BEEF EMPANADAS

Beef Empanadas image

Many cultures have put a spin on the empanada. This recipe descends from the Argentine way of making these little meat pies. The Argentine empanada is small, just two or three delicious bites. The technique to master in this recipe is holding the open empanada with one hand and using the other hand to crimp the outer edge and for a decorative braid. The less dexterous among us should use a fork for this.

Time 1h30m

Yield 36 empanadas

Number Of Ingredients 19

4 ounces lard or butter, plus more for brushing tops
1 1/2 teaspoons fine sea salt
750 grams all-purpose flour, about 6 cups, more as needed
1 pound beef chuck, in 1/8-inch dice (or very coarsely ground)
Salt and pepper
Lard or olive oil, or a combination, for sautéing
1 cup diced onion
2 ounces diced chorizo
1/2 pound potatoes, peeled and diced
4 garlic cloves, mashed to a paste
2 teaspoons chopped thyme
2 teaspoons chopped marjoram or 1 teaspoon oregano
1 tablespoon tomato paste
1 tablespoon pimentón dulce or paprika
Large pinch cayenne
Beef or chicken broth, as necessary, or use water
1/2 cup chopped scallions, white and green parts
1/4 cup chopped pitted green olives
2 hard-cooked eggs, sliced

Steps:

  • Make the dough: Put 2 cups boiling water, 4 ounces lard and 1 1/2 teaspoons salt in large mixing bowl. Stir to melt lard and dissolve salt. Cool to room temperature.
  • Gradually stir in flour with a wooden spoon until dough comes together. Knead for a minute or two on a floured board, until firm and smooth. Add more flour if sticky. Wrap and refrigerate for 1 hour.
  • Make the filling: Season chopped beef generously with salt and pepper and set aside for 10 minutes. Melt 3 tablespoons lard in a wide heavy skillet over medium-high heat. Add beef and fry until nicely browned, stirring throughout to keep pieces separate, about 5 minutes.
  • Turn heat down to medium and add onion and chorizo. Keep turning mixture with a spatula, as if cooking hash, until onion is softened and browned, about 10 minutes. Add potatoes, garlic, thyme and marjoram and stir well to incorporate. (Add a little more fat to pan if mixture seems dry.) Season again with salt and pepper and let mixture fry for 2 more minutes. Stir in tomato paste, pimentón and cayenne, then a cup of broth or water. Turn heat to simmer, stirring well to incorporate any caramelized bits.
  • Cook for about 10 more minutes, until both meat and potatoes are tender and the sauce just coats them - juicy but not saucy is what you want. Taste and adjust seasoning for full flavor (intensity will diminish upon cooling). Stir in scallions and cool to room temperature, then cover and refrigerate until ready to use.
  • Divide chilled dough into 1-ounce pieces and form into 2-inch diameter balls. Roll each piece into a 4 1/2-inch circle. Lay circles on a baking sheet lightly dusted with flour.
  • Moisten outer edge of each round with water. Put about 2 tablespoons filling in the center of each round, adding a little chopped green olive and some hard-cooked egg to each. Wrap dough around filling to form empanada, pressing edges together. Fold edge back and finish by pinching little pleats or crimping with a fork.
  • Heat oven to 375 degrees. Place empanadas on parchment-lined or oiled baking sheet, about 1 inch apart. Brush tops lightly with lard or butter and bake on top shelf of oven until golden, 10 to 15 minutes. Serve warm.

BEEF EMPANADAS

Beef Empanadas image

Empanadas are a popular street food and fun to re-create in your own kitchen. These empanadas have a hearty beef and vegetable filling encased in tender cream cheese pastry crust. Traditionally empanadas are fried, but Lucinda prefers to make a healthy version by baking them. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Number Of Ingredients 13

1 tablespoon olive oil
1 small onion, chopped
1 small green bell pepper, chopped
1 pound ground beef
1 teaspoon ground cumin
3/4 cup pimiento-filled green olives, sliced
3/4 cup raisins
1 teaspoon honey
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
Several dashes hot sauce
2 large eggs, separated
1 Cream Cheese Pastry Dough

Steps:

