FOCACCIA WITH ROSEMARY AND OLIVE OIL TOPPING



Focaccia with Rosemary and Olive Oil Topping image

Number Of Ingredients 7

1 oz. fresh yeast or 3/4 oz. active dry yeast
2 tablespoons honey (or sugar)
Just over 2 cups tepid water
Just over 1 lb. bread flour (3 1/2 to 4 cups)
Just over 1 lb. durum semolina flour
2 tablespoons salt
Some extra flour and semolina for dusting

Steps:

  • This is my favorite Italian flatbread.
  • Stage 1: Dissolve the yeast and honey (or sugar) in half the tepid water.
  • Stage 2: On your largest available clean surface (even a big bowl will do if surfaces are limited), make a pile of flour in the center of the flour, semolina flour, and salt. With one hand, make a well in the center. (If possible, it is preferable to warm the flour and semolina flour.)
  • Stage 3: Pour all the dissolved yeast mixture into the well and with four fingers of one hand make circular movements, from the center working outward, slowly bringing in more and more of the dry ingredients until all the yeast mixture is soaked up. Then pour the other half of the tepid water into the center and gradually incorporate all the flour to make a moist dough. (Certain flours may need a little more water, so don't be afraid to adjust the quantities.)
  • Stage 4: Kneading! This is the best bit, just rolling, pushing and folding the dough over and over for 5 minutes. This develops the structure of the dough and the gluten. If any of the dough sticks to your hands, just rub them together with a little extra flour.
  • (You can do Stages 2, 3 and 4 in an electric mixer if you like, using the dough hook attachment.)
  • Stage 5: Flour both your hands now, and lightly flour the top of the dough. Make it into a roundish shape and place on a baking tray. Score the dough with a knife--this allows it to relax and proof (rise) more quickly.
  • Stage 6: Leave the bread to rise for the first time. Basically, we want it to double in size. (This is probably the best time to preheat the oven: 475 degrees F for focaccia.) You want a warm, moist, draft-free place for the quickest rise, for example near the stove, or just in a warm room. You can cover with plastic wrap if you want to speed it up. This process matures the flour flavor and should take approximately 40 minutes to an hour and a half, depending on the conditions.
  • Stage 7: Right, it's double the size and time to punch it down. Knead and punch the dough, knocking all the air out of it, for about a minute. Then split the dough into half or quarters. Roll or push it out to an oval shape roughly 11/3 cm/ (1/2-inch) thick; don't fuss around for perfection, it's supposed to be rough and rustic, so what a great excuse for a beginner! Place on a baking tray liberally dusted with semolina flour.
  • Make your rosemary and olive oil topping by bashing and bruising a handful of rosemary and 3 cloves of garlic using a rolling pin. Mix together with some olive oil and salt, and squeeze mixture over the bread. Finally, make those characteristic holes by pushing all you fingers deep into the dough many times, which allows the flavor of the topping to penetrate. Leave to proof for 45 minutes until about 3cm 1 1/4 inches) high.
  • Bake for about 15 minutes at your oven's highest temperature until ready. As soon as the focaccia comes out of the oven feed it with a good drizzle of olive oil and a light scattering of sea salt. You can eat the focaccia as soon as it has slightly cooled.

To this day, focaccia is still one of my favourite breads to bake. By stuffing it we get more texture, more layers, more contrast between soft and spongy, crisp and crunchy, and we celebrate seasonal broad beans.

500 g strong bread flour, plus extra for dusting
1 x 7 g sachet of dried yeast
olive oil
750 g broad beans, in their pods
4 cloves of garlic
1 bunch of fresh flat-leaf parsley (30g)
extra virgin olive oil
50 g pecorino, or Parmesan cheese
1 lemon
30 g fine stale breadcrumbs

Steps:

  • Put the flour and 5g of sea salt into a large bowl and make a well in the middle. In a jug, mix the yeast into 300ml of lukewarm water, leave for a few minutes, then gradually pour it into the well, stirring and bringing in the flour from the outside to form a dough. Knead on a flour-dusted surface for 10 minutes, or until smooth and springy. Place the dough in a lightly oiled bowl, cover with a clean damp tea towel and prove in a warm place for 1 hour, or until doubled in size. Meanwhile, pod the broad beans into a bowl, pinching the skins off any larger ones. Peel the garlic, finely chop with the top leafy half of the parsley and add to the bowl with 75ml of extra virgin olive oil. Finely grate in the pecorino and lemon zest, squeeze in the juice, season, mix together, then put aside.
  • Lightly oil a deep baking tray (30cm x 40cm), and dust evenly with the breadcrumbs. Pound the dough a few times with your fist, then roll or stretch it out to 30cm x 80cm. Drape half the dough into the tray, leaving the rest overhanging. Pour over the broad bean mixture in an even layer, keeping some of the oil behind. Fold the overhanging dough over the top, drizzle with the reserved oil, then use your fingers to gently push down and, importantly, create lots of dips and wells in the dough. Cover with a clean damp tea towel and leave to prove until doubled in size again.
  • Preheat the oven to 220ºC/425ºF/gas 7. Sprinkle the dough with sea salt, then bake for 25 minutes, or until golden and cooked through. Let it cool on a board, then slice up and tuck in. Absolute heaven.

