Thanks Paula Deen (FoodTV) for the best fried chicken I have ever made! It has a nice, savory flavor and a coating that has just the right amount of crispiness. It was a good thing I had an extra cut-up chicken in the refrigerator because my family was begging for it again the next day. Although it calls for what seems like a lot of hot pepper sauce, it isn't any spicier than Jack-In-the Box's Spicy Crispy Chicken--you can take it!! FYI I made this using 10 pounds of wings--enough of the hot sauce/egg mixture to cover, but you will need to double flour mixture if you want to do this much. I'm not saying it tastes like KFC--only that you won't be doing business with them anymore.

2 lbs cut-up chicken
4 eggs
1/3 cup water
1 cup hot sauce (I use Louisiana Hot Sauce, Tabasco might be hotter)
1 1/2 teaspoons salt
1 1/4 teaspoons fresh ground black pepper
1/4 teaspoon garlic powder
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt

Steps:

  • Heat peanut oil in a large deep pot to 350°F (do not fill more than half full--you don't want a hot-oil spill-over accident!).
  • For sauce mixture: in a medium-sized bowl, beat the eggs with the water.
  • Add hot sauce and whisk together well.
  • Pour this mixture into a large plastic zip-top bag.
  • For seasoning mixture: In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon freshly ground black pepper and 1/4 teaspoon garlic powder.
  • For dredging mixture: In a another bowl, mix flour, baking powder and 1/4 teaspoon salt.
  • Rinse and pat dry chicken pieces with a paper towel.
  • Cut breast pieces in half across ribs.
  • Sprinkle chicken generously on both sides with seasoning blend.
  • Drop a few chicken pieces of chicken into bag of sauce mixture and squish around to coat thoroughly.
  • One piece at a time, roll chicken in flour mixture and drop into hot oil.
  • Don't crowd chicken pieces--I cook about half the chicken at a time.
  • Fry chicken until brown and crisp.
  • Drain on paper toweling.
  • Dark meat will take about 14 minutes, white meat about 10 minutes.
  • Remember smaller pieces cook faster than the larger ones.
  • You can check for doneness by piercing to the bone in the thickest part with a fork.
  • If the juices run clear, it is done.

⅔ cup all-purpose flour
⅔ cup grated Parmesan cheese
1 ⅓ cups bread crumbs
1 teaspoon poultry seasoning
½ teaspoon onion powder
½ teaspoon garlic powder

1 ½ cups milk
12 ounces chicken tenderloins
1 ½ cups vegetable oil for frying

Steps:

  • In a large plastic bag, combine the flour, Parmesan cheese, bread crumbs, poultry seasoning, onion powder, garlic powder, salt and pepper. Shake to mix.
  • Heat the oil in a large skillet over medium heat until a drop of water evaporates immediately. Dip one piece of chicken at a time into the milk, and then place in the bag with the coating. Shake until fully coated. Place in the frying pan, and continue with remaining chicken.
  • Cook until the edges are browned, then flip and cook until browned on the other side. If some chicken is done sooner, keep on a paper towel lined plate in a warm oven, so that the chicken is all still warm at serving time.

  • Put the flour, salt, pepper and garlic powder in a brown paper bag. One by one, coat the chicken parts with mixture.
  • In a large skillet, fry the chicken in 1 inch of hot oil until golden brown. Remove the chicken from the pan and drain the oil.
  • Put the chicken back into the pan and cover the pieces with cooking sherry. Cover the pan and reduce to simmer. Let simmer for 20 minutes. Serve.

1 whole fryer chicken (cut into 8 pieces)
3 1/2 tsp seasoned salt (divided)
2 tsp freshly ground black pepper (divided)
3 cups buttermilk (divided)
3 cups all purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
3 large eggs
1 tsp hot sauce
6-8 cups vegetable or peanut oil for frying

Steps:

  • Season chicken pieces on all sides with 1 tsp seasoned salt and 1/2 tsp black pepper. Place into an oblong baking dish and cover with 2 1/2 cups buttermilk. Turn to coat. Chill overnight, turning once.
  • 30 minutes before frying: Remove chicken from buttermilk, discard marinade. On a plate sift together the flour, cornstarch, 2 tsp seasoned salt, 1 tsp black pepper, garlic powder, onion powder and paprika.
  • In a large shallow bowl whisk together the eggs, 1/2 tsp salt, 1/2 tsp black pepper, 1/2 cup buttermilk and hot sauce.
  • Dredge chicken pieces in flour, into egg wash then into flour again. Arrange on a baking sheet. Let stand for 30 minutes to bring to room temperature and set breading.
  • To fry: Preheat the oven to 200°F. Prepare a rimmed baking sheet with an oven safe baking rack. Set aside.
  • Fill a 12-inch cast iron skillet about 1/3 full with oil. Heat to 350°F. Carefully lower chicken pieces in oil. Fry dark meat and white meat separately.
  • Maintain oil temperature around 350°F. Fry chicken in batches cooking dark meat pieces and white meat separately. Cook for 10-15 minutes per side or until juices run clear and the internal temperature reaches 165°F. Turn carefully using tongs to avoid splatters.
  • Place fried pieces on rack and keep warm in oven between batches.
  • Rest for 10 minutes before serving.

