By way of Melissa Clark in the Times, a very simple and delicious Cuban style flank steak. It cooks so quickly you can even use a stove-top grill and your kitchen won't get overheated. Marinate it briefly at room temp or longer in the fridge.

1/4 cup orange juice (from 1 large orange)
2 tablespoons olive oil
2 large garlic cloves
1 tablespoon fresh oregano leaves, packed
1 teaspoon cumin
1 teaspoon kosher salt
1/2 teaspoon orange zest, grated
1/2 teaspoon black pepper, freshly ground
1 1/2 lbs flank steaks

Steps:

  • In a blender, combine orange juice, olive oil, garlic cloves, oregano, cumin, salt, orange zest and pepper; blend until smooth. Pour marinade over flank steak and let sit, uncovered, at room temperature while you light or preheat grill, about 30 minuts. Or you can cover and refrigerate steak for several hours or overnight.
  • When ready to cook, brush off any excess marinade solids from steak and grill over high heat, turning once, until done to taste, about 3 minutes a side for rare.
  • Let meat rest a few minutes; slice in thin slices across the grain to serve.

1/4 cup vegetable oil, plus for brushing
1 tablespoon plus 1 teaspoon ground allspice
1 1/2 tablespoons kosher salt, plus additional for seasoning
2 teaspoons granulated garlic powder
1 teaspoon cayenne
1 teaspoon freshly ground black pepper
1 flank steak (about 1 1/2 pounds)
1/4 teaspoon whole cumin seeds
1/4 cup extra-virgin olive oil, plus more for brushing
3 cloves garlic, minced
1/2 cup fresh lime juice
1 teaspoon chopped fresh oregano leaves or 1 teaspoon dried, crumbled
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 jalapeno chile, seeded and minced
2 ripe yellow plantains

Steps:

  • 1. For steak: Stir oil, allspice, salt, garlic powder, cayenne, and pepper together in a bowl, to make a paste. Rub mixture all over steak and set aside until room temperature, about 20 to 30 minutes.
  • 2. Preheat a grill to high.
  • 3. For mojo: Toast cumin seeds in a small dry skillet over high heat until fragrant, about 30 seconds. Grind seeds in a spice grinder or using a mortar and pestle.
  • 4. Heat olive oil and garlic along with toasted cumin over medium-high heat until garlic begins to sizzle, about 2 minutes. Cool oil slightly and whisk with lime juice, oregano, salt, pepper, and jalapeno in medium bowl.
  • 5. Grill steak until slightly charred and crisp and medium-rare, about 4 minutes per side.
  • Set aside on a cutting board and let rest for 10 minutes.
  • 6. Brush plantains lightly with oil and season with salt and pepper. Place on grill, skin-side down, and cook until soft and skin is charred about 5 minutes. Turn and cook to sear on grill marks, about 2 minutes more.
  • 7. Slice steak and arrange on a platter with plantains, drizzle with some mojo. Serve with remaining sauce at table.

Steps:

  • For the chimichurri: In a food processor, combine the parsley, cilantro, oregano, garlic, shallot, cumin, pepper flakes, salt, red wine vinegar and honey. With the food processor running, slowly add the olive oil; the final product should be smooth but still have a bit of texture to it.
  • For the rice and black beans: Heat the grapeseed oil in a pot over high heat. Add the rice and coriander and cook, stirring, to toast the rice, about 2 minutes. Add the vegetable stock and bring to a simmer. Reduce the heat to low and cook, covered, until the liquid is absorbed, 10 to 12 minutes.
  • Once the rice is cooked, remove it from the heat and fluff with a fork. Mix in the black beans, cilantro, lime juice, salt and pepper.
  • For the smoked tomato salsa: Prepare a smoker with soaked wood chips (cherry or apple wood preferred) and heat to 350 degrees F.
  • Place the tomato halves, onion quarters, garlic and jalapeno in a pan. Transfer to the smoker and cook until the onions are tender, 20 to 30 minutes.
  • Dice half of the onions and half of the tomatoes. In a food processor, puree the remaining onions and tomatoes along with the jalapeno, garlic and the lime juice.
  • In a bowl, mix the pureed sauce with the diced onions and tomatoes and the chopped cilantro. Season to taste with salt and pepper.
  • For the lemon aioli: In a food processor (or using an immersion blender) combine the lemon juice, mustard, egg, egg yolk and garlic; puree until smooth. With the motor running, slowly add the olive oil to emulsify the aioli. Season to taste with salt and pepper.
  • For the flank steak: Cut the flank steak into six equal portions, slicing against the grain and on an extreme bias. With the back of a knife, tenderize the steaks by pounding them out on both sides. Season on both sides with salt and pepper.
  • Heat a cast-iron skillet over high heat until smoking. Add just enough grapeseed oil to coat the pan. Working in batches, sear the steaks on both sides, about 2 minutes. Remove the steaks to a plate to rest before plating.
  • To plate: Divide the rice and beans between six plates, mounding it in the center of each plate. Spoon about 2 ounces of the salsa over the top and then lay a steak over the rice. Drizzle some chimichurri over the steak.
  • In a bowl, dress the watercress with lemon aioli. Top the steaks with the dressed watercress. Serve.