  • To make the filling, heat a large skillet over medium heat, and then swirl in the olive oil. Add the onion and bell pepper. Saute until the onion is translucent, 3 to 4 minutes. Raise the heat to high and add the beef. Cook, stirring constantly to brown, about 5 to 7 minutes. Add the cumin and cook for another minute.
  • Stir in the olives, raisins, honey, salt, pepper, and hot sauce. Cook until the meat is golden brown, the liquid has evaporated, and the flavors have blended, about 4 more minutes. Cool the mixture completely in the fridge. Stir in the egg whites.
  • Preheat the oven to 375 degrees Fahrenheit. Butter or line a baking sheet.
  • To form the empanadas, work with half of a disk of dough at a time, rolling out on a floured surface. Using an overturned bowl (about 5 inches across), cut out circles about 3 or 4 at a time from each piece of dough. Gather all dough scraps together, reroll once, and cut. Place 1/4 cup filling on one side of a dough circle. Wet the edges of the dough with water. Fold the dough over to form a half circle. Pinch the edges of the dough together. Crimp the edges with a fork. Repeat the process until all the filling is used. The empanadas can be frozen at this point.
  • Place the empanadas on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg yolks with 1 tablespoon water. Brush the egg wash over each empanada. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving. The empanadas can be cooled and frozen to reheat in a microwave.

BEEF EMPANADAS

Filled with spiced tender beef, these South American-style pastries are a great alfresco snack.

Provided by Jamie Oliver

Categories     Snacks     Beef     Alfresco     Bonfire night recipes     Starters     Pies & pastries

Time 1h40m

Yield 14

Number Of Ingredients 15

450 g sirloin steak
olive oil
2 cloves of garlic
1 large onion
1 red pepper
1 fresh red chilli
½ tablespoon sweet smoked paprika
1 teaspoon ground cumin
20 g black olives (stone in)
1 tablespoon tomato purée
½ an organic beef stock cube
1 large free-range egg
500 g plain flour
2 teaspoons baking powder
150 g unsalted butter (cold)

Steps:

  • To make the pastry, combine the flour, baking powder and 1 teaspoon of sea salt in a large bowl. Finely chop or coarsely grate the butter, then rub into the dry mix until it resembles fine breadcrumbs.
  • Mix in just enough cold water to bring it together, then wrap in clingfilm and pop in the fridge for 1 hour.
  • Meanwhile, finely chop and add the sirloin with 1 tablespoon of oil to a large non-stick frying pan over a medium-high heat. Fry for 1 to 2 minutes, then remove to a plate.
  • Peel and finely chop the garlic and onion. Deseed and finely chop the pepper and chilli, then add to the frying pan over a medium-low heat. Stir in the paprika and cumin, and fry for 10 minutes, or until softened.
  • Crush the olives with the flat side of your knife, pull out and discard the stones, then finely chop the flesh.
  • Add the purée to the pan and crumble in the stock cube. Fry for a further minute, then add the olives and 100ml of boiling water. Bring to the boil, season lightly with sea salt and black pepper.
  • Cook for 8 to 10 minutes over a medium heat, or until the liquid has almost completely evaporated. Return the beef and any resting juices to the pan, stir well, then leave to cool completely.
  • Preheat the oven to 190°C/375°F/gas 5.
  • Divide the pastry into 14 equal pieces, then roll each portion into 14cm circles and the thickness of a pound coin - use a biscuit cutter or saucer for an accurate round.
  • Spoon 2 tablespoons of the filling onto the middle of each pastry round, brush the edges with a little beaten egg, then fold them over the filling to make a semi-circle. Press the edges together with a fork to seal, then place onto a large, lightly greased baking tray.
  • Brush the empanadas with the beaten egg and bake in the hot oven for 25 to 30 minutes, or until golden and crisp. Leave to rest for a few minutes, then serve on a platter.

ARGENTINE EMPANADAS

Argentine Empanadas image

This authentic Argentine Empanadas recipe is so approachable, anyone can make them! The filling ingredients include ground beef, onion, spices, green olives and hard boiled eggs in an easy homemade empanada dough.

Provided by Lauren Allen

Categories     Appetizer     Main Course     Side Dish

Time 1h45m

Number Of Ingredients 22

2 Tablespoons olive oil
2 white onions (, chopped (about 4 cups))
3 cloves garlic (, minced)
½ of a red bell pepper (, diced)
1 1/2 teaspoons chili powder
1 Tablespoon cumin
2 Tablespoons sweet paprika
1 teaspoon oregano
1 teaspoon beef boullion
1 lb lean ground beef
Salt and pepper to taste
1 bunch green onions (, just the green part, finely chopped)
½ cup chopped green olives
½ cup fresh chopped parsley
3 hard boiled eggs (, peeled and finely chopped)
4 cups flour
2 teaspoons salt
½ cup unsalted butter (, room temperature)
1 egg (, beaten)
2 Tablespoons oil
¾ - 1 cup warm water
Egg wash (( 1 egg mixed with 1 Tbsp water))

