmesan cheese, grated
1/2 lb bacon, cooked until crisp
1 cup crouton, home made

Steps:

  • In food processor or blender, process blue cheese, garlic, worcestershire sauce, salt, pepper, egg,2 tblsp Parmesan cheese, lemon juice and vinegar.
  • With motor running, slowly drizzle in the oils and blend till mixture is thick. Pour dressing in jar, seal and refrigerate.
  • Cook bacon till crisp; cool and crumble.
  • When ready to serve, place lettuce in salad bowl and toss with dressing. Sprinkle with Parmesan cheese, bacon bits and croutons.
  • Serves 10
  • I now use 1/3 cup Egg Beater or the like to replace the egg.
  • Slowly add some of the dressing while tossing.
  • Don't add it all in one shot.

8 anchovy fillets, cut up
1/3 cup extra virgin olive oil
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon dry mustard
fresh ground pepper
1 large head romaine lettuce
1 lemon
1/3 cup grated parmesan cheese
4 slices bread
butter
1/4 teaspoon garlic powder
1 egg

Steps:

  • Rub the inside of a salad bowl with garlic clove and discard clove.
  • Stir anchovy pieces, olive oil, Worcestershire sauce, and spices to make a dressing.
  • Coat lettuce with dressing.
  • Break cottled egg (directions below) over salad squeeze lemon and add croutons, (directions below) and cheese.
  • Toss and serve.
  • To make croutons: Butter both sides of bread and sprinkle with garlic powder.

I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is *that* good! --- although I do think the dressing is better with the anchovy it can certainly be made without them. In a pinch I have even substituted buttermilk for the half and half cream, just use about the same amount --- this dressing gets stronger with refrigeration time so a small amount of fresh garlic goes a long way! ---- usually one recipe without doubling is perfect for one large romaine lettuce, if you are serving a large crowd of people you might want to double -- salad dressing will not work for this use *only* mayonnaise, I find Hellman's brand mayonnaise works the best and for the perfect companion to this salad see my recipe#125034-------------LOWER-FAT OPTION use reduced fat mayonnaise and fat-free half and half or low-fat milk --- also see my recipe#66596

Steps:

  • In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
  • Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
  • Adjust seasonings to taste.
  • Thin with buttermilk (or milk) for a thinner consistency if desired.
  • Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
  • Toss desired amount of dressing with Romaine lettuce and croutons.
  • Sprinkle with more grated Parmesan cheese if desired.

1 tablespoon Miracle Whip
1/2 cup parmesan cheese
4 -8 drops Tabasco sauce

1/8-1/4 cup red wine vinegar

1 head romaine lettuce

Steps:

  • Put egg and garlic into bowl, whisk together for 5 minutes or until very airy.
  • Slowly add oil, continuing to whisk.
  • Add ingredients in the order listed whisking well in between each.
  • Taste at the end and adjust any ingredients until desired flavor is reached.
  • Chill until ready to use. The longer you leave in the fridge the stronger the flavor will be.
  • Cut or rip washed lettuce into bite size pieces and put into large salad bowl.
  • Add croutons, bacon, and Parmesan.
  • Slowly pour dressing over salad while mixing, it is easiest if you get someone to help you with this part.(In my house this is my DH job!).
  • Serve as a side dish or the main course.