This focaccia is not fussy. It's the kind of thing you can get excited about making on a Saturday afternoon and have great fun playing with the toppings. I often throw the ingredients in a food processor, whiz it up then leave it overnight. This bread, along with some lovely salad and cold leftover chicken, would also make a great dinner.

Dough
400 g strong white bread flour, plus extra for dusting
100 g fine ground semolina flour or strong white bread flour
1 sachet dried yeast
½ tablespoon golden caster sugar
300 ml lukewarm water
olive oil
extra virgin olive oil, to finish
Basil and cherry tomato topping
1 bunch of fresh basil, (30g)
1 large handful of ripe cherry tomatoes
white wine vinegar
2 cloves of garlic
Three-cheese and rosemary topping
30 g Taleggio cheese
1 small log goat's cheese
Parmesan cheese
1 sprig of fresh rosemary
Balsamic onion topping
2 red onions
a few sprigs of fresh thyme
balsamic vinegar

Steps:

  • Place the flours and ½ tablespoon of sea salt into a large bowl, and make a well in the middle. Add the yeast and sugar to the lukewarm water, and mix with a fork. Leave this for a few minutes and, when it starts to foam, slowly pour it into the well, mixing with a fork as you go.
  • As soon as all the ingredients come together, which may take a minute or so, knead vigorously for around 5 minutes until you have a smooth, springy, soft dough.
  • Lightly oil a large bowl with some olive oil and transfer the dough to the bowl. Dust with a little extra flour, cover with a tea towel and leave to prove in a warm place for 30 minutes until doubled in size.
  • While the dough is rising, preheat your oven to 220°C/425°F/gas 7 and prepare the toppings.
  • For the balsamic onion topping, finely slice the onions and pick the thyme leaves. Fry the onions and thyme in 2 tablespoons of olive oil over a low heat for about 5 minutes. Add 6 tablespoons of balsamic vinegar, reduce for a minute or two, then leave to cool.
  • For the basil and cherry tomato topping, pick and roughly chop the basil leaves and halve the tomatoes. Pop the basil and tomatoes into a bowl and season with sea salt and black pepper, a drizzle of extra virgin olive oil and a tiny splash of white wine vinegar. Peel and slice the garlic and mix into the bowl.
  • To cook the focaccia, as soon as the dough has risen, pound it, then place on a baking tray and spread it out to cover the tray. Push down roughly on top of the dough like a piano to make lots of rough dips and wells.
  • Divide the onion and the tomato toppings over two thirds of the focaccia.
  • For the three-cheese and rosemary topping, break up the Taleggio and the goat's cheese over the remaining third of the focaccia. Grate a handful of Parmesan cheese and pick the rosemary leaves. Sprinkle both over the final third and season with pepper. Finish with a good drizzle of extra virgin olive oil and a sprinkle of sea salt.
  • Leave to prove for a further 20 minutes, then bake for 20 minutes, until golden on top and soft in the middle.

Yield 2 large, or 4 smaller focaccia

20 g fresh yeast, or 2 × 7g sachets of dried yeast
20 g runny honey
500 g strong bread flour, plus extra for dusting
500 g semolina flour, plus extra for dusting (if you can't get hold of any semolina flour, plain flour will do)
extra virgin olive oil

Steps:

  • Follow the basic recipe until Step 8, then split the dough into half or quarters.
  • Roll or push it out to an oval shape roughly 1.5cm thick; don't fuss around for perfection, it's supposed to be rough and rustic, so what a great excuse for a beginner!
  • Place on a baking tray liberally dusted with semolina, and spread evenly with your chosen topping (see tips).
  • Finally, make those characteristic holes by pushing all your fingers deep into the dough many times, which allows the flavour of the topping to penetrate.
  • Leave to prove again in a warm place and after about 45 minutes it will prove to that classic 3cm high.
  • Bake for about 15 minutes at full whack (240°C/475°F/gas 9) until ready. As soon as the focaccia comes out of the oven, feed it with a good drizzle of your very best extra virgin olive oil and a light scattering of sea salt. You can eat the focaccia as soon as it has cooled slightly.

