2 sheets puff pastry (, 25cm/10" square)
4 - 5 tbsp Dijon mustard
8 oz/250g shaved ham
2 cups grated cheddar cheese ((or any other melting cheese) (Note 1))
2 egg yolks ((or 1 egg - Note 2))
Oil spray

Steps:

  • Preheat oven to 180C/350F. Spray 2 baking trays with oil.
  • Let the puff pastry defrost then cut into 9 x 8cm/3.5" squares.
  • Spread about 1/2 tsp of mustard diagonally across ta square.
  • Top with ham and sprinkle with cheese.
  • Dab one corner with egg yolk using a brush. Fold the opposite corner over the filling first, then fold the corner with the egg yolk over it and press down to bond.
  • Place on baking tray. Repeat with remaining square.
  • Brush the top with egg. Bake for 15 minutes or until deep golden brown and puffed.
  • Serve warm!

1 package (2 sheets) frozen puff pastry, defrosted (recommended: Pepperidge Farm)
2 tablespoons Dijon mustard
1/4 pound black forest ham, sliced
1/2 pound Swiss Gruyere cheese, sliced
1 egg, beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
  • Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
  • Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
  • Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

1 1/4 cups finely diced cooked ham
1/2 cup shredded parmesan cheese (or Gouda)
1/4 cup sun-dried tomato packed in oil, drained and chopped
2 tablespoons sour cream
4 medium green onions, chopped
2 packages frozen puff pastry, thawed

Steps:

  • Heat oven to 400f degrees.
  • Mix all ingredients except pastry.
  • Cut pastry into circles with 2 1/2 to 3 inch round cookie cutter or pastry wheel.
  • Spoon about 1 rounded teaspoon ham mixture on centre of each circle; brush edges with water.
  • Fold each circle over filling, pressing edges to seal.
  • Place in ungreased jelly roll pan, 15 1/2x10 1/2 inch.
  • Bake 18 to 22 minutes or until golden brown.
  • Serve warm.
  • These puffs can be refrigerated for up 24 hours and reheated in a 400f degree oven for 6 to 8 minutes or until heated through.

1 sheet frozen puff pastry (from a 17.3-ounce package, such as Pepperidge Farm), thawed
1 tablespoon salted butter, melted
1 cup grated manchego cheese
1 cup grated Parmesan
One 12-ounce jar sliced jalapenos, drained

Steps:

  • Preheat the oven to 400 degrees F; line 2 baking sheets with parchment.
  • On a floured surface, carefully roll out the sheet of pastry into a 10-by-12-inch rectangle. Dock the pastry all over with the tines of a fork and then brush it with the melted butter. Sprinkle over the manchego and 1/2 cup of the Parmesan. Using the rolling pin, press the cheese into the pastry. Cut the pastry into rounds using a 1 1/2-inch round pastry cutter. Gently press 1 slice of jalapeno into the middle of each round. Transfer to the prepared baking sheets. Sprinkle over the remaining 1/2 cup Parmesan.
  • Bake until golden brown and puffed, 10 to 12 minutes. Allow to cool before serving.

1 1/2 teaspoons olive oil
3/4 cup onion, finely chopped
1/4 cup uncooked diced turkey bacon, about 2 slices
1/8 teaspoon fresh ground pepper
3 cloves garlic, smashed
1/2 cup parmesan cheese, finely grated,about 2 ounces
1 teaspoon rubbed sage

Steps:

  • Cook potatoes in boiling water 15 minutes or until tender, drain.
  • Heat oil in a nonstick frypan over medium high heat.
  • Add onion, bacon, pepper and garlic,saute 5 minutes or until tender.
  • Preheat broiler.
  • Cut potatoes in half, carefully scoop out pulp with a melon baller, leaving 1/4 inch shell.
  • Mash potato pulp with a fork; stir in cheese and sage.
  • Add to onion mixture, stirring well.
  • Spoon about 1 tablespoon potato mixture into each shell.
  • Arrange stuffed potatoes on a baking sheet, and broil 3 to 4 inches from heat, 3 minutes or until lightly browned.

6 tablespoons butter
3/4 cup all-purpose flour
1/2 teaspoon salt
3 large eggs
1/4 cup grated Parmesan cheese, divided
FILLING:
1 pound fresh asparagus, cut into 1-inch pieces
1/4 cup diced onion
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups milk
1/2 cup shredded Swiss cheese
2 tablespoons grated Parmesan cheese
2 cups diced fully cooked ham

Steps:

  • In a large saucepan over medium heat, bring water and butter to a boil. Add flour and salt all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each; beat until smooth. Stir in 3 tablespoons Parmesan cheese. , Using 1/4 cupfuls of dough, form a ring around the sides of a greased 10-in. quiche pan or pie plate (mounds should touch). Top with the remaining cheese. Bake at 400° for 35 minutes., Meanwhile, cook asparagus in a small amount of water for 3-4 minutes or until crisp-tender; drain. , In a large saucepan, saute onion in butter until tender.