Steps:

  • Heat olive oil over medium-low heat. Add onion and cook for 10 minutes, stirring often.
  • Add garlic and diced red pepper. Cook for another 10 minutes, stirring often. Add chili powder, cumin, sweet paprika, and oregano. Cook for 2 minutes.
  • Increase heat to medium and add the ground beef. Season with salt and pepper and cook, crumbling into small pieces, until browned. Stir in beef boullion.
  • Remove from heat and transfer mixture to a bowl to cool for 10 minutes. Then, stir in green onion, olives, parsley, and hard-boiled eggs.
  • Cover and chill mixture for at least 1 hour or up to 3 days (depending on freshness of ingredients). It's important that the mixture is chilled before filling the empanadas.
  • Add flour and salt to a large bowl and stir to combine. Add egg and butter and stir well to combine. Add oil and warm water and stir until the mixture starts to come together into a dough ball. Add more water if it's too dry.
  • Place dough in clean greased bowl and cover tightly. Allow to rest at room temperature for 1 hour. (Or, refrigerate for up to 1 day, removing from the fridge 20 minutes before using.)
  • Divide the dough into two pieces. On a greased countertop roll each piece into a very large circle, about 1/8in thick (not so thin that it might break when filling or baking).
  • Use a small bowl or round cookie cutters to cut the dough into circles about 6in in diameter for regular size empanadas or 3 inch for mini empanadas (empanaditas).
  • Remove the excess dough from around the cut circles and keep the circles where they are for filling them (so they hold their perfect circle shape). Leftover scraps can be re-rolled to make more dough to cut out.
  • Place about 2 tablespoons of filling (for regular size empanadas) in the center of each circle, leaving plenty of space around the border. Moisten the edges of the circle with water, then fold the dough over and match the ends together to form a semi-circle.
  • Pinch the edges together and then seal the ends by crimping them with a fork or pinching and twisting/folding it over.
  • Baked Empanadas: Place empanadas on a baking sheet lined with parchment paper. Brush with a little bit of egg wash and bake at 375° For 25-30 minutes until golden brown and fully cooked.
  • Fried Empanadas: (I've found it best to refrigerate the empanadas for 20 minutes before frying to help the dough firm up and hold its shape before placing in the hot oil). Add several inches of hot oil to a pot and heat to about 365° F. Fry one or two empanadas at a time, flipping once, until golden on both sides (1-2 minutes per side). Place on a paper-towel lined plate.

2 cups (450g) flour
1 tablespoon salt
1/2 stick (60g) unsalted butter
1 egg
6 tablespoons water
1 tablespoon vinegar
Vegetable oil for frying (if you chose that method)

Steps:

  • For the dough, mix the flour, salt, and butter in a bowl with your hands until you get a homogeneous dough.
  • In a different large bowl, beat the egg, water, and vinegar with a fork and add to the flour dough.
  • Knead the mixture on a clean surface covered with a little bit of flour until you get a rustic dough and set aside covered in the fridge for one hour.
  • For the filling, start by cutting the hard-boiled eggs into thin slices. In a saucepan over low heat cook the onion in the oil and until golden brown, then add the garlic and oregano, mix it for 1 minute.
  • Then add the ground beef and cook for 5-10 minutes until the meat is cooked. Add the raisins, olives, hard-boiled eggs, and tomato sauce.
  • Preheat the oven to 200°C or 390°F and spread some oil on a large baking sheet to prevent the empanadas from sticking. If you are frying them then put oil in a large frying pan at medium heat.
  • Take the dough from the empanadas and roll it with the help of a rolling pin to form a rectangular sheet type of shape. Then using a cookie cutter or a cup cut circles to make the empanadas.
  • Take the circle and fill with 2 tablespoons of the ground beef filling, then fold the dough over and mark the edges with a fork to close the empanadas.
  • Bake the empanadas in the oven for 20 minutes or until the dough is golden brown. If you are going to fry them, place them in the pan with hot oil (don't overcrowd it) and cook for about 4 minutes each.