1 roasting chicken, cut into serving pieces
2 teaspoons kosher salt, plus additional to add for seasoning

  • Rinse the chicken with cold water and pat dry with paper towels. Season the chicken with salt and pepper. Place in a large baking dish, cover with plastic wrap, and refrigerate for a least 1 hour or up to 4 hours.
  • In a bowl, combine the buttermilk and Tabasco sauce and pour over the chicken, coating all the pieces. Cover with plastic wrap and refrigerate overnight.
  • Remove the chicken from the refrigerator 30 minutes before cooking. Place the chicken in a colander and let the excess buttermilk drain off. Reserve the buttermilk, if desired, for dipping the chicken a second time.
  • In a deep cast-iron fry pan over medium-high heat, heat the oil to 350 degrees. Preheat an oven to 200 degrees. Line a baking sheet with paper towels.
  • In a bowl, whisk together the flour, the 2 teaspoons salt, the 1 teaspoon pepper and the paprika. Dredge the chicken in the flour mixture, shaking off the excess. (For a crispier coating, dip the chicken into the reserved buttermilk and flour a second time.).

To get the most delicious chicken, we dry brined it overnight so the seasonings could penetrate the meat right down to the bone. (Don't worry, the brown sugar doesn't make the chicken sweet, it only helps to bring out the flavor.) We also wet the seasoned dredging flour with buttermilk and hot sauce to achieve large shaggy pieces of flavorful crust once the chicken is fried. And the cornstarch in that dredge? It keeps the crust shatteringly crisp - more so than just flour would- even if you are serving the chicken at room temperature.

One 3 1/2- to 4-pound whole chicken (or 3 1/2 to 4 pounds assorted chicken pieces)
Kosher salt
4 teaspoons light brown sugar
1 teaspoon baking powder
3 cups all-purpose flour
2/3 cup cornstarch
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons sweet Hungarian paprika
2 teaspoons cayenne pepper
2 cups buttermilk
1/2 cup hot sauce, such as Frank's
2 large eggs, beaten
Vegetable oil, for frying (about 8 cups)

Steps:

  • Cut the chicken into 10 pieces. Cut off the wings. Remove the legs and separate the thighs. Remove and discard the backbone. Cut the breast into 2 pieces and then cut each breast in half.
  • Mix 4 teaspoons salt, the brown sugar and baking powder in a small bowl until completely combined and no lumps of sugar remain. Sprinkle the salt mixture all over the chicken pieces. Place the seasoned chicken on a wire rack set inside a rimmed baking sheet. Wrap the baking sheet with plastic wrap and refrigerate, at least 3 hours and up to 24. (Overnight works best.)
  • Whisk together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne and 1/4 cup salt in a large bowl until completely combined. Whisk together the buttermilk, hot sauce and eggs in another large bowl. Working with 1 piece at a time, dredge the chicken in the seasoned flour, turning to coat and packing it into any crevices. Shake to remove any excess and return to the rack. Repeat with the remaining chicken.
  • Pour 6 tablespoons of the buttermilk mixture into the seasoned flour and work it in with your fingers; it should feel like sand with some clumps. (These clumps will give the chicken a crispy, shaggy crust.) Dip the dredged chicken into the remaining buttermilk mixture, allowing any excess to drip off. Then pack the moistened flour firmly onto the chicken. Very gently shake off any excess and return to the rack. Refrigerate at least 30 minutes and up to 12 hours.
  • Pour enough oil into a large heavy pot to come halfway up the sides. Clip a deep-fry thermometer to the pot. Heat the oil over high heat until the thermometer registers 300 degrees F. Working in 3 batches, fry the chicken, turning often and adjusting the heat to maintain the temperature, until deep golden brown, about 8 minutes for the wings, 10 minutes for the legs and 12 minutes for the thighs and halved breasts (an uncut breast will take 15 to 18 minutes). Transfer to a clean wire rack set over paper towels to drain.

Cover; cook until tiny bubbles begin to appear in the crust on the side facing up, about 10 minutes. Turn; cook 10 minutes. Uncover the skillet; reduce heat to medium-low. Cook until chicken is golden brown, 5-10 minutes. Remove drumsticks and thighs from skillet to a rack placed over a cookie sheet; place in oven.