1 3/4 cups warm water
1 package active dry yeast
1 tablespoon sugar
5 cups all-purpose flour, plus additional for kneading
1 tablespoon kosher salt, plus coarse sea salt, for sprinkling
1 cup extra-virgin olive oil, divided

Steps:

  • Combine the warm water, yeast and sugar in a small bowl. Put the bowl in a warm, not hot or cool, place until the yeast is bubbling and aromatic, at least 15 minutes.
  • In the bowl of a mixer fitted with a dough hook, combine the flour, 1 tablespoon of kosher salt, 1/2 cup olive oil and the yeast mixture on low speed. Once the dough has come together, continue to knead for 5 to 6 minutes on a medium speed until it becomes smooth and soft. Give it a sprinkle of flour if the dough is really sticky and tacky.
  • Transfer the dough to a clean, lightly floured surface, then knead it by hand 1 or 2 times. Again, give it another sprinkle of flour if the dough is really sticky and tacky.
  • Coat the inside of the mixer bowl lightly with olive oil and return the dough to the bowl. Cover it with plastic wrap and put it in a warm place until the dough has doubled in size, at least 1 hour.
  • Coat a jelly roll pan with the remaining 1/2 cup olive oil. (Chef's Note: This may seem excessive, but focaccia is an oily crusted bread. This is why it is soooooooooo delicious!).
  • Put the dough onto the jelly roll pan and begin pressing it out to fit the size of the pan. Turn the dough over to coat the other side with the olive oil. Continue to stretch the dough to fit the pan. As you are doing so, spread your fingers out and make finger holes all the way through the dough. (Chef's Note: Yes, this is strange. But when the dough rises again it will create the characteristic craggy looking focaccia. If you do not make the actual holes in the dough, the finished product will be very smooth.)
  • Put the dough in the warm place until it has doubled in size, about 1 hour. While the dough is rising a second time, preheat the oven to 425 degrees F.
  • Liberally sprinkle the top of the focaccia with some coarse sea salt and lightly drizzle a little oil on top. Bake the dough until the top of the loaf is golden brown, about 25 to 30 minutes. Remove the focaccia from the oven and let it cool before cutting and serving.

HERBED FOCACCIA

3 tablespoons olive oil, divided
1 (15-ounce) bag refrigerator pizza dough, at room temperature
2 teaspoons Italian seasoning
2 plum tomatoes, sliced thin
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Coat a 13 by 9-inch sheet pan with 1 tablespoon of olive oil. Spread out the pizza dough to fit the sheet pan.
  • In a small bowl mix together the Italian seasoning and remaining olive oil. Brush the seasoned oil all over the top of the dough, making sure to reserve about 2 teaspoons. Using your fingers punch dimples about halfway down into the dough. Bake in the hot oven for about 8 minutes.
  • Remove the focaccia from the oven, top with tomato slices, sprinkle with salt and pepper, to taste, and bush with remaining 2 teaspoons of the oil mixture. Return to the oven and bake until the focaccia is gold brown, about 15 to 20 minutes. Cut into squares and serve warm with Tuscan Peasant Soup with Tortellini.

HONEY FOCACCIA

500 g strong bread flour, plus extra for dusting
1 x 7 g sachet of dried yeast
50 g natural yoghurt
3 tablespoons runny honey
olive oil
extra virgin olive oil
1 sprig of rosemary, optional

Steps:

  • GET AHEAD You can do this on the day, if you prefer. Put the flour and 1 level teaspoon of sea salt into a large bowl and make a well in the middle. In a jug, mix the yeast into 300ml of lukewarm water, stir in the yoghurt and 1 tablespoon of honey, and leave for a few minutes. Now, gradually pour the mixture into the well, stirring and bringing in the flour from the outside to form a dough. Knead on a flour-dusted surface, picking the dough up and slapping it back down, for 10 minutes, or until smooth and springy. Place in a lightly oiled bowl, cover and refrigerate overnight. If making on the day, cover with a clean damp tea towel and prove in a warm place for 1 hour, or until doubled in size.
  • ON THE DAY Lightly oil a deep baking tray (30cm x 40cm). Tip in the dough, pull and stretch it out to fill the tray, then use your fingers to gently push down and create lots of dips and wells. Drizzle with a little olive oil and sprinkle generously with black pepper and a little sea salt, cover the tray with a clean damp tea towel, then prove in a warm place for 1 hour, or until doubled in size.
  • TO SERVE Preheat the oven to 220°C/425°F/gas 7. Very carefully - to keep the air in the dough - transfer the tray to the bottom of the oven and bake for 25 minutes, or until golden and cooked through. Drizzle and brush with 2 tablespoons of extra virgin olive oil and the remaining honey - I like to use a sprig of rosemary to do this - and move to a board ready to slice.