Time 1h30m

Yield 10 serving(s)

Number Of Ingredients 17

1 tablespoon olive oil
1 small onion, chopped
1 small green bell pepper, chopped
1 lb ground beef
1 teaspoon ground cumin
3/4 cup pimento-filled green olives, sliced
3/4 cup raisins
1 teaspoon honey
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
3 dashes hot sauce
2 large eggs, separated
8 tablespoons unsalted butter, at room temperature
4 ounces cream cheese, at room temperature
1/4 cup heavy cream
1 1/2 cups plus 2 tablespoons all-purpose flour, plus more for rolling the dough
1/2 teaspoon coarse salt

Steps:

  • To Make the Cream Cheese Pastry: Process the butter, cream cheese, and cream in a food processor, electric mixer or by hand to thoroughly combine.
  • Add the flour and salt. Process until just combined and the dough holds together in a ball. Turn the dough out onto a well-floured surface. Divide into 2 pieces. Flatten into disks and wrap each in plastic wrap. Refrigerate for at least 30 minutes before rolling out. If the dough is chilled overnight, take it out 15 minutes before rolling out.
  • Rub flour all over a rolling pin. Working with one dough disk at a time, pace the disk on a clean, well-floured work surface. Applying some pressure with the rolling pin, roll gently from the center of the dough to the top and bottom edges. Rotate the the disk, and roll to the top and bottom edges again. Reflour the work surface and rolling pin, turn the dough over, and continue to roll the dough from the center out to the edges. Turn over and roll again, rotating the disk to ensure even rolling until the dough is about 12 inches in diameter, then but not transparent.
  • To Make the Filling: heat a large skillet over medium heat, and then swirl in the olive oil. Add the onion and bell pepper. Saute until the onion is translucent, 3 to 4 minutes. Raise the heat to high and add the beef. Cook, stirring constantly, to brown, about 5 to 7 minutes.
  • Preheat the oven to 375°F Butter or line a baking sheet.
  • To form the empanadas, work with half of the disk of dough at a time, rolling out on a floured work surface. Using an overturned bowl (about 5 inches across), cut out circles about 3 or 4 at a time from each piece of dough. Gather all the dough scraps together, reroll once, and cut. Place 1/4 cup filling on one side of the dough circle. Wet the edges of the dough with water. Fold the dough over to form a half circle. Pinch the edges of the dough together. Crimp the edges with a fork. Repeat the process until all of the filling is used. The empanadas can be frozen at this point.
  • Place the empanadas on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg yolks with 1 tablespoon of water. Brush the egg wash over each empanada. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving. The empanadas can be cooled and frozen to reheat in a microwave.

  • Heat 2 Tbsp. oil in a large pot over high. Cook beef, breaking up with a spoon, until browned but not completely cooked through, 6–8 minutes. Transfer to a medium bowl with a slotted spoon, leaving as much fat in pan as possible.
  • Reduce heat to medium and cook onion, bell peppers, and remaining 1 Tbsp. oil, stirring, until tender but not browned, 6–8 minutes; season with salt and black pepper. Add cumin, paprika, oregano, and cayenne and cook, stirring, until fragrant, about 1 minute. Add chicken stock and reserved beef along with any accumulated juices to pot. Stir in sugar, 4 tsp. salt, and ¼ tsp. black pepper. Bring to a simmer and cook, stirring and scraping up any brown bits, until most of the liquid is evaporated, 15–20 minutes; taste and season with salt and black pepper, if needed. Stir in raisins. Transfer to a medium bowl, cover, and chill at least 3 hours.
  • Preheat oven to 375°. Let dough sit at room temperature 15 minutes to temper. Remove 6 rounds from package, keeping plastic divider underneath, and arrange on a work surface. Place 2 Tbsp. filling in the center of each round. Top with 2 olive halves. Brush water around half of outer edge of each round. Using plastic divider to help you, fold round over filling and pinch edges to seal. Using a fork, crimp edges. Remove plastic and transfer empanada to a parchment-lined sheet tray, spacing 1" apart. Repeat with remaining rounds (you’ll get about 12 empanadas on each tray).
  • Bake empanadas, rotating tray halfway through, until golden brown and slightly darker around the edges, 25–35 minutes.

  • If you are making your own empanada dough, place the all-purpose flour, whole-wheat flour and salt in a food processor. Pulse the processor to blend the ingredients. Add the cold butter and pulse the food processor to cut the butter into the flour until large crumbles are formed. With the food processor running, slowly pour in the water until the dough comes together. Add an additional tablespoon of water if necessary. Turn the dough out onto a floured surface and knead the dough with your hands for another minute until the dough is smooth. Wrap the dough in plastic and refrigerate for at least 30 minutes. Divide the dough into 10 equal portions and roll each portion into a ball. Set the dough balls aside.
  • Pre-heat a large sauté pan over medium heat. Add the ground beef and chorizo sausage and cook until the meat is no longer pink, breaking the chunks up with a wooden spoon as it browns. Drain away all but 2 tablespoons of the fat from the sauté pan. Add the onions to the pan and sauté for a few minutes. Add the garlic, tomato paste, cumin, chili powder and sauté for 2 additional minutes. Stir in the chopped olives, vinegar and water. Season to taste with salt and pepper and set the filling aside to cool.
  • Roll out the empanada dough balls into 6-inch circles, or use store-bought empanada discos. Brush a little water around the edges of the dough. Place a heaping spoonful of the filling in center of each circle of dough and fold one side of the dough over to form a half moon. Crimp the edges to seal shut.
  • To Deep Fry: heat vegetable or canola oil to 350°F in a deep saucepan or sauté pan. Deep-fry the empanadas in batches for 5 to 6 minutes.

