HOLIDAY CHEDDAR SPREAD
This cheddar spread was a hit! All the taste testers said it's the beer that makes this dip so good. This would be great to serve as an appetizer during the holidays, but would also be great at a tailgate or game night party. Yummy! Edith hails from Canada, so the recipe calls for old cheddar. Steps:
- 1. In a large bowl or in food processor, combine softened cream cheese and butter until thoroughly blended.
- 2. Add pinch pepper and just enough liquid (beer, non-alcohol beer or white wine) to make the cream cheese mixture fluffy.
- 3. Add grated old Cheddar cheese and combine thoroughly. You may need to add just a bit more liquid so that it retains nice texture, but not to worry if it's a bit thick and heavy. It still tastes great!
- 4. Add onion, but combine only until blended in. If using food processor, pulse on/off a couple of times, but do not overwork or onion taste can become overwhelming.
- 5. Spoon into a bowl and sprinkle with a parsley sprig or some paprika so that it looks pretty. Remove from fridge about 20 minutes before serving. Serve with crackers.
VEGGIE CREAM CHEESE SPREAD
Steps:
- Combine the cream cheese with all the other ingredients in the bowl of a food processor. Pulse until the mixture reaches the consistency you want: it can be chunky, with larger pieces of the veggies, or you can keep going until it's very mixed together. Transfer the spread to a container and store, covered in plastic wrap, in the fridge. Serve cold with crackers, crostini, bagels, or use as a spread on a veggie sandwich.Note: Add more or less of any veggie/herb you'd like!

ODIE'S PIMENTO CHEESE SPREAD
When I was growing up, we used to visit my Grandparents, Odie and Grandpa, every summer in Bristol, VA. She made this wonderful pimento cheese spread. In those days before food processors, she used a meat grinder. Which is how I'm posting this recipe. I process this the same way using my Kitchenaid w/ attachments or sometimes I just give the cheese and pimentos a few zaps in the processor. This makes lovely tea sandwiches using whole wheat or white bread with the crusts removed and cut in quarters. This also freezes well.

- To make dressing:.
- Lightly beat the egg.
- Mix egg, milk, sugar, vinegar, salt, flour, and pepper in a saucepan.
- Cook on low, stirring with a whisk until well blended and thickened.
- Note that the online editor insists on spelling it pimientos in the ingredient list which is why I typed "pimentos" in parenthesis above.

Steps:
- To a high-speed blender or food processor add the water, lemon juice, garlic, and almond flour. Blend until the texture is smooth and creamy. You may have to stop a couple of times to scrape down the sides. You can also add 1 tablespoon of water at a time to help the blending process, but don't add too much or you will get runny cheese.
- Transfer the mixture to a small mixing bowl, add nutritional yeast and herbs, and stir until everything is well combined. Taste and season with salt as necessary.
- Spoon the vegan cheese spread into the desired container, make sure it's packed really well, place it in the fridge, and allow the cheese to sit for 1-2 hours if you prefer a firmer spread.
- Enjoy with veggies, crackers, bagels, or sandwiches.

- Food processor instructions: In the bowl of a food processor fitted with the steel blade, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon of salt, garlic powder, and cayenne pepper. Process until smooth and evenly combined. Remove the blade, scraping any of the mixture back into the bowl. Switch to the grating blade. Cut the Cheddar cheese into pieces that will fit into the feed tube. With the machine running, add the cheese through the feed tube until it is all grated in. Transfer the contents of the food processor to a large mixing bowl. Add the diced pimentos and stir everything together to combine. Taste and adjust seasoning, if necessary. (I usually add about 1/4 teaspoon more salt, but it depends on the saltiness of the cheese.)
- Mixer instructions: In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon salt, garlic powder, and cayenne pepper. Beat until smooth and evenly combined. Coarsely grate the Cheddar cheese and mix in along with the diced pimentos. Taste and adjust seasoning, if necessary. (It's a good idea to taste the pimento cheese on the crackers you plan to serve it with, as the saltiness can vary.)
- Transfer the spread to a serving bowl and serve with crackers and/or crudités. If serving later, cover and refrigerate for up to 5 days; bring to room temperature before serving.

- Soup-Making. Soups are often made by putting cooked ingredients into the food processor. Use vegetables, meat, fish, or poultry that you have cooked, blended it into a smooth puree for dipping into a vinaigrette or can be eaten as is.
- Salad Dressing. Sautéing vegetables in a food processor adds to the flavor and nutritional content of dressings. Cook vegetables such as bell peppers, onion, garlic, celery, and carrots over medium heat with some butter or olive oil.
- Cookie Dough. Using a food processor to make cookie dough is simple. All you have to do is place all the ingredients in the bowl, combine them until you have a smooth dough.
- Pie Crust. It doesn’t have to be a fancy pie; a food processor can make a crust for tart or vegetable pies as well. To do so, all you do is put the ingredients into the bowl and process until you have a smooth dough.
- Pasta Sauce. A food processor can be used to easily chop vegetables, garlic and herbs for a pasta sauce. Put them into the food processor and process until you have a smooth sauce.
- Cheese Fondue. To make cheese fondue, all you have to do is melt your favorite cheese in your food processor. After that, add wine or broth and mix everything until it is smooth and creamy.
- Peanut Butter. To make peanut butter, all you need to do is put the ingredients into the food processor and process until you have a smooth oil and butter mixture.
- Creamy Dip. A creamy dip is a great appetizer for any party. To make it, put cream cheese in the bowl of your food processor and process until smooth. Now add some sour cream and rerun the machine.
- Minced Meat for Lattice-Top Stuffing. When making a stuffer, first cut the onion and other ingredients into small pieces and put them in a food processor.
- Muffins. A muffin recipe must be mixed by hand, but using a food processor can make it faster to prepare them for cooking. Put the dry ingredients in the bowl of the food processor and run the machine until you have everything combined.
