This is a family recipe that is a big favorite at our house. By using fresh bread instead of dried bread crumbs, you get a meatloaf that is moist and delicious.

MOM'S FAVORITE: BETTY CROCKER'S CLASSIC FLUFFY MEATLOAF
My mom has been using this recipe since she was married in the 50's and it's as good now as then. She still makes it for me when I visit. :) It's wonderful when first served, but is even better chilled... cold meatloaf sandwiches, mmm! A versatile recipe, you can easily alter it to your own tastes. Experiment and enjoy! :)

TURKEY AND BEEF MEATLOAF
My intent was to make Cranberry Bog Turkey Burgers, ala Rachael Ray. Upon discovering that I had defrosted both beef and turkey rather than 2 pounds of turkey, I took her recipe and added my own twists to make a tender and moist meatloaf. The listed amounts of spices and herbs yield a mild flavor so if you like more punch, you'll want to increase them. For better slicing, let the loaves rest after baking or they will crumble under your knife. Mashed potatoes and cranberry sauce make great side dishes with this recipe.

- In a small bowl, slightly beat the eggs then stir in the milk. Submerge the bread cubes, mixing gently to break them up.
- In a medium fry pan, melt the butter then add the apple, onion & celery. Sprinkle with salt & saute until the onions are translucent.

- Work the mixture gently (I use my hands) until well combined.
- Divide in half & shape 2 loaves in a 9X13" baking dish.
- Tent with foil and bake in a 350º oven for 45 minutes.
- Remove from oven, pour off juices and reserve.
- Return loaves to oven (minus their tent) for another 15 minutes or until juices run clear. Let rest for 5-10 minutes while you make the gravy.
- Gravy:.
- Strain reserved pan juices and if needed, add water to equal 1 cup.
- Pour drippings & water into the pan you used to saute the apples/onions/celery. Whisk in the flour.
- Cook and stir over medium low heat until gravy thickens. Stir in the ground thyme & cook for 2-3 minutes more. Salt and pepper to taste.
- Slice the loaves into portions, top with the gravy and serve.

ALL BEEF MEATLOAF
I rotate meatloaf recipes. This one is all beef... the other two are a mixture of beef and pork or beef, pork and veal. I like to serve it with scalloped potatoes. The timing & oven temperature work out perfectly for an easy meal. Mix up the meatloaf, set the timimer for the first 15 minutes-by that time the potatoes are ready to go in as well. Then they both cook for an hour and can be served with your favourite veg... we usually go for something green, broccoli, peas, green beans, broccolini or asparagus are all good choices. The recipe is a combination of 4 different recipes with a couple of my own twists and changes...like the herbes de Provence and the ground ancho and tobasco. Mum started adding horseradish to her meatloaf and since it goes so well with beef I picked that addition up from her.

- Stack bread slices on a plate and pour milk over the top and let soak while you gather the rest of your ingredients. Place the rest of the meatloaf ingredients in a bowl.
- Tear up your soaked bread a bit and make sure it is well saturated. Now you can add the soaked bread to the meat mixture. Your bread should have soaked up most of the milk. Get your hands in there and mix all of the meatloaf ingredients well. Try not to over mix it, you want to keep it fluffy but want all your ingredients evenly distributed.
- Form meat mixture into 2 loaves and place into aluminum foil pans or make your own pans out of kitchen foil.
HOW TO MAKE THE BEST MEATLOAF - MOIST & JUICY EVERY TIME
From oldworldgardenfarms.com
Servings 6Published 2021-09-17Estimated Reading Time 5 mins
- Choose your meat carefully. It is best to use a blend of meat in your recipe. A mixture of ground beef and pork sausage is ideal to produce a moist and delicious meal.
- Saute your veggies. Whatever vegetables that you choose to use, be sure to saute them in olive oil or butter before adding them to your meat mixture.
- Soak your breadcrumbs/oatmeal. The biggest debate when cooking meatloaf centers around breadcrumbs vs. oatmeal. The only thing that can be agreed upon is that a dry ingredient is needed to help bind the mixture.
- Don’t overmix! Most people prefer to mix the ingredients with their hands. It is just easier. Although this is a great method, most individuals tend to squeeze and mash the mixture together too much.
- Do NOT use a loaf pan. I grew up watching my parents make meatloaf and cooking it in the same loaf pan as we used when we made bread. It made total sense to me.
- Let it rest. After removing it from the oven, even the best meatloaf needs to rest. Simply cover it with foil and allow it to rest for about 10 minutes.