  • In a food processor, pulse the flour with the sugar and salt. Add the butter and pulse until the mixture resembles coarse meal. Beat the eggs with the wine and vinegar and drizzle over the flour mixture. Pulse until the dough just comes together. On a lightly floured work surface, gently knead the dough until smooth. Wrap the dough in plastic and refrigerate until firm, about 1 hour.
  • In a medium skillet, heat the oil. Add the achiote seeds and cook over moderately high heat until the seeds darken and the oil is orange, about 1 minute. Discard the seeds. Add the ground beef to the skillet and cook, breaking up the meat with a wooden spoon, until no pink remains, about 3 minutes. Add the garlic, onion and bell pepper and cook over moderate heat until the onion is softened, about 5 minutes. Add the tomato, tomato paste and chicken stock and simmer over moderate heat until the liquid has nearly evaporated, about 3 minutes. Stir in the cilantro and season with salt and pepper. Let cool.
  • On a generously floured work surface, roll out the dough 1/8 inch thick. With a 3-inch round biscuit cutter, stamp out as many rounds as possible (you should have about 24). Reroll the dough scraps and stamp out additional rounds if possible. Brush the excess flour off the rounds. Working with 1 round at a time and keeping the rest covered with plastic wrap, form the empanadas: Spoon 2 teaspoons of the filling on one side of the dough round. Fold the dough over to enclose the filling and crimp the edges with a fork to seal. Cover with plastic wrap while you form the remaining empanadas.
  • Preheat the oven to 350°. In a deep skillet, heat 1/2 inch of oil to 350°. Fry 4 empanadas at a time, turning once, until browned and crisp, 2 minutes. Drain on paper towels and transfer to a baking sheet. When all of the empanadas have been fried, reheat them in the oven and serve.

  • Mix the ground beef, very finely chopped onion, chopped parsley, and coriander, smoked and sweet paprika, very finely chopped jalapeňo, ground cumin, and coriander, chili flakes, and salt.
  • Heat the oil in a non-stick pan and fry the mixture for about 2 minutes, breaking the lumps of meat with a wooden spoon. Add the tomato paste, stir well, and continue cooking the filling until the meat is cooked through about 5 minutes. Let cool while you make the dough.
  • Place the flour and the salt to a bowl. Mix well. Cut the very cold butter into small cubes and rub it into the flour with your fingertips until the mixture resembles fine crumbs. Only use your fingertips and not your whole hands, otherwise, the mixture will become too warm and soft. You can do this in the food processor as well, it's easier and quicker.
  • Beat the eggs lightly and add them to the mixture. Add about ¾ of the very cold water and mix or process very shortly until the dough comes together.

  • Place the flank steak in a large pot. Add the onion, carrot, bay leaf, thyme, garlic, parsley stems (if using), salt, and pepper. Pour in enough water to cover the steak by about 1 ½ inches. Bring the pot to a boil. Cover, lower the heat, and simmer for 1 ½ to 1 ¾ hours, or until the beef is easily shredded with a fork.
  • Remove the steak from the pot, reserving 1 ½ cups of the cooking liquid. Set the broth aside. When the beef is cool enough to handle, remove any fat or sinew and slice it crosswise into thirds. Chop it into a fine dice, then chill, covered until ready to use. If refrigerated, the steak will last, covered for up to 2 days. To freeze it, cover shredded or chopped beef with the cooking liquid just until submerged. Freeze it in containers for up to 3 months.
  • Make the filling: Heat the oil in a large skillet with high sides over medium-high heat. Add the white onions and cook, stirring, until softened, about 5 minutes. Add the paprika, salt, cumin, red pepper flakes, and black pepper, stirring well to combine.
  • Add the beef and broth, stirring to combine. Bring them to a boil, then lower the heat to medium and continue cooking, uncovered, until all of the liquid has been absorbed, about 10 minutes (the beef mixture should still be moist). Remove the filling from the heat and stir in the vinegar. Cover and chill the filling completely, at least 3 hours, but preferably overnight.