1 cup chopped sweet onion
1 tablespoon ground cumin

1 beef flank steak (2 pounds)
CHIMICHURRI:
1 cup fresh cilantro sprigs
1 cup fresh parsley sprigs
1 cup dried cranberries
1 shallot, finely chopped
2 tablespoons white wine vinegar
1 tablespoon smoked paprika
3 garlic cloves, minced
2 teaspoons minced fresh oregano or 3/4 teaspoon dried oregano
2 teaspoons grated lime zest
1 teaspoon brown sugar
1/2 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1/4 cup olive oil
1/4 cup water

Steps:

  • Peel and cube papaya, reserving seeds; place papaya and seeds in a food processor. Add the onion, cumin and pepper; cover and process until smooth. Pour into a shallow dish. Add the beef and turn to coat. Refrigerate for 8 hours or overnight., For chimichurri, place the cilantro, parsley, cranberries, shallot, vinegar, paprika, garlic, oregano, lime zest, brown sugar, salt and pepper flakes in a clean food processor. While processing, gradually add oil and water in a steady stream. Refrigerate until serving., Drain beef and discard marinade. Lightly oil the grill rack. Grill beef, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let stand for 5 minutes before cutting steak thinly across the grain. Serve with chimichurri.

Steps:

  • Using sharp knife, lightly score flank steaks about 1/8 inch deep on both sides in a crisscross pattern at 1/2-inch intervals. Place steaks in 13x9x2-inch glass baking dish. Sprinkle steaks on both sides with oregano and cumin and generous amount of coarse salt and freshly ground pepper. Drizzle olive oil over both sides of steaks, rubbing oil and spices into meat. Add green onions, beer, and Worcestershire sauce, turning steaks several times to coat both sides. Cover and chill at least 3 hours, turning occasionally. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Prepare barbecue (medium-high heat). Brush grill rack lightly with oil. Grill steaks to desired doneness, 3 to 4 minutes total per side for medium-rare, turning steaks 1/4 turn after 1 1/2 minutes to form crisscross grill marks, if desired. 4 strip steaks (about 1 inch thick)
3 cloves garlic (minced)
2 tablespoons/30 mL olive oil
1 tablespoon/15 mL dried oregano
1 teaspoon/5 mL salt
1 teaspoon/5 mL black pepper (ground)

Steps:

  • Combine minced garlic, olive oil, and dried oregano in a bowl. Place steaks on a large plate and coat well on both sides with mixture. Cover lightly with plastic and place in refrigerator for 2 hours. Remove from fridge 30 minutes before going onto the grill. This will help the meat come up to temperature before coming into contact with heat.
  • Preheat grill for medium-high heat.
  • Remove plastic wrap from steaks and season both sides of meat with salt and black pepper.
  • Place steaks on the grill and cook for 5 to 6 minutes per side, depending on thickness and desired doneness. Once cooked to preference, remove from heat and set onto a cutting board. Lightly tent with aluminum foil. Do not wrap tightly. Let steaks rest for 7 to 10 minutes. Slice and serve or serve steaks whole with your favorite side dishes.

1 new york sirloin steak
2 tablespoons thyme
2 tablespoons rosemary
splash olive oil

1 garlic clove
1 cup parsley
1 cup coriander

1 teaspoon dried chili pepper flakes (to taste)
1 tablespoon cumin
2 tablespoons red wine vinegar (any vinegar can be used)

Steps:

  • Chimichurri (must be done in advance):.
  • In a food processor, add garlic, parsley, coriander, oregano, chili flakes, cumin and vinegar.
  • Slowly add olive oil and blend until you get a chunky pesto-like consistency. Don't over-blend - you don't want it to become a paste.
  • Check seasoning and let sit for 10 minutes to allow flavours to relax and combine. The longer you can make this advance the better; even a day before is great.
  • Steak:.
  • Preheat oven to 450°F (230°C).
  • Add a good splash of olive oil to an ovenproof fry pan set to very high heat. Cast iron or steel is preferred; don't use aluminum.
  • Season steak well on both sides with salt and pepper. The thicker your cut is, the heavier you should go on the seasoning.
  • On your stovetop, sear each side of steak until browned. Then sear the edge fat strip (approximately 1 to 2 minutes per side and edge).
  • Slide pan into oven for 5 more minutes. On a 1.5-inch thick steak, this should get you around medium to medium rare.
  • Remove from oven, remove from pan, cover with foil and let rest for 5 minutes. (Chimichurri is served at room temperature.).
  • Once steak has rested, cut crossways into half-inch slices (serrated knife is best). Slather steak with chimichurri or serve on the side.
  • Chef's tip: Chimichurri lasts in the fridge for up to a week. It's also heaven on roasted veggies and chicken.