5 cups buttermilk
1 tablespoon hot sauce
1 tablespoon minced garlic
3 springs fresh thyme
1 tablespoon onion powder
2 teaspoon paprika
3 tablespoon kosher salt
2 teaspoon freshly cracked black pepper
2 cups all-purpose flour
1/3 cup cornstarch
2 teaspoon baking powder
2 tablespoon garlic powder
2 tablespoon onion powder
1 tablespoon dried oregano
1 teaspoon chili powder
2 teaspoon paprika
1-2 teaspoon kosher salt
1 tablespoon black pepper
Vegetable oil

Steps:

  • In a large bowl or two gallon-sized zip-top bags, put brine herbs and spices in. Pour buttermilk into the bowl and whisk up to mix buttermilk and seasoning together. Add chicken pieces and make sure each piece is submerged in the buttermilk. Refrigerate at least 4 hours, overnight most prefered. You can brine the chicken to up to 24 hours.
  • When you're ready to start frying, begin bringing a 6 quart enamel cast iron dutch oven (or any other large, heavy bottom pot) filled half-way with vegetable oil to temperature. Use a candy/oil thermometer to bring oil to 325 degrees F. When you place the stem of a wooden spoon in the oil, it should start to bubble around it. That's when you know it's ready. This is a good way to test the oil temperature if you don't have a thermometer.
  • Preheat oven to 200 degrees F.
  • While oil is coming to temp, in a large bowl whisk together flour, cornstarch, baking powder, and spices and herbs. Splash a bit of brine, about 4 tbsp, into the flour.
  • Take each piece of chicken out of the brine and coat well in the flour mixture. Let rest on a plate, repeat until each piece is coated in flour. Let rest for 5 minutes, then dip each piece back into the flour mixture and let rest again for 5-10 minutes.
  • Have a wire rack over a baking sheet prepared on a counter next to your range. Fry your chicken pieces, 2-4 pieces at a time, for about 20-22 minutes. When batch is done, place on prepared wire rack over the baking sheet and put into the warm oven. This will keep the batches warm while you finish frying. Repeat this step until complete.
  • Serve immediately.

Chicken Gizzards--in this Southern fried chicken gizzard recipe, the gizzards are tossed in a spicy batter with buttermilk and hot sauce and then coated in a spicy flour mix and finally deep-fried to golden brown sublimity. These delicious fried chicken gizzards are a staple and favorite dish in superbowl and festive parties. I'm not sure if anyone would drop by at my place if I hadn't prepared these. The secret to making them nice and tender is to spare some extra time to pre-boil them. And if you have any leftover broth, you can use it in the freezer. What is Chicken Gizzard? If you ever watched chicken nibbling at the ground, they are actually eating small pieces of rock and gravel which moves through the chicken's digestive organs and binds to the gizzard. When the chicken eats something, the gizzard shrinks (like a small hand that squeezes). This is necessary to process its food and allow proper digestion. Now, there is at least one fried gizzards lover for every ten fried chicken lovers. You can easily find these in eateries and so I decided I had to concoct a recipe to honor this special Southern favorite here on my blog. Chicken gizzards are basically muscle tissue or organs. They are very small and they have a distinct chewy texture and taste. The taste can be described as something similar to dark meat parts e.g. chicken or bird thighs from a whole bird but harder. How to prepare Chicken Gizzard? Due to their chewy texture, I begin this recipe with a buttermilk batter. The acids in it help bring some of the chewiness and hardness down without affecting much its natural taste. Thanks to the incorporation of salt and pepper, the flavor is slightly amplified (it's best to let these soak in these for some time). You may also add a kick of heat with cayenne pepper and paprika powder. The final stage involves frying these to a golden standard. It's best to use a deep fryer (if you have) so you won't need to flip them over or work with a spread out amount of oil in a pan. This will also help them fry evenly from every side. 1 cup onion (chopped )
1 cup chicken broth (or use vegetable broth to make this dish vegetarian)
1 teaspoon apple cider vinegar
½ cup butter (unsalted or vegan butter)
½ teaspoon Old Bay seasoning (or Cajun seasoning)
½ teaspoon garlic powder
¼ teaspoon red pepper flakes
1 tablespoon salt
½ teaspoon black pepper

Steps:

  • Cut out the cabbage's core and use a food processor or a knife to shred the cabbage leaves. (I remove the outer layer of cabbage leaves first and discard them before chopping.)
  • Add the shredded cabbage and all the ingredients (onion, chicken apple cider vinegar, butter, Old Bay or Cajun seasoning, garlic powder, red pepper flakes, salt, and pepper) into the Instant Pot stainless steel inner pot.
  • Sink the chopped cabbage as much as you can into the liquid broth.
  • Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 4 minutes.
  • When the cooking time is finished, allow a natural pressure release for at least 4 minutes.
  • To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
